Steps:
- Open the mojarra, clean and marinate inside with salt and lemon. Leave it for 5 to 10 minutes.
- In a pot or skillet with enough oil, sauté the mojarra on both sides for about 12 minutes or until well browned.
- Put on absorbent paper and serve immediately.

Steps:
- Pre-heat oven to 425°F. Line a baking sheet with flour and generously coat with cooking spray.
- Place flour in a shallow baking dish.
- In another shallow baking dish, whisk together eggs, milk, and mustard.
- Combine breadcrumbs, pepper, salt, coconut, and lime zest in another shallow baking dish.
- Dredge mojarra pieces in flour. Tap to remove excess flour, dip in egg for a few minutes and coat in coconut breadcrumb mixture.
- Place on baking sheet. Bake for 12-15 minutes or until fish flakes easily with a fork.
