CRISPY PORK CHOPS WITH SRIRACHA BRUSSELS SPROUTS

- Put a baking sheet on the middle oven rack and preheat to 450 degrees F. Toss the Brussels sprouts and red onion in a large bowl with 1 tablespoon vegetable oil, 1/2 teaspoon salt and a few grinds of pepper. Spread on the hot baking sheet in a single layer and roast, without stirring, until tender and charred in spots, 20 to 25 minutes.
- Meanwhile, whisk the vinegar, honey, Sriracha and a pinch of salt in a large bowl. Set aside.
- Season the pork chops with salt and pepper and brush the mustard on both sides. Toss the panko with 1 tablespoon parsley, a pinch of salt and a few grinds of pepper on a plate. Press both sides of the pork chops in the mixture to evenly coat. Heat the remaining 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat. Add the pork chops and cook until browned and cooked through, 4 to 5 minutes per side. (Reduce the heat to medium if the crust gets too dark.)
- Add the roasted vegetables to the honey-Sriracha sauce and toss to coat. Serve with the pork chops. Sprinkle with the remaining 1 tablespoon parsley.
CRISPY PORK BELLY WITH SRIRACHA

- Mix together the five-spice, garlic, 1 tbsp of the sriracha and 3 tbsp of the soy sauce. Rub really well into the meat, but not the skin, and leave to marinate for a few hours or overnight.
- When ready to cook, heat the oven to 180C/fan 160C/gas 4. Sit the pork skin-side up on a wire rack in a roasting tin and roast for 2 hours 30 minutes.
- While the pork is roasting, put the remaining 2 tbsp sriracha, 2 tbsp soy sauce and honey in a small saucepan together and bubble for a few minutes until syrupy.
- Remove the pork from the oven and cool for 15 minutes while you turn the oven up to 220C/fan 200C/gas 7. Then, using tongs and a sharp knife, cut the crackling away from the pork. Score the exposed fat and sit in another tin. Sprinkle sea salt over the crackling and put back on the wire rack. Roast the meat and crackling alongside each other for 30 minutes, brushing the pork fat with some of the glaze for the final 5 minutes, until the pork is really charred and sticky, and the crackling brown and really crisp. Smash the crackling into pieces and eat with thinly sliced or shredded pork and the remaining glaze.

- The night before, score the pork belly skin, careful not to cut into the meat, but you do want to cut deeply into the skin. The skin is scored by slicing lines diagonally across, about 1 inch apart, and then slicing lines diagonally the opposite way (see photo above). Rub spice powder onto the skin (about 1-2 tbsp), making sure to rub on the surface and the crevices.
- In a bowl, mix marinade ingredients. Using a pan that just fits the pork belly, pour in the marinade and then put in the pork belly. You only want the marinade to cover the meat and not touch the skin. Place in fridge, uncovered, overnight, so that the skin is able to dry out.
- On the day of cooking, preheat oven to 375°F. Completely line a roasting pan with foil for easier clean-up. Pour water in about 1/2 in deep. Rub an additional 1 tbsp of spice powder onto pork belly skin. Place a rack in the roasting pan and put pork belly on top, making sure it doesn't touch the water. Gently use additional foil to tent the top of the pork belly. Bake for approximately 30-40 minutes until meat is finished cooking.
- Remove pork belly from oven and remove foil tent. If your pork belly is uneven in height, prop something under the lower parts so that it is an even height to help the pork belly skin crisp evenly. Turn heat up to 425°F and place pork belly back into the oven. Bake for another 15-20 minutes until all the skin blisters. Watch carefully to make sure skin does not burn and overcook. The skin needs to blister to stay crunchy.
