DUCK CONFIT QUESADILLA

2 cups kosher salt
2 cups sugar
10 sprigs fresh thyme
6 whole duck legs and thighs
2 quarts rendered duck fat
6 flour tortillas
1 cup shredded smoked Gouda cheese
1/2 cup caramelized onions
Unsalted butter, for browning
Your favorite jam or jelly, for serving

Steps:

  • Combine the salt, sugar and thyme in a food processor and buzz until the mix is green. Liberally coat the duck in the mixture. Let sit in the cure, refrigerated, for 24 hours.
  • Preheat the oven to 300 degrees F.
  • Remove the duck from the cure and rinse off any excess curing mix. Pat dry. Lay out the duck in a deep casserole dish and cover with the duck fat. Cover and cook for 3 to 3 1/2 hours.
  • Remove the duck and let cool; strain the fat and save for later use. Once the duck is cool enough to handle, pick the meat apart from the bones and discard the skin.
  • Assemble the quesadillas like a grilled cheese sandwich, filling the tortillas with the cheese, caramelized onions and shredded duck, folding one side over the other.
  • Cook gently in a large skillet over medium heat on each side for 3 minutes in a little butter (or the duck fat!) until the tortillas are golden brown and the cheese is gooey.
  • Serve with your favorite flavored jam or jelly.

1 packet Confit of Irish Duck Legs (Meat Shredded)
8 Tortilla Wrap
4 tbsp Cheese
80 g Butter (melted)
1 packet Watercress, Spinach and Rocket Salad
4 tbsp Pickled Red Cabbage (heaped)
4 tbsp Sour Cream

Steps:

  • One of our favourite things to eat is a beautiful slow cooked Duck leg .. All the cooking is done for you with this fantastic product.. I wanted to make something different and delicious that would be great for all the family, and be really simple to cook. Try these at your next party.. Ps.. Cook them one by one and keep them warm. 1. Off the heat brush the non stick frying pan evenly with some of the butter then lay one tortilla on top. 2. Spread the sour cream evenly on top, then scatter over the Duck, cheese and cabbage, the objective is to make sure they are thinly filled and don't fall apart. 3. Place another tortilla firmly on top and place on a medium heat for 3-4 minutes making sure you take a peek at the underside to make sure it's not browning too fast. 4. Turn deftly with a fish slice when golden brown and cook for another 3 minutes, 5. Slide from the pan into a chopping board and cut into wedges. 6. Serve with some dressed watercress , spinach and rocket salad.

2 duck confit legs
1 medium red onion, thinly sliced
1 (4-ounce) log goat cheese, softened and divided
3 scallions, thinly sliced
8 (8-inch) flour tortillas
Kosher salt and freshly cracked white pepper

Steps:

  • Cook the duck, skin-side down, covered, in a large heavy nonstick skillet over moderately-low heat until the skin is well-browned and crisp and the duck is heated through, 15 to 20 minutes. Remove the duck and pour off all but 1 teaspoon of the fat from the pan and reserve. Cook the onions in the remaining duck fat over moderate heat until crispy and brown, about 10 minutes. Add 3 tablespoons water to the pan and scrape the bottom of the pan until the water evaporates. Remove the skin from the duck and reserve. Shred the meat and place in a medium bowl.
  • Place the duck skin back in the pan and cook over a moderate heat, until the skin is crispy, about 5 minutes. Remove the skin from pan, chop and put in the same bowl as the shredded meat. Pour off all the duck fat from the pan and reserve the fat.
  • Place 1 tortilla on your work surface and spread 1 tablespoon goat cheese, 2 tablespoons of the onions, 1/2 cup of the duck mixture and 1 tablespoon scallions on top of a tortilla. Lay another tortilla on top of the scallions.
  • Brush a nonstick skillet with 1/2 teaspoon of the reserved duck fat over moderately high heat until hot but not smoking. Cook the quesadilla turning once, until golden, about 6 minutes. Repeat with the remaining ingredients and serve immediately.
  • BYOC: What can't you throw in a quesadilla? Try some Monterey Jack cheese or some pickled jalapenos.

This straightforward quesadilla has an unexpected twist: a border of salty, crispy cheese surrounding the tortilla. Achieving it couldn't be easier; just press down on the folded tortilla as it heats up in the pan so the cheese spills out and turns golden. A nonstick pan is key here, otherwise the melted cheese will glue itself onto the cooking surface. Medium heat is just the right temperature for a quesadilla: It's hot enough to crisp up the cheese but low enough to prevent the cheese from burning.

2 teaspoons oil (such as olive, grapeseed or sunflower oil)
1 (8-inch) flour tortilla
2/3 cup shredded cheese (such as Cheddar, Monterey Jack or Mexican cheese blend)

Steps:

  • Place a medium nonstick skillet over medium heat, then add the oil. Let oil heat up for 20 seconds, swirling the pan around so the oil coats the bottom.
  • Place the tortilla in the skillet and sprinkle the cheese evenly over the top. Once the cheese begins to melt, 30 seconds to 1 minute, use a spatula to fold the tortilla in half. Using the spatula, press down firmly on the top of the tortilla until some of the cheese runs out into the pan. Let the quesadilla cook until the cheese that's leaked out solidifies and turns brown, 2 to 3 minutes.
  • Flip the quesadilla over and let cook on the other side for another 1 to 2 minutes, until the cheese is crisp and golden. Slide quesadilla onto a plate and serve immediately.
