Easy Lemon and Garlic Broccoli image

This is an easy recipe for a delicious broccoli side that takes just a few minutes to make.

1 pound broccoli, separated into florets
2 teaspoons fresh lemon juice
2 tablespoons water
3 tablespoons butter
2 cloves garlic, minced
1 pinch salt
2 teaspoons lemon juice
1 teaspoon ground black pepper

Steps:

  • Place broccoli florets in a large skillet over medium heat. Stir 2 teaspoons lemon juice into water in a small bowl and pour the mixture into the skillet. Cover and steam until broccoli is bright green and tender, 10 to 15 minutes.
  • While broccoli is steaming, melt butter in a small saucepan over medium-low heat and stir in garlic and salt; turn heat to low and let the garlic gently fry until golden brown, about 8 minutes. Drain water from cooked broccoli and return to skillet; sprinkle with 2 more teaspoons lemon juice and the butter and garlic mixture. Sprinkle broccoli with black pepper, toss to combine, and season with a bit more pepper if desired.

Roasted Tenderstem Broccoli makes for a perfect side dish to almost any meal! It's easy to prepare, requires minimal ingredients and cooks in only 15 minutes.

16 ounces (450 g) tenderstem broccoli (broccolini)
2 tablespoons extra virgin olive oil
1/4 teaspoon sea salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Preheat oven to 425°F/220°C. For easy cleanup: line a large baking sheet with foil or parchment paper, if desired.
  • Place broccoli on baking sheet. Drizzle oil over the top. Toss until each floret has been lightly coated in oil. Spread out in an even layer across the baking sheet. Sprinkle with salt and pepper.
  • Place in the middle of the oven and bake for 15 minutes until the edges have slightly charred.
  • Season with additional salt and pepper if desired and serve immediately.

Meanwhile, heat the oil in a large frying pan, add the garlic, cook until lightly golden, then add the lemon zest and cook for 1 min more. When the broccoli is cooked, drain well, toss with the garlicky oil, season and serve.

1 red chilli , deseeded and sliced

Steps:

  • Bring a large pan of salted water to the boil. Add the stalks and cook for 2 mins, then add the florets and cook for 2 mins more.
  • Gently heat the garlic and oil together until the garlic just starts to sizzle and brown, then remove from the heat and add the chilli. Drain the broccoli really well and toss in the garlic oil to serve.
