CORNED BEEF FRITTERS

- Heat oil in a saucepan or deep fat fryer to 170°C. Place flour into a medium bowl, make a well in the centre and add the egg. Beat gently, adding the milk and then the water until all the flour is mixed in, then beat hard for around two minutes. Leave batter to stand for a further two minutes. Cut each tin of Corned Beef into three chunky slices and coat with a thin layer of flour. Cover the Corned Beef with the batter mixture using a fork or spoons. Place two to three fritters at a time into the saucepan or deep fat fryer and cook until batter is a golden brown colour and crispy, approximately four minutes, remove with a slotted spoon and drain on kitchen paper. Serve with salad or on their own.

- Preheat oven to 120°C / 250°F and set a wire rack on a baking tray.
- Place flour, cornflour and baking soda in a bowl, mix to combine.
- Add egg and milk, mix until incorporated (batter will be lumpy and thick).
- Add corn, parmesan, green onions and coriander. Mix until all the corn is evenly coated in batter.
- Add enough oil into the skillet so it just covers the base. Heat over medium high heat.
- Spray the underside of a spatula with oil (so batter won't stick when you flatten).
- Place 1/4 cup batter into skillet (ice cream scooper with lever is handy), then flatten to 1cm thick. Repeat with 2 or 3 more, but don't crowd the skillet.
- Cook 3 minutes until deep golden and crisp, then flip and cook the other side for 2 - 3 minutes.
- Transfer to rack and keep warm in oven. Repeat with remaining fritters, using more oil as necessary.
- Serve with sauce of choice for dunking!

- Cover the bottom of a heavy based fry pan with vegetable oil and preheat to medium. Combine all ingredients except meat & onion making a batter then add meat & onion, gently mixing together.Using a tablespoon scoop filling into pan ( use a second tablespoon to scrape )Fry until golden and turn over and repeat.

- Peel the potatoes and place in a bowl with enough water to cover them so they won't brown. Let sit in water for 5 minutes. When ready to prepare, drain the potatoes in a colander.
- Using a food processor with a grating disc, grate the potatoes and onions. Place potato and onion mixture in a clean dish towel, wrap tightly and squeeze hard to remove the liquid. Transfer to a large bowl.
- Add the corned beef, eggs, flour, baking powder, salt and black pepper to potato mixture and mix until flour is absorbed.
- Preheat oven to 250°F and place a wire rack on top of a baking sheet. Pour in about 1/4 inch of oil into a large skillet and heat over medium-high heat. Scoop up 1/4 cup of the mixture per fritter and drop into skillet. Use a spatula to flatten into discs. When the edges of the fritters are brown and crispy, about 3-5 minutes, flip. Cook for another 3-5 minutes or until browned.
