4 boneless skinless chicken breast halves (4 ounces each)
1/4 teaspoon pepper
2 teaspoons olive oil, divided
2 plum tomatoes, seeded and chopped
2 garlic cloves, minced
2 medium carrots, halved and thinly sliced
1 cup Italian tomato sauce
3/4 cup reduced-sodium chicken broth
1/4 cup tomato paste
1 teaspoon dried rosemary, crushed
Hot cooked pasta

Steps:

  • Sprinkle both sides of chicken with pepper. In a large nonstick skillet over medium-high heat, brown chicken on each side in 1 teaspoon oil. Remove and keep warm. , In the same skillet, saute tomatoes and garlic in remaining oil for 1 minute. Add carrots; saute 2-3 minutes longer. Combine the tomato sauce, broth, tomato paste and rosemary; stir into skillet. Bring to a boil. , Return chicken to the pan. Reduce heat; cover and simmer for 10-12 minutes or until chicken juices run clear and carrots are crisp-tender. Serve with pasta.

Skillet Chicken in Garlic Tomato Sauce is delicious and so easy to make. This recipe uses kitchen staples to make a wonderful family dinner!

Number Of Ingredients 9

2 lbs. fresh boneless skinless chicken breasts (or 4 good sized chicken breasts)
28 ounces peeled crushed tomatoes
2 tablespoons minced garlic
2 teaspoons dried basil
3 tablespoons olive oil
1/3 cup unsalted butter
salt and pepper (to taste)
pinch Cayenne Pepper
2 tablespoons Grated Parmesan Cheese (plus more for garnish.)

Steps:

  • Generously season your chicken breasts with salt and pepper on both sides. Heat the olive oil in a large, deep skillet or pan over medium to medium-high heat. Add the chicken breasts to the pan and cook for about 5 minutes per side, or until juices run clear, turning a nice golden brown. Once cooked, reduce the heat to low and carefully remove chicken from pan and set aside.
  • Make sure that you have reduced the heat to low, then add the minced garlic to the same pan with the oil. Cook the garlic for 1 minute, then slowly add the crushed tomatoes to the pan, then add the dried basil and cayenne pepper. Slowly increase the heat to bring the sauce to a simmer. Keep the sauce at a simmer so that it does not splatter. Simmer for 5 minutes, stirring occasionally. Whisk in the butter until melted, then whisk in 2 tablespoons of grated parmesan cheese. Carefully return the cooked chicken breasts to the pan and allow them to simmer in the sauce for an additional 3 minutes.
  • Serve over cooked pasta and garnish with additional parmesan cheese. As an alternative, you could serve it with some bread for dipping in the sauce and a nice side salad. If you would like to keep it low carb and gluten-free, try serving it over zucchini noodles or spaghetti squash.

Super-simple to put together, this is a great, fast method for really good, crispy crumbed chicken, and I've added garlic for extra flavour. Pounding the chicken, both before adding the crumbs and to help them to stick, tenderises the meat and makes it even quicker to cook.

2 x 120 g skinless chicken breasts
2 thick slices of seeded wholemeal bread, (75g each)
1 clove of garlic
1 lemon
50 g rocket

Steps:

  • Place the chicken breasts between two large sheets of greaseproof paper, and whack with the base of a large non-stick frying pan to flatten them to about 1cm thick.
  • Tear the bread into a food processor, then peel, chop and add the garlic, and blitz into fairly fine crumbs.
  • Pour the crumbs over the chicken, roughly pat on to each side, then re-cover with the paper and whack again, to hammer the crumbs into the chicken and flatten them further.
  • Put the pan on a medium heat. Fry the crumbed chicken in 1 tablespoon of olive oil for 3 minutes on each side, or until crisp, golden and cooked through.
  • Slice, plate up, season to perfection with sea salt and black pepper, sprinkle with lemon-dressed rocket, and serve with lemon wedges, for squeezing over.

8 small bone-in, skin-on chicken thighs
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
2 tablespoons unsalted butter
1 medium yellow onion, chopped
6 garlic cloves, roughly chopped
1/2 teaspoon crushed red pepper flakes
1/4 cup dry white wine
One 26.46-ounce carton chopped tomatoes, such as Pomi
Two 3.8-ounce cans sliced black olives, drained
1 tablespoon fresh oregano leaves
3 tablespoons chopped flat-leaf parsley

Steps:

  • Preheat the oven to 375 degrees F.
  • Sprinkle the chicken with salt and pepper. Heat the oil in a large braiser or high-sided saute pan oven over medium-high heat. Add the chicken skin-side down and cook, undisturbed, until golden brown, 3 to 4 minutes. Remove the chicken to a plate.
  • Reduce the heat to medium-low and add 1 tablespoon butter along with the onions, garlic and crushed red pepper. Cook, stirring often, until softened, about 5 minutes. Add the wine and simmer until reduced by about half, about 3 minutes. Add the tomatoes, olives, oregano and the remaining tablespoon butter and bring to a simmer; season with salt and pepper.
  • Nestle the chicken in the sauce skin-side-up and transfer to the oven. Bake until the chicken is just cooked through, about 40 minutes. Sprinkle with the parsley and serve immediately.

3 cloves garlic (minced)
6 tablespoons honey
2 tablespoons soy sauce
2 tablespoons barbecue sauce
1 teaspoon fish sauce
1 teaspoon white wine vinegar
1/2 cup water
1 teaspoon cornstarch
1 pound boneless skinless chicken breasts ( cut into chunks)
1/2 cup flour
3 eggs
1/2 cup breadcrumbs
Oil for frying

Steps:

  • Add all sauce ingredients to a small saucepan and bring to a boil. Reduce the heat and simmer until starting to thicken. Set aside until all the chicken is done.
  • Pat the chicken dry. To a shallow dish add the flour. Whisk the eggs together in a second dish and put the breadcrumbs into a third. To bread the chicken coat it first with flour, then with eggs and finally with breadcrumbs.   • Heat a nonstick frying pan over medium high heat. Add oil and cook the chicken in batches for 6-8 minutes or until golden and crispy on the outside and cooked through on the inside.
  • Add all the cooked chicken into the pan and pour the sauce over it. Toss until everything is coated and the sauce has thickened to a syrupy consistency.

4 boneless, skinless chicken breasts
2 thick slices wholemeal bread
2 tsp dried mixed herbs
400g can chopped tomato
1 garlic clove , crushed
1 tsp balsamic vinegar
2 tsp tomato purée
350g frozen green bean
handful flat-leaf parsley , chopped, to serve

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Split the chicken breasts almost in half and open out like a book. Place in a non-stick roasting tin. Whizz the bread into crumbs in a food processor, then mix with the herbs. Mix the tomatoes with the garlic, vinegar and tomato purée. Spread the sauce over the chicken, sprinkle with the crumbs, then bake for 20-25 mins until the chicken is tender.
  • While the chicken is cooking, boil the frozen beans for 3-5 mins until just tender. Serve the chicken, sprinkled with parsley, on a bed of beans.
