cooking spray
1 egg, beaten
1 tablespoon water
⅛ teaspoon ground black pepper
½ cup Italian-seasoned bread crumbs
1 tablespoon Parmesan cheese
1 teaspoon dried parsley
½ teaspoon garlic powder
½ teaspoon onion powder
4 cups (1/2-inch-thick) sliced zucchini

Steps:

  • Mix egg, water, and pepper together in a bowl. Combine bread crumbs, Parmesan cheese, parsley, garlic powder, and onion powder in a separate bowl.
  • Dip zucchini sticks in egg mixture, allowing excess liquid to drip back into the bowl. Press coated sticks into the bread crumb mixture until fully coated. Arrange coated sticks on the prepared baking sheet in a single layer. Spray sticks with cooking spray.
  • Bake in the preheated oven for 15 minutes. Carefully flip sticks, trying not to break the coating from the zucchini, and continue baking until lightly browned, about 10 minutes more. If not brown enough, turn on the oven's broiler and broil for 2 to 3 minutes.

CRISPY BREADED AIR FRYER ZUCCHINI STICKS

Crispy Breaded Air Fryer Zucchini Sticks image

These easy Crispy Breaded Air Fryer Zucchini Sticks with parmesan cheese make a delicious appetizer, snack, or side dish, and they're perfect for dipping. A great way to use up some of that garden zucchini!

Provided by Michelle / Now Cook This!

Categories     Appetizer

Time 35m

Number Of Ingredients 9

1 medium zucchini (about 8 to 12 ounces )
¼ cup all-purpose flour
½ teaspoon salt (plus additional for sprinkling on the finished sticks)
¼ teaspoon black pepper
1 large egg
1 cup Italian-seasoned panko breadcrumbs
½ cup grated parmesan cheese
½ teaspoon garlic powder
oil spray (I use light olive oil (the kind meant for frying) or avocado oil)

Steps:

  • Cut the zucchini into sticks about 2½" long by ½" wide.
  • In a shallow bowl, combine the flour, salt and pepper.
  • In another shallow bowl, beat the egg.
  • In a third shallow bowl, combine the breadcrumbs, parmesan cheese, and garlic powder.
  • Lightly dredge each zucchini stick in the flour mixture, tapping gently to remove any excess flour.
  • Then dip each zucchini stick into the beaten egg, allowing any excess egg to drip off.
  • Then dip each zucchini stick into the breadcrumb mixture, gently pressing to help the breadcrumbs adhere. See note below about dividing the breadcrumbs in half and doing this step in two batches.
  • Preheat your air fryer to 400°F.Note: If your air fryer doesn't have a preheat cycle, just turn it on to 400°F and let it heat up for 5 minutes.
  • Working in batches (I need to do 2 batches in my air fryer), place the zucchini sticks in a single layer in the air fryer basket, leaving space between them to allow the air to circulate properly around them.
  • Air fry for 8 to 10 minutes or until browned and crispy, flipping once and lightly spraying the other side of the sticks with oil halfway through the cooking time.
  • As soon as they are done, lightly sprinkle with salt, if desired.
  • Serve immediately with your favorite dipping sauce (marinara and ranch are my favorites!).

  • Preheat oven to 400°F. Lightly grease the interior of a standard 12 cup muffin pan. Depending on the length of your zucchini, you may not need all 12 cavities. I only used 10.
  • Lay out all of your zucchini slices in a single layer with no overlaps. Lightly cover the surface of each slice with cheese. I used slightly more than 1/2 tsp of cheese for each slice, but your amount may vary depending on how wide your zucchini slices are.
  • Stack the zucchini slices on top of each other, about 5 to 6 slices high per stack. You don't want to stack too many because then your stack will be unstable. Sprinkle about 1/2 tsp of pork rind crumbs or panko breadcrumbs on the top layer of zucchini for each stack.
