- Preheat oven to 425 degrees F (220 degrees C). Grease a baking dish.
- Mix cracker crumbs, seasoned salt, and garlic powder in a shallow bowl. Dip chicken breasts into melted margarine and press into cracker mixture until coated. Arrange chicken in prepared baking dish.
- Bake in preheated oven until chicken breasts are no longer pink in the center and the juices run clear, 45 to 60 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (75 degrees C).

HOT HONEY CHICKEN

- Preheat an outdoor grill for high heat and lightly oil the grate.
- In a small bowl, combine the honey, hot pepper sauce and ground black pepper and mix well. Cover each chicken breast with the sauce and put on the grill, basting occasionally.
- Grill for 10 to 15 minutes per side, or until internal temperature reaches 180 degrees F (80 degrees C). Chicken will have a nice, brown color from the sauce.

- In a medium bowl, add the salt, pepper, onion powder, garlic powder, paprika, cumin, oregano, and cayenne and mix until combined. In a another medium bowl, combine half of the spice mix with the flour, mixing until the spices are evenly distributed.
- Add the chicken to a large bowl and sprinkle with the remaining spice blend. Mix until all the chicken pieces are evenly coated.
- Pour the buttermilk over the chicken and stir until the residual spices from the chicken have blended in with the buttermilk to create a light orange color. Marinate the chicken in the fridge for 2 hours, or overnight.
- Heat the oil to about 325°F (160°C) in a large cast-iron skillet.
- Dredge each piece of chicken in the flour, shaking off any excess. Dip them back into the buttermilk mixture, then back into the flour. Make sure to shake off excess flour or it'll burn while frying.
- Fry 3-4 chicken pieces at a time, occasionally turning them over. Cook for 10-12 minutes, until golden brown, crispy, and the internal temperature reaches 165°F (75°C). Rest the cooked chicken pieces on a wire rack to let excess oil drain off.
- Drizzle the chicken with honey, then serve.

CRISPY CHICKEN BREASTS WITH SPICY HONEY

- For the chicken: Place a heavy-bottomed Dutch oven over medium-high heat. Add your frying oil and heat to 375 degrees F.
- In a large bowl or a gallon-sized resealable plastic bag, mix together the cornstarch, baking powder, salt and your favorite seasonings. Add your chicken pieces to the flour mixture. Coat the chicken well, but be sure to shake off any excess flour. At this point the chicken can be battered immediately, or it can sit, refrigerated, for 2 hours or overnight, coated in the dry dredge.
- In a separate large bowl, whisk together all of the dry batter ingredients, then add all of the wet ingredients, stirring to smooth out any lumps.
- Dredge the cornstarch-coated cutlets in the batter, letting any excess drip off and lay them in the oil. Add a few pieces at a time so the temperature of the oil doesn't drop, and fry until golden brown on both sides, 3 to 5 minutes. Remove to a paper towel-lined tray.
- For the spicy honey: Whisk together the honey and Sriracha or chiles in a bowl. If using chiles, allow the heat to infuse for at least 30 minutes.
- To serve, drizzle the chicken with your Spicy Honey and serve with any extra Spicy Honey on the side.
SPICY HONEY CRISPY CHICKEN TENDERS

- In a large mixing bowl whisk together flour, salt, pepper, paprika, and cayenne pepper.
- In another mixing bowl beat the eggs and water together with a fork.
- Set aside.
- In a medium pan add 2 Tablespoons oil and garlic. Cook for 30 seconds and then add the honey, soy sauce, pepper, and Franks hot sauce.
- Bring to a boil over medium high heat and then reduce heat to low and simmer for 3 minutes.
- Set aside.
- In a large skillet pour oil ½ inch deep and heat oil over medium high heat.
- Salt and pepper the chicken then dredge each strip in the flour mixture.
- Then take the chicken and coat it in the egg wash.
- Finally dip the chicken back into the flour mixture and using tongs place in the heated oil.
- Brown the chicken for 4 to 5 minutes per side. Internal temperature should reach 165 degrees.
- (Cooking time will vary depending on the thickness of your chicken tenders.)
- Remove chicken from oil and drain on paper towel.
- Coat chicken in honey sauce and serve immediately.
SPICY HONEY CHICKEN

- Preheat grill to medium-high heat, around 400 to 450 degrees F. Make sure the grill grates are clean.
- Trim excess fat from the chicken, if needed, then pat dry. Drizzle with the olive oil, rubbing it to coat the chicken on both sides.
- In a small bowl or jar, combine all of the spice rub ingredients, stirring to combine. Sprinkle the rub evenly over the chicken pieces on both the front and back sides, rubbing it in with your hands so it is evenly distributed.
- Heat the honey in a small microwave-safe bowl in the microwave for 15 seconds until very runny. Add the vinegar and stir to combine. Set aside 2-3 tablespoons of the honey-vinegar mixture for drizzling over the chicken at the end.
- Grill boneless chicken thighs for 3-5 minutes per side, anywhere from 6 to 10 minutes total, depending on their size, until they reach an internal temperature of 165 degrees F when tested with a digital meat thermometer. Bone-in chicken thighs will take a little longer to cook - more like 10-14 minutes total with about 5-7 minutes per side. In the last minute or two of grilling, brush the chicken on both sides with the honey-vinegar glaze. Watch the chicken carefully at this point because the honey will smoke and flare-ups can happen because of the sugar in the glaze.
- Remove from the heat and drizzle with the reserved honey-vinegar glaze, then let rest for 5 minutes before serving.

- If using chicken breasts, pound down and cut into strips. If using boneless, skinless chicken tenders (chicken tenders are the lean strips of meat found attached to the underside of chicken breasts - they can also be purchased separately.) - cut in half lengthwise. 2.Preheat oven to 400°F (204°C). Line a large baking sheet with parchment paper or a silicone baking mat. Set aside. 3.Pulse the shredded coconut in a food processor or blender to break it down into smaller pieces. Alternatively, you can chop it up. Mix it with the Panko in a medium bowl. Set aside. In a second medium bowl, whisk the flour, salt, and pepper together. In a third bowl, whisk the eggs together. 4.Heat the coconut oil in a large skillet over medium-high heat. 5.Coat each chicken strip in flour, shaking off any excess. Then, dip in egg and let any excess drip off. Then generously roll in the coconut mixture, shaking off any excess. Add more Panko to the dish if you are running low. 6.Fry 4-6 chicken strips at a time in the coconut oil-- only about 2 minutes per side until the crust is golden brown. It's available in major grocery stores near the stuffing. Panko is heavily preferred opposed to regular bread crumbs because they tend to stay crispier longer. You may buy seasoned or unseasoned and then add more/less seasonings to your breading if preferred. I use unseasoned. 3.Instead of flash frying in coconut oil in steps 4 and 6, you can simply bake the coconut chicken for around 20 minutes (flipping halfway through) and skip those two steps. However, we much preferred the taste of the chicken after being pan fried in coconut oil for that brief amount of time. It adds another layer of coconut flavor as well as ensures a crispy golden brown crust.
