CRISPY KALE "CHIPS"
Make your own crispy kale chips at home, thanks to Melissa d'Arabian from Ten Dollar Dinners on Food Network.

- Preheat the oven to 275 degrees F.
- Remove the ribs from the kale and cut into 1 1/2-inch pieces. Lay on a baking sheet and toss with the olive oil and salt. Bake until crisp, turning the leaves halfway through, about 20 minutes. Serve as finger food.
CHILI-ROASTED KALE
This recipe was adapted from one of my favorite methods of preparing broccoli and cauliflower - roasting at high heat with the bold flavor of chili powder. The result with kale is a little outrageous - fiery flavor with a unique crispy texture!

- Preheat an oven to 400 degrees F (200 degrees C).
- Place the kale into a large mixing bowl, and drizzle with the olive oil. Toss until evenly coated, then sprinkle with the chili powder and kosher salt, and toss again. Spread the seasoned kale onto a baking sheet.
- Roast in the preheated oven for 5 minutes, then stir the kale, and continue roasting until the edges become brown and a little crispy, 5 to 8 minutes. Serve immediately.

CRISP KALE CHIPS WITH CHILE AND LIME

- Heat the oven to 350 degrees. Make sure the kale is dry; if it is not, it will steam rather than crisp in the oven.
- In a large bowl, toss kale pieces with olive oil and kosher salt; you may need to do this in 2 batches. Massage the oil onto each kale piece until the oil is evenly distributed and the kale glistens. Spread the kale out on 2 17-by-12-inch jellyroll pans (or do this in batches). Bake the kale chips until the leaves look crisp and crumble, about 12-16 minutes. If they are not ready, bake for another 2 to 4 minutes.
- Remove from the oven and cool to room temperature. Sprinkle with the lime zest, sea salt and chile powder to taste.

- Preheat oven to 375 and place rack on lower level in oven.
- Mix the optional dry ingredients together. Mix and match to your likings or use all of them.
- Toss the kale, garlic with oil to coat then sprinkle dry ingredients over to coat evenly.
- Spread onto a baking sheet, and bake for approximately 15 minutes or until crispy and brown around the edges. Stirring 1/2 way through. If not crispy cook 5 more minutes till edges are lightly browned.

CRISPY BARBECUE KALE CHIPS
Healthy and crispy kale chips with barbecue seasoning.

- Preheat oven to 300F. Line two large rimmed baking sheet with parchment paper.
- Wash the kale, remove the stems, and tear into pieces.
- Allow the kale to dry completely on paper towels or a clean dish towel.
- Spread out the dried kale on the baking sheets making sure it has room and is not piled up. Drizzle with olive oil and using your hands, massage the kale making sure that each leaf is well coated.
- In a small bowl, mix smoked paprika, cumin, garlic, chili powder, salt and pepper.
- Sprinkle the kale generously with barbecue spice mix and give the kale another rub with your hands to distribute the spices. Note: You will have a lot of extra seasoning! Keep it in a small jar for your next batch of kale chips.
- Bake for 10 minutes, give the pans a good shake and rotate. Return to the oven and bake another 15 minutes.
- Allow chips to cool on the pan for about 3 minutes.
- Store in a glass mason jar once completely cooled.

- Preheat oven to 300 degrees F (150 degrees C). Line 2 baking sheets with baking parchment.
- Wash kale. Remove and discard ribs. Dry leaves thoroughly, using a salad spinner if available. Make sure no moisture remains. Tear kale leaves into 2- to 3-inch pieces.
- Blend olive oil, Sriracha hot sauce, lime juice, and salt together with a whisk in a large bowl; add kale and toss to coat.
- Divide kale onto prepared baking sheets and arrange so there is no overlapping of pieces.
- Bake in preheated oven for 15 minutes, flip any pieces getting too browned on the bottom, and continue baking until the kale is crisp, about 15 minute more. Let kale chips cool 3 to 4 minutes before serving.
