As an appetizer or light lunch, these mini pizzas are easy to make and use readily available ingredients. Blue cheese adds a unique flavor, and pita bread is the perfect crust.

- Preheat oven to 425 degrees F (220 degrees C).
- Warm pitas in the preheated oven or in a microwave for 1 minute, or until soft. Spread lightly with tomato sauce, pressing to flatten while spreading. Sprinkle with black olives, pimento peppers, tomatoes, mozzarella cheese, blue cheese, basil, oregano and coriander.
- Spread the pitas on a large baking sheet and place in the preheated oven 8 minutes, or until the pita bread has reached desired crispness. Serve whole, or cut into slices.

- Lay the pita bread flat on a baking sheet. Make sure the flat side of the pita is up.

LAVASH OR FLATBREAD THIN AND CRISPY PIZZA

- Prepare Lavash Bread or use your favorite flatbread. There are so many options!
- Next, make the Chimichurri Sauce which will be used in the place of pizza sauce. Or use one of the other sauces suggested earlier.
- Fry bacon, but not too crispy, it will continue to cook in the oven. When cool, chop it into small pieces.
- Next, chop ham (or whatever meats you want to use). Slice or chop your vegetables too. In this case, I'm using red onions and black olives.Preheat oven to 450 degrees F.
- Toss sliced onion into the skillet and sauté for a few minutes in the bacon grease until slightly caramelized.
- Brush approximately 2 tablespoons of Chimichurri or barbecue sauce over the cooked Lavash Bread or flatbread.
- Sprinkle half of the shredded mozzarella cheese over the sauce, followed by the ham, bacon, caramelized onions, and black olives. Top with the remaining shredded cheese.
- Bake for 5 to 7 minutes or until the cheese is bubbly and the edges of the pizza are golden. Sprinkle with crushed red pepper or garnish the crispy pizza with chopped cilantro.

QUICK AND EASY PITA PIZZA {JUST 3 MINUTES}

- If making the pizza in the oven, preheat oven by turning on the broiler and adjust the rack to the middle. If in the toaster oven turn on the toaster to "toast".
- Place two pitas on a metal pan. Spread half the marinara mixture ( about 2 tablespoons) on one pita and the rest on the other. Sprinkle the cheese evenly over both pitas leaving about 1/2 inch for the crust.
- Place pitas in the oven for 2-3 minutes. Check on them every minute to make sure they don't burn.
- Remove from oven and enjoy!
CRISPY PERSONAL PITA PIZZAS

- Preheat the oven to 400 degrees F.
- Brush both sides of each pita round with a liberal coating of olive oil and place all 4 rounds onto a baking sheet. Sprinkle the shredded cheese in an even layer on each pita. Place a single layer of tomato slices on top of the cheese and sprinkle garlic salt over top of each.
- Bake until the bottoms are golden brown and the pitas are crispy, 15 to 20 minutes. Top with fresh basil.
CRISPY PITA PIZZA
These pizzas will beat any order out! Experiment with other toppings but try keeping the peppers and cheese as the basis. When oiling the baking sheet, you may want to drizzle a little olive oil on the pita breads themselves before adding the toppings.

- Heat oven to 350 degrees F.
- Quarter peppers; remove seeds and membreanes.
- Broil peppers under hot broiler skin side up until skin blisters and blackens.
- Transfer to plastic bag until cool enough to handle, then peel away the skin.
- Blend or process peppers until finely chopped; stir in tomato paste and oregano.
- Spread pesto on each pita, leaving a 1/2" border around edge.
- Top pesto with pepper mixture and sprinkle with tomato strips.
- Place ring of chorizo slices around each pizza and top with mushrooms and olives.
- Carefully lay cheeses on top.
- Arrange pizzas on lightly greased baking sheet and bake until cheese is lightly browned, 15-20 minutes.
- Serve immediately.

- Toss all dry ingredients in the bowl of a standing mixer. With the paddle attachment, begin to combine on low speed. *If you are using active-dry yeast instead of rapid rise, let proof as directed on package before adding additional ingredients.
- Add olive oil and 1 1/4 cup warm water and speed up mixer to combine. Dough should come together. If you find that some of the flour is not coming together with the mass, add a little more water until it all comes together. At this point you should have a sticky, well combined dough.
- Switch to your dough hook, and knead on a low speed (2 or 3) for 10-12 minutes. You should end up with a ball of dough you could knead with your hands without much mess. Sprinkle a little flour on a flat surface and hand knead just until the dough is no longer sticky and is elastic. Place in an oiled bowl, and flip over to coat the dough. Cover with plastic wrap and let rise for 90 minutes, or until doubled.
- Once your dough has doubled, preheat your oven and pizza stone at 450 degrees. Punch down the dough to release some of the trapped gases and cut into 8 pieces. Roll each piece into a smooth ball. Cover your dough balls with plastic wrap and let relax for 30 minutes.
