Steps:
- Place racks in the upper and lower thirds of your oven and preheat your oven to 200 degrees F. Line two baking sheets with parchment paper or a silpat mat.
- Wash the apples. With an apple corer, very small cookie cutter, or the round side of a metal piping tip, core the apples (you can also skip this step if you don't mind a few seeds in the chips). With a mandolin (recommended) or a very sharp knife, slice the apples horizontally into 1/8 inch-thick rounds.
- Arrange the apples in a single layer on the prepared baking sheets. Sprinkle with cinnamon. Bake for 1 hour in the upper and lower thirds of the oven. Remove the baking sheets and switch the pans' position on the upper and lower racks. Continue baking for 1 to 1 1/2 additional hours, until a single apple chip removed from the oven is crisp when set out at room temperature for 2 to 3 minutes (to test the apple chips, remove a single apple slice but let the others continue baking). Once you are happy with the crispness (the total time will vary based on the thickness of your slice and the type of apple), turn off the oven and let the apples sit in the oven for 1 hour as it cools down to crisp further (unless you fear you overcooked them, in which case remove the pan immediately and let it sit at room temperature).

ANNA OLSON'S CRISP FRUIT CHIPS
Yes, this is another recipe from Food and Drink Magazine! "A garnish of fruit chips is a dramatic way to add shards of concentrated flavour and snappy crunch to winter desserts and soups. Pastry chef Anna Olson, host of Food Network Canada's "Sugar" and owner of Olson's Foods and Bakery in Port Dalhousie, particularly loves pear or pineapple chips. They're easy to make at home, she says, but cautions "the real trick is having a good sharp mandolin slicer to cut the fruit thinly." I had fun making these beautiful garnishes so I thought I would share! They may be made with your favourite fruits, unpeeled pears or apples sliced lengthwise, or peeled and uncored pineapple are good choices. Use your imagination!! Ingredient amounts are approximate, you can add more or less fruit and icing sugar to taste.

Steps:
- Using a mandolin slicer (inexpensive Japanese versions are available in most kitchen supply stores), very thinly slice your favourite fruits.
- Arrange slices in a single layer on a parchment-lined baking sheet; sprinkle with icing sugar.
- Top with another sheet of parchment and another baking sheet.
- Dry in a 225ºF (110ºC) oven for 45 minutes. Remove top baking sheet and top layer of parchment; continue drying in the oven for at least another 45 minutes, until crisp. The more moist the fruit the longer it will take to dry.
- Let cool completely; store in an airtight container.

- Scrub clean vegetables, and then peel, if desired (I usually leave the peels on everything except for taro and rutabagas). Using a mandolin, slice the vegetables into thin slices.
- Lay the veggie slices in one layer on paper towels. Sprinkle liberally with sea salt. Set aside and allow to sweat out excess moisture for 15 minutes.
- When 15 minutes is up, use paper towels to dab off the extra moisture. Transfer to the prepared baking sheets in one layer, then brush or spray with avocado oil.

TASTY AND CRISPY JACKFRUIT CHIPS - INSTRUCTABLES

- The Jackfruit. You need to select a jackfruit, which is fully matured but only half-ripe. This one you are seeing here is harvested from our home garden.
- Harvest the Flesh. You need a sharp knife to harvest the flesh. The whole jackfruit is full of white, sticky latex. So use any cooking oil liberally on your hands and knife before starting.
- Remove Seeds. Split open each flesh of fruit and remove the seeds. Store the unseeded fruits separately.
- Add Turmeric. Add about a tea-spoon of turmeric powder over the slices and mix well. Keep aside this mix for about five to ten minutes.
- Oil for Deep Frying. Traditionally, the Jackfruit chips are deep fried using coconut oil. (You can use any cooking oil). You need about half a liter of coconut oil for deep frying.
- Deep Fry the Jackfruit Slices. When the oil is hot enough, add the jackfruit slices and deep fry. Stir from time to time to prevent the slices from sticking together.
- Serve With Sauce. Sprinkle salt over the fried jackfruit slices. Serve with tomato sauce or chili sauce. The deep fried jackfruit slices can be stored in air-tight container for a long time.

- Trim the greens and roots from the beets. Scrub the beets really well under cold water, but leave the skins on. Use a mandolin to slice the beets into 1/16-inch paper thin circles - hold the root end while dragging the beets across the mandolin and watch your fingertips closely.
- Preheat the oven to 300 degrees F, and line two (or more) baking sheets with parchment paper. (You will likely need to bake these in batches.)
- Place the beet slices in a large bowl. Sprinkle with the salt, toss to coat, and then let sit for about 15 minutes to sweat.
- Drain off and discard any accumulated liquid, then pat all the beet slices dry with a paper towel.
11 FRUIT AND VEGGIE CHIP RECIPES YOU CAN MAKE YOURSELF

- Sea Salt Lime Spinach Chips. via A Clean Bake. This easy recipe uses only sea salt, lime, spinach, and olive oil. The chips are best eaten right after they’ve cooled, as they’ll lose some of their crunch if they sit for a while after being baked.
- Cheesy Brussels Sprout Chips. via A Sunshine Mission. Despite the name, these chips are actually made with nutritional yeast, not real cheese. Nutritional yeast’s natural cheesy flavor makes this recipe perfect for vegans craving cheddar and mozzarella.
- Fig Chips. via Beautiful Pictures of Healthy Food. These fig chips are truly quick and healthy: They cook in only 10 minutes and aren’t coated in any oil.
- Spicy Baked Sweet Potato Chips. via Noming Through Life. Sweet potatoes and chipotle powder make this chip spicy and sweet. If you have one, use a mandolin to cut the potato into thin slices.
- Baked Kale Chips. via Lauren Caris Cooks. Kale chips are a classic, and the addition of smoked paprika in this recipe adds a nice kick. It’s important to keep the oven heat low so that the delicate kale leaves don’t burn.
- Plantain Chips. via Just J. Faye. Plantains are similar to bananas, but they make a better chip due to their firmness. If you want a sweeter chip, use a yellow, fully ripe plantain; for a savory chip, use an un-ripe green plantain.
- Oven-Baked Beet Chips. via Gather and Dine. Before baking the beets, sprinkle them with salt so they release all of their excess liquid. To make sure the beets achieve desired crispiness all over, rotate the pan halfway through the cooking time.
- Baked Zucchini Chips. via Everyday Dishes. This oil-free recipe only uses a sprinkle of salt to achieve a crispy chip. Since summer squash and zucchini are very similar vegetables, feel free to use them interchangeably in this recipe.
- Watermelon Radish Chips. via Pinch of Salt. Watermelon radishes are larger than normal radishes, making them an effective base for vegetable chips. Bake the chips at 400 degrees until crisp, and make sure there’s enough space between each chip on the tray to speed up cooking time.
- Baked Eggplant Chips. via Julie’s Jazz. Use olive oil to coat the eggplant before baking, and rub it in with your hands so that the rounds are fully covered.
