1 red onion, halved and thinly sliced
¼ cup Mexican crema
2 limes
¼ teaspoon salt
2 tablespoons vegetable oil, divided
1 chayote - peeled, halved, seeded, and diced into 1/2-inch pieces
1 poblano pepper - seeds and white ribs removed, diced into 1/2-inch pieces
6 (6 inch) flour tortillas
cooking spray
6 sprigs cilantro, minced, divided
½ teaspoon onion powder
¼ teaspoon salt
1 ¼ pounds ground turkey
¼ cup water
3 tablespoons taco seasoning mix
1 teaspoon chili powder
1 cup guacamole
½ cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Place red onion slices and crema in separate small bowls. Zest limes into another small bowl. Halve limes and squeeze juice into a fourth small bowl.
  • Stir 1 teaspoon lime juice into the bowl of crema. Add the remaining lime juice to the bowl with the red onions; stir in 1/4 teaspoon salt and let marinate at room temperature until pickled, at least 20 minutes.
  • Heat oil in a skillet over medium heat. Add chayote and poblano pepper; cook, stirring constantly, until golden and tender, about 10 minutes.
  • Coat tortillas on both sides with cooking spray. Place tortillas on a large baking sheet.
  • Bake in the preheated oven until crisped and lightly brown, 8 to 10 minutes.
  • Stir the lime zest, 1/2 the cilantro, onion powder, and 1/4 teaspoon salt into the chayote-poblano mixture. Pour mixture into a bowl.
  • Heat remaining 1 tablespoon oil in the same skillet over medium heat. Add ground turkey; cook, stirring occasionally, until browned, about 7 minutes. Stir in 1/4 cup water, taco seasoning, and chili powder. Cook until water has evaporated, about 4 minutes.
  • Spread guacamole over each crisped tortilla; top with chayote-poblano mixture, ground turkey, pickled onions, lime crema, and remaining cilantro.

Leftover turkey is great for a turkey sandwich or three, but that gets old and that's also where these crispy flautas come in. And don't forget, cheese grated in your own kitchen is so much better than the packaged grated cheese.

1 pound cooked, shredded turkey
6 ounces shredded pepper Jack cheese
⅓ cup chopped green onions
salt and freshly ground black pepper to taste
24 small white corn tortillas
1 egg white to seal flautas
¾ cup shredded napa cabbage
¾ cup guacamole
¾ cup sour cream
¾ cup salsa
¼ cup chopped fresh cilantro

Steps:

  • Mix shredded turkey, pepper Jack cheese, green onions, salt and pepper together in a bowl.
  • Wrap stack of tortillas in a paper towel and place in a sealable plastic bag. Seal the bag only halfway. Microwave on high until tortillas are hot and flexible, about 45 seconds. Keep tortillas warm in the bag as you fill the others.
  • Place 2 tortillas on a work surface, one about 2 inches off center of the first creating a longer partially double tortilla. Spoon about 1/4 to 1/3 cup turkey mixture in a row just below the center of the long side of the tortilla. Paint a bit of egg white along the top edge of the tortillas. Bring bottom edge of the tortilla up and over the filling and roll rather tightly toward the top edge over the egg white. Set aside with the fold on the bottom while you fill the remaining tortillas.
  • Place 1/4 inch vegetable oil in a saute pan over medium heat. When oil is hot, place flautas in oil, seam side down. Press down gently with a spatula a couple of seconds to flatten bottoms. Fry in batches until flautas are crispy, golden, and heated through, 3 to 4 minutes per side. Drain about a minute on paper towels. Serve topped with shredded cabbage, guacamole, sour cream, salsa, and chopped cilantro.

8 corn tortillas
Canola or olive oil cooking spray
1 avocado, pitted
1/4 cup prepared salsa
2 tablespoons reduced-fat sour cream
2 tablespoons chopped fresh cilantro
1 cup shredded romaine lettuce
1/2 cup shredded Monterey Jack cheese
1 14-ounce can petite diced tomatoes, preferably with jalapenos

Steps:

  • Shredded leftover turkey tops homemade tostadas in this Tex-Mex favorite. Making your own tostada shells from fresh corn tortillas is easier than you might think-crisp them up in the oven while you prepare the toppings. Choose either regular petite diced tomatoes or those with added jalapenos, depending on your inclination for spicy food. Serve with black beans, rice and extra salsa or hot sauce on the side.;
  • Position racks in the upper and lower thirds of the oven; preheat to 375degreesF. Bring tomatoes and their juice to a boil in a medium saucepan over medium heat. This Crispy Chicken Salad is so easy to make at home and tastes just like the version from Friendly's! Serve it with honey mustard and fried chicken strips over lettuce with tomatoes, hard boiled eggs, cheese, and crispy tortilla strips!

1 small boneless skinless Chicken Breast (see notes)
1 egg
½ cup all-purpose flour
3 Tablespoons breadcrumbs (Italian or Panko)
¾ teaspoon seasoned salt
¼ teaspoon paprika
1 pinch cayenne pepper
½ teaspoon black pepper
1 cup vegetable oil (or canola)
5 Cherry Tomatoes
1 Egg
1 ½ cups Iceberg Lettuce (preferably a mix with carrots and red cabbage)
¼ cup Cheddar Cheese (shredded)
¼ Monterey Jack Cheese (shredded)
2 Tablespoons honey mustard
1/3 cup Tri-Colored Tortilla Strips

Steps:

  • Prep Work: Whisk 1 egg in a small bowl and set aside.
  • Combine the flour, breadcrumbs, and seasonings on a plate and set aside.
  • Cut the chicken breast in half to create 2 thinner pieces of equal size. Slice each half into strips about ½ inch thick. Note that they will plump up slightly when cooked.
  • Bread the Chicken: Pat the strips completely dry and dip them in the whisked egg. Use your fingers to slide off the excess, if it's too wet it will leak through the breading. Transfer to the breading mixture and coat generously. Give each one an extra dip in the breading right before frying.
  • Frying: Heat 1 cup of vegetable oil in a 10-inch cast iron skillet. If possible, use an oil thermometer to wait until the oil reaches 350 degrees.
  • Once the oil is heated, carefully add the chicken strips, leaving space around each one so that they don't touch each other. You'll need to fry in batches. Use kitchen tongs to carefully turn the chicken over once the first side is golden brown, 3-4 minutes per side.
  • Set fried chicken aside on a cooling rack to keep it crispy underneath. Add more chicken to the pan as soon as you take some out.
  • Submerge the eggs in 2 inches of cool water in a pot on the stove-top. Gradually bring them to a boil.
  • Once the boil is reached, cover the pot and remove them from the heat. Let them sit for 12 minutes.
  • Peel, and slice in half or in fourths.
  • Add the lettuce to a large plate or salad bowl. Top with tomatoes, hard boiled eggs, and cheese.
  • Slice the chicken strips into bite-sized pieces and sprinkle them on top.
  • Drizzle with honey mustard, top with tortilla strips, and serve!

1 tsp Black pepper
1 tsp white pepper
3 Tbsp Oil

Steps:

  • Heat oven to 400°F with racks in the middle position.
  • Wash the wings well, and use a paper towel to pat them dry and place the wings in a large bowl.
  • In a small bowl, whisk together the seasoning and spices.
  • Add the oil and sprinkle the seasonings on the wings and massage all over the wings.
  • Line a rimmed baking sheet with parchment paper or aluminum foil. Then, place a wire rack on top of the baking sheet.
  • Arrange the wings on the rack.
  • Place in the oven and bake for 1 hour to 1 hour 15 minutes or till desired crispiness. Remove from the oven and serve.

1 cup water
salt
2 cups sliced almonds
1 1/2 cups golden raisins
1/3 cup fresh lemon juice (from 2 to 4 lemons)
kosher salt
1 1/2 cups extra-virgin olive oil
4 garlic cloves, crushed with the flat side of a knife, peeled and left whole
1 lb washed and dried kale leaf, preferably lacinato, thick stems removed (weight after trimming)
1 1/2 cups freshly grated parmesan cheese
2 turkey breast, cooked and shredded
2 turkey thighs, cooked and shredded

Steps:

  • Cracklings Turkey:.
  • Remove frozen skin from plastic bag and cut it into roughly 3/4-inch pieces (about 1 1/4 cups).
  • Combine the skin, 1 cup water, and 1/4 teaspoon salt in a 2- to 3-quart heavy saucepan and briskly simmer mixture, stirring occasionally (the skin tends to stick to the bottom), until water is evaporated and cracklings begin to fry in their own fat (you'll hear the sizzling), about 15 minutes.
  • Reduce heat and continue to fry the cracklings slowly, stirring frequently, until deep golden and crisp, about 10 to 20 minutes longer.
  • Using a slotted spoon, transfer them to paper towels to drain. Taste and season with salt, if necessary.
  • NOTE: You can cook the cracklings up to 2 days heads. And reheat in a heavy skillet before adding to salad.
  • For the salad:.
  • In a toaster oven or skillet, toast almonds until golden brown and fragrant. Set aside to cool.
  • In a bowl, combine lemon juice and 1 heaping teaspoon salt. Slowly whisk in olive oil. Add garlic cloves and set aside to steep.
  • Cut the kale into thin ribbons: gather a large handful of leaves, bunch together tightly, and use the other hand to slice into 1/4-inch-thick pieces. (Recipe can be made up to this point 1 day ahead. Keep kale and dressing refrigerated separately.).
  • Place chopped kale in a very large bowl. Sprinkle surface with almonds and then with cheese and shredded turkey. Remove and discard garlic cloves from dressing. Pour half the dressing over the salad and toss. Taste for dressing and salt and add more as needed, tossing to coat thoroughly. Top with turkey cracklings. Serve within 1 hour.
