HOMEMADE CRISPY SEASONED FRENCH FRIES
My family loves French fries and with 4 children the bag fries from the store just weren't enough and became too expensive. So I tried batter - after all it makes chicken, shrimp, and onion rings crispy so why not potatoes. Now even my husband can't get enough of these French fries. They even stay crispy when you reheat in the microwave.

Steps:
- Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
- Heat oil in a large skillet over medium-high heat. While the oil is heating, sift the flour, garlic salt, onion salt, (regular) salt, and paprika into a large bowl. Gradually stir in enough water so that the mixture can be drizzled from a spoon.
- Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first. The fries must be placed into the skillet one at a time, or they will clump together. Fry until golden brown and crispy. Remove and drain on paper towels.

CRISPY RANCH FRIES
I found this recipe in the 2012 Edition of Taste of Home's Quick Cooking Annual Recipes. I wish I could give credit to the author,but there wasn't a name listed.Also,there wasn't a specific type of french fry to use listed,but from the photo in the cookbook it was shoestring fries. So, that's what I used.If you want the sauce to be a bit more on the " Tangy " side add the sweet pickle relish to the mayo/ketchup dipping sauce.Not only do they taste good,but since they're baked in the oven they're also on the healthy side. - Preheat oven to 375 degrees. Line a large baking sheet with Glad™ Foil. Set pan aside.
- Slice potatoes into 8 long wedges and place wedges into a large bowl.
- In a separate smaller bowl, add the Parmesan cheese, parsley, dry dressing mix, onion powder, garlic powder, salt and pepper. Mix to combine. Sprinkle cheese mixture over potato slices and toss with hands to coat.
- Place potato wedges onto prepared baking sheet, and sprinkle remaining cheese mixture over the top of the potatoes. Bake at 375 degrees for 33-35 minutes. Remove from oven and let cool slightly for 5 minutes. Serve with additional Parmesan cheese and parsley, if desired.

- Place a rack in the lower third of your oven and preheat to 450 degrees F. Drizzle a large rimmed baking sheet with 1 1/2 tablespoons olive oil, brushing it as needed so that it nicely coats the pan.
- Scrub the potatoes and peel if desired (I leave the peels on). Slice into 1/4-inch-wide sticks. Place the potatoes in a large bowl, then pour very hot tap water over the top so that it covers the potatoes by at least 1 inch. Let sit 10 minutes.
- Drain the potatoes, then transfer them to a clean towel and dry as completely as you can, changing the towel as needed. Rinse and wipe out the bowl you soaked the potatoes in, then return the potatoes to the bowl. Drizzle with the remaining 1 1/2 tablespoons olive oil and sprinkle with salt, garlic powder, dill weed, onion powder, and pepper. Toss to coat, making sure the spices and oil are well distributed. - Wash and peel your sweet potatoes. Cut the potatoes, slice them in half lengthwise with a sharp knife on a cutting board. Then cut each half in half again lengthwise. You will have 4 sections of sweet potato. Cut each section into fries. We want them to be quite small, about 1/4-inch wide.
- Place sweet potato fries into a large bowl, and cover with water. Let them soak for a minimum of 1 hour, or as long as overnight.
- Drain the water out and place the sweet potatoes on a towel on the counter. Pat dry with a towel. You want them to be as dry as possible.
- Place sweet potatoes in a large bowl. Add about 3 tsp of cornstarch, 3/4 tsp of garlic powder, 3/4 tsp paprika, and 1/8 tsp of black pepper. Use a large spoon and mix up the cornstarch and seasonings into the sweet potatoes. The white cornstarch will disappear. Add 3 tbsp of olive oil, and mix it up again.
