- Preheat the oven to 275 degrees F.
- Remove the ribs from the kale and cut into 1 1/2-inch pieces. Lay on a baking sheet and toss with the olive oil and salt. Bake until crisp, turning the leaves halfway through, about 20 minutes. Serve as finger food.

- Preheat oven to 350 degrees F (175 degrees C).
- Place zucchini in a bowl. Drizzle olive oil over zucchini and stir to coat; add bread crumbs and toss to coat. Spread coated zucchini onto a baking sheet. Sprinkle Parmesan cheese and oregano over coated zucchini.
- Bake in the preheated oven until zucchini are tender and cheese is browned, about 15 minutes.

BEST EVER OVEN CHIPS

- Trim all the rounded edges off the potatoes to make a rectangular block, then cut this into thick batons (save any offcuts to make mash). Drop into a pan of cold salted water with the vinegar and bring to the boil. Simmer for 6-8 mins until the potatoes are just cooked and tender - test with the tip of a knife. Drain carefully, trying not to break any of the chips, and leave to cool completely. Can be prepared up to two days ahead and chilled until needed.
- Heat the oven to 220C/200C fan/gas 9. Pour the oil into a sturdy, rimmed baking tray or shallow roasting tin and heat in the oven. Mix the flours with the baking powder, cayenne and some salt in a shallow dish and gently toss the chips in the floury mixture to coat, then leave in the mixture until needed.
- Carefully remove the pan from the oven - the oil should be shimmering - and lay the chips in a single layer in the pan. Use a thin, flexible spatula to gently turn the chips so they are all coated, then roast for 20 mins. Turn the chips again, then roast for another 10 minutes. Turn one final time, then cook for a futher 10 minutes until crisp and deep golden all over. Drain the chips onto kitchen paper and serve straight away.

THE BEST TWICE-COOKED CHIPS
Steps:
- Gather the ingredients.
- Cut the potatoes into about 1/2-inch (1-cm) slices, then slice these into 1/2-inch (1-cm) wide chips.
- Place the chips in a colander and rinse under cold running water until the water runs clear.
- Place the washed chips in a pan of cold water, bring to a gentle boil, and simmer for 3 to 4 minutes.
- Drain the potatoes in a colander.
- Drain the potatoes thoroughly and then pat dry with paper towels. Remove as much moisture off of the potatoes to avoid splatter when putting them in the oil.
- Add about 2 to 3 inches of oil to a heavy pot or Dutch oven and attach a deep-fry thermometer. Heat the oil to 320 F/160 C. Carefully lower some chips-about 2 handfuls-into the hot oil using a slotted metal utensil or deep-fry basket. Fry for about 3 minutes. Do not brown them. Let the oil come back to temperature between batches.
- Turn the chips out onto paper towels to drain. Keep them at room temperature until needed.
- Reheat the oil to 375 F/190 C and fry the chips once more until golden and crisp, 5 to 8 minutes.
- Drain and season with salt. Serve immediately and enjoy.

THE BEST CHIPS YOU HAVE EVER TASTED
The secret of good chips is to cook them twice at two different temperatures, so you will need a deep pan and a thermometer for this recipe.

- Peel the potatoes and cut lengthways into roughly 1cm/½in slices. Cut each slice into fairly thick chips and rinse in a colander under plenty of cold water to remove excess starch. (If you have time, it's worth letting the chips soak in a bowl of cold water for several hours, or overnight.) Pat dry with kitchen paper.
- Heat a deep, heavy-bottomed saucepan half-full of the sunflower oil to 130C. It's important to use a cooking thermometer and check the temperature regularly. Alternatively, use an electric deep-fat fryer heated to 130C. (CAUTION: hot oil can be dangerous. Do not leave unattended.)
- Using a large, metal, slotted spoon, gently lower half the chips into the hot oil and stir carefully. Fry for ten minutes, or until cooked through but not browned.
- Remove the chips from the pan with a slotted spoon and set aside to drain on plenty of kitchen paper. Repeat the process with the remaining chips. (The chips can be left for several hours at this stage.)
- When ready to serve, reheat the oil to 190C. With a slotted spoon, lower all the par-cooked chips gently into the pan and cook for 4-5 minutes, or until crisp and golden-brown. Remove from the pan with a slotted spoon and drain on kitchen paper.
- Tip into a serving dish and sprinkle with salt and vinegar to serve.
CRISPY CHEESE PICKLE CHIPS IN THE OVEN

- Preheat oven to 350 degrees
- Sprinkle 1 teaspoon shredded cheese into a non stick muffin pan.
- Place one pickle on top of the shredded cheese.
- Sprinkle about 1/2 teaspoon shredded cheese on top of the pickle. It won't cover it completely and that's okay.
- Sprinkle each chip with Everything bagel seasoning if using. Note: you can use any seasoning you want you you can bake them without any seasoning. I want to encourage you to try them both ways.
- Bake at 350 degrees for about 6 minutes or until the edges of the cheese are dark brown and all the cheese has fully melted.
- I've noticed the silicone pans take about 3 minutes longer to get those crispy edges.
- These cheese should be bubbling and flat. If the cheese is not bubbling they will not turn out crispy. Be sure not to take them out of the oven too soon. If you do it will just be melted cheese and it didn't have enough time to form a cheese crust that holds the chip together. The darker brown the cheese the crunchier the chip.
