FRIED APPLE PIES

Steps:
- Sift flour and salt together. Cut in the shortening with a pastry blender until the mixture resembles coarse crumbs. Add cold water 1 tablespoon at a time and mix with fork. When the flour mixture is moistened, gather it into a ball, wrap it in plastic, and refrigerate for 30 minutes.
- Peel and dice the apples and place them in a saucepan. Combine the sugar and cinnamon; pour over the apples and toss to coat. Cook, covered, in a saucepan on low heat. Cook until soft, then mash with fork to form a thick applesauce. Allow to cool.
- Transfer the dough to a lightly floured work surface. Roll the dough out to 1/8 inch thick and cut rounds with a large cookie cutter (4 inches in diameter).
- In each round, place 1 heaping tablespoon fruit. Moisten edges with cold water, fold in half, and press edge with a fork to seal. Repeat with the remaining pastry and filling.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Fry the pies, a few at a time, 2 to 3 minutes on each side; cook until the crust is golden brown. Drain on paper towels.

CRISPY FRIED APPLE PIES
My mother made these for years at home and for family reunions and for friends that would request them. They are a real treat for sure!

- 1. Combine apples, water and sugar in large heavy saucepan. Bring to a boil and cook on medium heat until apples are soft and most liquid is gone. Stirring occasionally.
- 2. When apples are done, cut and chop (cooked apples) with the side of a large spoon to make filling.
- 3. Add cinnamon or apple pie spice. Mix well. Cool at least 10 minutes.
- 4. Meanwhile, on floured surface, roll out biscuits into a 4 - 6 inch oval. Fill each biscuit with about 1 1/2 tablespoons of filling.
- 5. Fold over biscuit and crimp edges together, sealing well.
- 6. Melt shortening in heavy skillet and fry on medium heat(two or three pies at a time) for about 3 minutes on each side. Watch closely to prevent burning. NOTE: I have found that it is best to use CRISCO rather than bargain brand shortening. The cheaper shortening tends to burn the pies more quickly. CRISCO also makes for a crispier crust. Must be why my mama used it and nothing else.
- 7. When golden brown and done, remove from skillet with slotted spoon or spatula and place on paper towels to cool. NOTE: Even if they get a LITTLE burned or too brown, they taste good. These are the ones that my husband prefers.
