CRISPY SQUASH BLOSSOMS WITH CRAB AND TARRAGON
This is definitely a dish that has evolved over time for me. It's not a dish that my mom used to make for the Feast of the Seven Fishes, but since I became a chef, this is what I have brought to the mix. Heads up: These taste best fried-to-order.

Steps:
- For frying: Heat the oil in a large Dutch oven to 350 degrees F.
- For the filling: Melt the butter in a small skillet over medium heat. Add the shallots, garlic and a large pinch of salt and sweat, stirring occasionally, until softened but not brown, 2 to 3 minutes. Season with salt and pepper and set aside to cool.
- Mix together the ricotta, mascarpone, chives, tarragon and lemon zest in a large bowl. Stir in the garlic-shallot mixture and season with salt and pepper. Fold in the crabmeat. Chill in the fridge at least 15 minutes or up to 1 day before stuffing.
- Shape 15 heaping tablespoons of the filling into ovals the size of the squash blossoms. Carefully open each blossom and gently nestle the pre-shaped filling inside, pressing the petals around the filling to seal. Keep refrigerated while you make the batter, or up to 1 day in advance.
- Meanwhile, make the batter: Whisk together the all-purpose flour, rice flour, cornstarch, baking powder and salt in a large bowl. Gradually whisk in the soda water until it coats your fingers.
- Dip each blossom in the batter and allow excess to drain off slightly. Working in 2 batches, carefully place the blossoms in the Dutch oven and cook until golden brown, 1 to 2 minutes per side. Use a slotted spoon to remove the blossoms to a paper towel-lined plate, sprinkle with salt immediately and repeat with the remaining blossoms.

This recipe was my Grandmother's and it actually won a Blue Ribbon in the Tennessee State Fair! Be sure to use fresh squash, I use butternut but other squash would also be good.

Steps:
- Combine egg and milk together in a small bowl, mix well.
- In a second bowl, combine flour, cornmeal, salt, pepper and garlic salt. Dip squash slices first in the egg mixture, then dredge the squash in the dry mixture.
- Heat 1/2 inch of oil in a deep skillet over medium heat. Fry squash until golden brown.

- Heat olive oil in heavy medium saucepan over medium heat. Add sliced shallots, sliced garlic, thyme sprigs, and bay leaf; sprinkle with salt and pepper. Cook until shallots are beginning to soften, stirring often, about 2 minutes. Add white wine, increase heat, and boil until mixture is reduced to 1 1/4 cups, about 15 minutes. Add 1 cup water and boil until mixture measures scant 1 cup, about 13 minutes. Strain into small bowl, pressing on solids; discard solids in strainer. DO AHEAD Can be made 1 day ahead. - Heat olive oil in heavy large skillet over medium-high heat. Sprinkle baby squash with salt and pepper. Place 1 thyme sprig and squash, cut side down, in skillet and cook until squash is tender and brown, about 2 minutes. Transfer squash to medium bowl and discard thyme sprig. Melt butter in same skillet. Add cipolline onions and smashed garlic cloves; cook until onions are browned on both sides, about 2 minutes per side. Add chicken broth and remaining thyme sprig; simmer until onions are tender, about 8 minutes. Strain, discarding liquid, thyme sprig, and garlic cloves. Add onions to bowl with squash. DO AHEAD Can be made 2 hours ahead. Let vegetables stand at room temperature.
- Heat oil in heavy small saucepan over medium heat. Add shallot and garlic; sauté until soft, about 2 minutes. Transfer to medium bowl. Add crab and tarragon to bowl; stir to coat evenly. Season to taste with salt and pepper.
- Gently open zucchini blossoms and remove stamens. Divide crab mixture among blossoms; twist tops to seal. Tie tops with chives. DO AHEAD Can be made 1 hour ahead. Cover and chill.

- Whisk together cheese and egg. Stir in lemon juice and zest. Gently fold in basil and crab. Season with salt to taste. Refrigerate until ready to use.
- Using a small spoon, carefully fill blossoms with crab mixture, keeping the petals as tight as possible. The number of blossoms needed for this amount of filling ranges, depending on the size of your zucchini flowers.
- Add flour to a medium bowl and gradually pour in beer while whisking. It’s okay if there are some lumps, just try not to allow the batter to deflate. Dip stuffed blossoms in, one at a time, allow excess batter to drip off, and immediately place blossoms into hot oil. Cook a total of 3 to 4 minutes, flipping half way through, or until golden brown. Cook in batches to avoid overcrowding the pan. Drain on a paper towel- lined plate. Sprinkle lightly with salt. You may have excess batter remaining, which you can use for any extra unstuffed zucchini blossoms, if desired. Enjoy while hot.
