Steps:
- Scrub potatoes thoroughly with a vegetable brush.
- Cut potatoes in half lengthwise.
- In an 11" x 7" x 1 1/2" or 9" x 9" x 2" baking pan, combine melted butter, garlic or seasoned salt, and pepper.
- Place potatoes, cut side down, in butter mixture.
- Bake in a 450°F oven for 25 to 30 minutes or until tender and cut sides of potatoes are browned and crispy.
- Lift out with a spatula.
- If desired, serve with sour cream and/or chives.
- Enjoy!

- Preheat the oven to 325 degrees F (165 degrees C). Grease a large baking pan.
- Place potatoes into a large bowl.
- Whisk oil, onion powder, garlic salt, pepper, and paprika together in a small bowl. Pour over potato cubes, hand-tossing to coat. Place potatoes into the prepared pan, spreading them so that they are evenly dispersed.

CRISPY BAKED POTATO FANS
Why this recipe works: This stunning potato dish delivers a fluffy interior, a crisp exterior, and a cheesy bread crumb topping�if you can get the potatoes cooked right. For our Crispy Baked Potato Fans recipe, we found that using the right kind of potato is key. The russet, or Idaho, potato was the best choice because of its starchy flesh and fluffy texture. Taking the time to rinse the potatoes of surface starch after they were sliced prevented them from sticking together, while trimming off the end of each potato gave the remaining slices room to fan out. To prevent overcooking our spuds in the punishing oven heat, we precooked them in the microwave before baking. A topping of fresh bread crumbs, melted butter, two kinds of cheese, garlic powder, and paprika is the crowning touch on our Crispy Baked Potato Fans. As a final step in our Crispy Baked Potato Fans recipe, we broiled the potatoes to make the topping extra-crunchy.

- 1. For the bread crumb topping: Adjust oven rack to middle position and heat oven to 200 degrees. Pulse bread in food processor until coarsely ground. Bake bread crumbs on rimmed baking sheet until dry, about 20 minutes. Let cool 5 minutes, then combine crumbs, butter, cheeses, paprika, garlic powder, 1/4 teaspoon salt, and 1/4 teaspoon pepper in large bowl. - Gather the ingredients. Position the rack in the lower part of the oven. Preheat the oven to 450 F.
- Combine the oil and butter in a large, rimmed baking pan . Place the pan in the oven until the butter has melted.
- Peel the potatoes and cut them into 1-inch cubes or small wedges.
- Peel the onion and cut it in half. Cut each half into 4 chunks.
- Mince the garlic.

- Preheat oven to 450 degrees. Spray a rimmed 18 by 13-inch baking sheet with non-stick cooking spray.

- Preheat oven to 450˚F.
- Line a baking sheet with foil and place a wire rack on top.
- Using a fork, poke the potato on all sides to create little holes. (The holed allow the steam to escape resulting in a fluffy potato.)
- Arrange the potatoes on the baking rack and brush with the melted butter or olive oil to coat.
- Sprinkle the potato generously with salt on all sides.

THE CRISPIEST OVEN-BAKED POTATOES | GUILT-FREE CRISPY POTATOES RECIPE

- Cut the potatoes (skin on, washed & patted dry) into thin rounds that are 1/8 of an inch (.3175 cm) thick
- Add the sliced potatoes into a large bowl and fill with cold water, just enough to cover the potatoes

CRISPY OVEN BAKED POTATOES
These are a little labor intensive, but worth the effort. I used Yukon Gold potatoes because they are my favourites! Make sure you keep an eye on them so they don't over cook.

- 1. Preheat oven to 450'F. Put a large metal baking tray into the oven and let it heat up while the oven heats up. This ensures the crispness of the potatoes. Put the rack on the bottom section of your stove.
- 2. Slice your potatoes 1/2" thick. Put 1" of water in a large metal pot and add some seas salt, then put the potatoes in the water and boil then simmer until the potatoes are slightly done, about 5 minutes.
- 3. Test the potatoes for doneness. They should still be somewhat hard inside. Drain well once they are done.
- 4. In a large bowl, add 2 tablespoons of oil with the sea salt. Add the hot potato slices and toss. Add two more tablespoons of oil and toss again. The tossing is important. You want to rough up the outside of the potatoes a little to ensure they get crisp.
- 5. Once the oven is heat to the desired temperature, remove the baking pan and put a tablespoon of oil on it and roll it around to ensure the whole pan is oily. This keeps the potatoes from sticking and ensures crispiness.
- 6. Place the potatoes in a single layer on the hot baking tray and put in the oven for 15-25 minutes.
- 7. Once that is done remove the potatoes and flip them over to the other side and bake for another 10-20 minutes.
- 8. These are best served immediately as they will dry out.
- 9. Enjoy!

- Preheat your oven to either 475 or to 375 degrees fahrenheit (I will explain later!). Place a metal pan in your oven while it preheats. If you have room, a good roasting pan is perfect.
- Now start with the potatoes you like best. My two choices would be Russets (my go-to for most things because they taste more “potato-y” to me) or Yukon golds.
- Drain your potatoes well and put them in a bowl. Add 2 tablespoons olive oil (or, if you have access and are feeling decadent, duck fat, goose fat or beef fat… any of these are an indulgence that’s totally worth it), 2 teaspoons of salt, and ½ teaspoon of black pepper.
- Now, let me explain the two possible oven temps. Both ways work just fine. I like the higher temp for the shorter time. But the lower temp for the longer time works great too.
- I recommend carefully shaking or gently stirring the potatoes every 10-15 minutes, for even browning. And, if you want to add minced, fresh herbs like sage, thyme, or rosemary, I recommend tossing them into the pan for the last 10 minutes, so you don’t risk burning them.
- There should be some oil remaining in the pan when you remove it from the oven. Pour it off and discard. Check the potatoes for salt, pepper, and a further showering with fresh herbs (if using).
