1 large Onion ((sliced into rings 1/2 inch thick))
3 tbsp Wholesome Yum Coconut Flour
1/4 tsp Sea salt
2 large Eggs
2/3 cup Pork rinds ((~1.8 oz))
3 tbsp Wholesome Yum Blanched Almond Flour
1/2 tsp Paprika
1/2 tsp Garlic powder

Steps:

  • Arrange 3 small, shallow bowls in a line:* Coconut flour and sea salt, stirred together* Eggs, beaten* Pork rinds, almond flour, paprika, and garlic powder, stirred together
  • Lightly grease 2 air fryer oven racks or an air fryer basket.
  • Dredge an onion ring in coconut flour. Dip it in the egg, shake off the excess, then place in the pork rind mixture. Scoop extra pork rind mixture over it, so that it's coated on all size. Place into the air fryer rack or basket. Repeat with all the onion rings, placing them in a single layer without touching. (You may need to cook them in two batches if you don't have 2 air fryer racks.)
  • Preheat the air fryer or air fryer oven to 400 degrees F for 2 to 3 minutes.
  • For an air fryer oven: Place both racks into the air fryer oven. Bake for about 8 minutes, until the top layer is golden. Switch racks and bake for 8 more minutes, until the top layer is golden again.For a regular air fryer: Only half the onion rings will fit into the basket in a single layer. Place the basket into the air fryer. Bake for 16 minutes, until golden. Remove the onion rings, arrange the next batch of uncooked rings, and repeat.

A whimsical twist on Onion Rings! This treat is delightful as a side, on burgers, or tossed in a salad or on top of your favorite soup!

1 large leek
3/4 c self rising flour [you may need an additional tablespoon or two for the correct consistency of batter]
1/2 c whole milk or buttermilk
2 Tbsp shallots, grated fine on a microplane
1 Tbsp cornstarch [plus extra to "dredge" sliced leek rings]
1 tsp kosher salt
1/2 tsp white pepper, ground
1/4 tsp cayenne pepper, optional
3 c peanut oil [approximate - enough for frying]

Steps:

  • 1. Slice leek from the bottom [white] part to where the stalk becomes light / medium green in 3/8" to 1/2" rings. Carefully separate them into separate rings, discarding the tight, white centers.
  • 2. Immerse rings in ice water and clean carefully. Remove, drain and carefully pat dry.
  • 3. "Dredge" rings in cornstarch. Set aside.
  • 4. Preheat peanut oil to 375 degrees.
  • 5. Place flour in a bowl and whisk in milk. Add grated shallot. The batter should be the consistency of thin pancake batter. When you've achieved this, whisk in remaining ingredients.
  • 6. Coat leek rings [in small batches] with the batter. Shake of excess and drop in oil and fry until deep, golden brown. Drain and sprinkle with sea or kosher salt while hot. Repeat steps until all rings are complete.
  • 7. Fantastic on their own as a side dish, but equally as delicious on a burger, in a salad, or as a topping for soup. Enjoy!

I have to make at least twice as much as I need to garnish a dish since I eat half of what I make while cooking. And why shouldn't I? I'm cooking! Be sure to stay close when frying leeks because they will burn quickly just to tick you off. The repercussions of an angry leek is just not something you really get over, you know?

3 quarts oil (peanut, vegetable, or canola)
12 ounces leeks, cleaned and trimmed of dark green parts
1 1/2 cups milk
1 large egg
2 cups all-purpose flour
2 teaspoons kosher salt, plus additional for seasoning

Steps:

  • Preheat the oil in a heavy 5-quart pot over medium-high heat to 375 degrees F.
  • Slice the leeks into 1/2-inch wide rings, separating them 2 layers at a time.
  • In a medium mixing bowl, whisk together the milk and the egg. In another medium mixing bowl, combine the flour and salt. Divide the flour into 2 separate, shallow dishes and place the milk and egg mixture in a third. Going 1 small handful at a time, dip the rings first into the first flour mixture, then into the milk and egg, and then into the second flour mixture. Working in batches, fry the rings for 1 to 1 1/2 minutes, or until golden brown. Remove the rings to a cooling rack set inside a half sheet pan and allow to drain for 2 to 3 minutes before serving. Season with additional salt, if desired.

1 medium leek, white and light green parts only
2 teaspoons extra virgin olive oil
2 tablespoons all-purpose flour
1 teaspoon paprika
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper

Steps:

  • Preheat oven to 425°F.
  • Cut leek in half lengthwise, then cut each piece in half crosswise. Cut each quarter into long, thin strips. Rinse the strips in hot water and pat dry.
  • Toss in a medium bowl with oil.
  • In a small bowl combine flour, paprika, garlic powder, salt and pepper.
  • Sprinkle flour and spice mix over leeks; toss well to combine.
  • Spread in an even layer on a baking sheet. Bake, stirring once or twice, until the leeks are crispy and golden brown, 10 to 12 minutes.
