Provided by Buckwheat Queen

Categories     World Cuisine Recipes     Asian

Time 1h15m

Yield 6

Number Of Ingredients 10

1 cup uncooked short-grain white rice
1 tablespoon olive oil
14 ounces boneless, skinless chicken breast
6 cups chicken broth
1 (2 inch) piece grated fresh ginger
1 ear fresh corn, husked
salt and ground black pepper to taste
3 spring onions, sliced
6 teaspoons black sesame seeds
6 teaspoons spicy chili crisp sauce

Steps:

  • Rinse rice under cold running water until the water runs clear. Set aside.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat oil and brown chicken on all sides, about 8 minutes, making sure each side is browned before flipping. Add a few tablespoons of chicken broth to the Instant Pot® and scrape off any browned bits from the bottom with a wooden spatula. Turn off Saute function. Add drained rice, ginger, and remaining broth.
  • Cut the kernels from the corn cob and break cob into 3 pieces. Add corn kernels and cob pieces to the pot. Close and seal the lid. Select Porridge function and set timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 15 minutes. Open the lid and discard the corn cob pieces. Remove chicken breast. Shred chicken with two forks and return to the congee. Season with salt and pepper and mix well.
  • Divide congee amongst 6 bowls. Top each bowl with equal amounts of sliced spring onions, sesame seeds, and chili crisp.

CHICKEN CONGEE

Chicken Congee image

Congee is regarded as the ultimate Chinese comfort food, according to the author Fuchsia Dunlop. This recipe for ji zhou or chicken congee, from her book on Jiangnan regional cuisine, is dead simple and satisfying. Serve it with chicken and soy sauce for a late-night Shanghai-style snack.

Provided by Sara Bonisteel

Categories     breakfast, dinner, snack, soups and stews, main course, side dish

Time 2h15m

Yield 3 to 4 servings

Number Of Ingredients 7

3/4 cup/150 grams sushi rice
2 1/2 quarts/2.5 liters chicken stock
Salt
Soy sauce, for serving
Thinly sliced spring onions or scallions, green parts only, for serving
Finely chopped fresh ginger, for serving
Sesame oil, for serving

Steps:

  • Rinse and drain the rice.
  • Put the rice in a pot with the chicken stock and bring to boil. Give the rice a good stir, scraping the bottom of the pan to prevent sticking, then lower the heat and half-cover the pan. Simmer gently for 1 1/2 to 2 hours, stirring every 15 minutes, until the grains have burst open and you have a thick congee. Keep an eye on the pot to make sure the rice doesn't stick to the bottom. Toward the end of cooking, when the stock has become integrated with the rice and is the consistency of oatmeal, season lightly with salt to taste.
  • Serve the congee with a sprinkling of soy sauce, spring onion and ginger and a few drops of sesame oil to taste.

CHICKEN AND GINGER CONGEE (GF)

Chicken and Ginger Congee (GF) image

This Chicken and Ginger Congee is incredibly nourishing, comforting and delicious. It's easy to make - it just requires one pot and some patience while it simmers.

Provided by The Worktop

Categories     Meats     Oats and Grains     Savory

Time 1h5m

Number Of Ingredients 6

1 cup long grain rice ((white or brown))
8 cups water
6 chicken thighs ((bone-in))
1 piece of ginger about 1 inch by 1 inch ((2.5 cm by 2.5 cm) - peeled and sliced into large pieces)
salt (- to taste)
scallions (- for garnish)

Steps:

  • Rinse and drain the rice. Pour the rice into a heavy stock pot (a cast iron pot works great).
  • Add in the water, ginger and chicken thighs.
  • Bring the pot to a boil then immediately turn down the heat. Allow the pot to simmer, covered, for 1-1 1/2 hours, or until the rice has absorbed most of the liquid and has started breaking apart. It will take white rice about 1 hour, and brown rice about 1 1/2 hours.
  • Remove the chicken thighs into a bowl and allow to cool. When the chicken thighs are cool enough for you to handle, shred the meat and remove the bones.
  • Add the shredded chicken back into the congee and mix well.
  • Add salt, if desired.
  • Serve the congee into individual bowls and garnish with green onions, if desired.

  • When the breast meat has cooled completely remove the bones and tear the meat into shreds. Keep covered in the fridge until ready to use. Bring to room temperature before serving.

  • Bring to a boil and stir. Reduce heat to low. Simmer covered stirring from time to time, until the rice is the consistency of oatmeal, about 1½-1 ¾ hours. • Heat the chicken fat in a pot on medium. When hot, add the ginger, garlic and pandan leaves. Be careful not to burn the garlic! Once fragrant, add in the brown rice and stiry fry for a few minutes.
  • Add the chicken stick and bring to the boil on high heat, then decrease to medium-low and allow to simmer. Give it a stir now and then to prevent the rice from sticking to the bottom of the pot (every 10-15 minutes). Check that there is more than enough water- it should be more than just covering the rice- as you do not want the water to completely evaporate whilst you are off doing something else.
  • 5-10 minutes before you want to eat, adjust the water to your preference (top up with water if the congee is too dry for your liking or increase the heat to evaporate the excess water if you find it too watery.) Season with salt, light soya sauce and sesame oil.
  • Enjoy! To pimp up your congee, you can top it with: sprin onions, crispy chicken skin, pork crackling, fried peanuts and anchovies etc

  • Add the rice and stock to a pot and bring to a boil. Once boiling, stir and reduce heat to medium-low. Add the chicken thighs and a large pinch of salt and cover partially. Check the congee, stirring often, to make sure nothing’s sticking to the bottom (stirring also helps break down the rice, thickening the congee). The congee should be thick and porridge-y after about an hour. Remove the chicken thighs and shred them, then add back to the congee. If it’s getting too thick, you can add water or stock to get it back to your desired consistency.
  • While the congee is cooking, make the crispy shallots. Combine the thinly sliced shallots and oil in the smallest saucepan you have. Add oil as necessary, just to cover the shallots. Bring the mixture to a simmer over medium heat, then reduce heat to maintain a steady simmer and cook for 5 to 7 minutes or until lightly browned. Use tongs or a slotted spoon to remove shallots to a paper-towel-lined plate (don’t worry if they don’t feel crispy—they will crisp up as they cool) and season immediately with a pinch of salt.
  • Right before serving, season and salt to taste (bearing in mind that the dish is finished with salty tamari and crispy shallots), then stir in the grated ginger.

  • Brown Rice Congee with Chicken, Edamame, and Crispy Mushrooms. Variety is both the spice of life and the key to this congee, which uses both long-grain brown and short-grain white rice.
  • Instant Pot Chicken Congee. Like many low-and-slow dishes, congee can be cooked in an instant pot, solving for the times where you just don't want to wait to get your food hug.
  • Slow Cooker Congee with Jammy Eggs. On the other end of the timing spectrum, you can also break out your slow cooker for congee. Set everything up before you go to bed, then wake up to a breakfast of porridge topped with all the usual morning suspects: eggs, crispy bacon, and hot sauce.
  • Congee with Crispy Chicken Skin. Chicken skin chips are the new potato chips, and let this recipe be the proof. The crispy bits add texture to the creamy bowl of congee, and the end result is a deeply flavored bowl that'll surprise you with how few ingredients are needed.
  • Chinese Ham Bone Rice Soup. You don't need a freezer full of homemade stock or an expensive store-bought version to infuse congee with as much flavor as possible.
  • Instant Pot Congee. If you learn one thing from this article, it'll be that the sky's the limit when congee toppings are involved. This one suggests crispy shallots, toasted coconut, shredded pork, a jammy egg, sliced chili peppers, and more.
  • Vegetarian Congee. While many congee recipes call for pork or chicken, the rice porridge can just as easily be made vegetarian and still be filling. This one relies on mushrooms and eggs for staying power, and spicy food lovers will appreciate the inclusion of potent dried arbol chilis.
