SALMON PATTIES IN CREAMED PEAS

Salmon Patties in Creamed Peas image

This is our go to recipe for quick, easy salmon patties. Hubby loves the cream peas also. Sometimes I will put a can of whole potatoes in there as well and just eat them on the side. If you think you don't like salmon, this is a good starting place for you using canned red salmon. I hope you like this as much as we do! Enjoy!

Categories     Other Sauces

Time 15m

Number Of Ingredients 15

1 can(s) 15.5 oz red salmon, drained, flaked,skin & bones removed.
1/4 c onion, diced
3/4 c plain bread crumbs more/less if needed
2 eggs, beaten
1/4 tsp garlic powder
1 Tbsp lemon juice, fresh
1/4 tsp freshly ground black pepper & salt
2 Tbsp butter for frying pan
1/4 c each-flour and panko breadcrumbs for coating patties
for pea sauce:
2 Tbsp butter
2 Tbsp flour
1/4 tsp salt and pepper
1 c low or fat free half and half/or milk, your choice
1 large can lesueur very young small sweet peas, drained

Steps:

  • 1. It is best to make the creamed peas first; so that it's ready to pour over the salmon patties when done-the patties take very little time to fry.
  • 2. For creamed peas: Melt the butter in a small pan and stir in the flour and seasonings. Gradually stir in the half and half, using a whisk to prevent lumps. Heat, whisking until sauce begins to thicken. Add drained baby peas and gently stir with a spoon. Stir often as it continues to heat and thicken. Remove from heat when it is finished.
  • 3. To Prepare Salmon Patties: Break up the salmon in a shallow bowl and mix with remaining salmon ingredients. Sprinkle a piece of waxed paper generously with flour/panko mixture. Shape salmon into 4-6 patties and carefully dredge both sides with flour/panko.
  • 4. Preheat skillet until hot-but not hot enough to burn the butter when added-and add butter to pan. As soon as it is melted place salmon patties into the hot, melted butter. Fry until golden on bottom then carefully flip and continue to fry until brown on bottom.
  • 5. Remove from pan and plate; pour creamed pea sauce over patties. Enjoy your dinner! I usually start with a mixed green salad and fresh fruit for dessert.

  • In a medium-sized saute pan over medium-high heat, add the olive oil. Heat the oil until almost smoking and add the shallots. Cook stirring frequently until the shallots begin to brown, about 2 to 3 minutes. Remove the shallots from the pan onto a paper towel lined platter. Season with salt, to taste.

CRISPY FRIED SALMON

Crispy Fried Salmon image

Fish sticks of a different sort. Adapted from "Eat, Fish and Be Happy," by TJ Weston. I've given an optional Lemon Ailo from the same cookbook.

Categories     Stove Top

Time 1h25m

Yield 6-8 serving(s)

Number Of Ingredients 17

3 lbs skinless salmon fillets
1 cup all-purpose flour
1 teaspoon garlic powder
1/2 teaspoon white pepper
1 cup milk
1 cup mayonnaise
2 cups plain breadcrumbs
1 tablespoon dried dill
vegetable oil
salt
3 lemons, juice of
1 garlic clove, chopped
1/8 teaspoon ground turmeric
1 cup mayonnaise
2 teaspoons chopped fresh dill
salt
white pepper

Steps:

  • Cut salmon into roughly equal-size pieces, each about 1 inch wide, 3 inches long and the thickness of the fillet. Refrigerate. (Note: To fry pieces that look like fish sticks, slice the salmon lengthwise so that the larger side of the fillet has a fairly uniform thickness. Bread all pieces as instructed, but cook the thinner pieces together and the stick-sized pieces together. Give each diner some stick-sized pieces and some smaller pieces.)
  • Mix flour, garlic powder and white pepper together in a pie plate or shallow pan. Combine milk and mayonnaise in another pie plate or shallow pan, mixing well with a fork or whisking to break up any lumps. Put bread crumbs and dill into a third pan.
  • Take a piece of fish and gently coat it in the flour, then carefully shake off any excess. Dip in milk mixture and drain off any excess, then coat with seasoned bread crumbs. Place the breaded fish onto a tray. Repeat with the remaining pieces of fish. Discard any excess liquid, flour mixture or breading mixture.
  • Pour 1 1/2 inches of vegetable oil into a large skillet. Heat over medium to medium-high heat until hot but not smoking. (Drops of water added to the skillet will sizzle.) Add 6 to 8 pieces of breaded fish (the fish cooks quickly and you must turn it, so don't try to do too many pieces at once). Fry until golden brown, turning to ensure even cooking, 2 to 3 minutes total for pieces about 1/2 inch thick. Remove with a slotted spatula and drain on paper towels.
  • Serve with Tartar Sauce or Lemon Aioli.
  • To Make Lemon Aioli: Place lemon juice, garlic and turmeric in a blender; process until smooth.
  • Pour into a small pan and bring to a simmer over medium-high heat. Reduce heat and simmer until about 2 tablespoons of liquid remain. Remove from heat, pour into a medium bowl and let cool.
  • Add mayonnaise, dill and salt and pepper to taste. Whisk until smooth. Cover and refrigerate at least 1 hour before serving.
