- 1. Drain the tofu, and cut into your steak sized pieces. I like cutting it into two large steaks by slicing the block it in half lengthwise, but you can make any shape you like. 2. Once cut, lay the tofu pieces on a clean dishtowel, and then wrap them up in the towel. Put a cutting board on top, and balance something heavy, such as a few cans on top of that. This is how you press the tofu to help release excess water. Let the tofu press for 10 to 30 minutes, the longer you press it, the drier and more firm the steaks will be. 3. When you are ready to make your tofu steaks, mince the garlic cloves and add them to a large flat bowl that is big enough to fit one of your tofu steaks. 4. Add the remaining sauce ingredients to the garlic bowl: the tomato paste, dijon mustard, maple syrup, soy sauce, water, and pepper, and mix together. 5. In a separate dish that is also big enough to fit the tofu steak, add the breadcrumbs. 6. Dip the tofu steaks in the tomato paste mixture, and use a spoon or fork to help spread a thick layer of the sauce on the tofu. Now dip the sauced tofu steak into the breadcrumbs and use your hand to help pat the breadcrumbs onto the tofu. Repeat with remaining tofu pieces. 7. Heat the oil in a frying pan over medium heat. When hot, carefully fry the tofu pieces until they are golden brown on both sides, and heated through. About 3 to 6 minutes per side. The breading can be a little fragile and falls off easily, so I found the best technique was to use a large spatula (and not tongs) for flipping. Just be gentle when handling the tofu. 8. For presentation, cut the tofu on an angle and serve with a side of your favourite BBQ sauce.
BREADED TOFU - BAKED OR PAN-FRIED

- Drain and press a block of tofu, getting out as much liquid as possible. Then slice it into 1/4 inch thick slices.
- Mix together breading ingredients on a plate or shallow dish.
- Sprinkle tofu with some Bragg's Liquid Aminos or soy sauce or equivalent.
- Place the tofu in the breading and press down a little to make the coating stick to the tofu.
- Flip over and coat the other side.
- Preheat the oven to 400°F (200°C).
- Spread about 2 tbsp of oil on the bottom of a cookie sheet.
- Place the breaded tofu on the cookie sheet and bake at 400°F (200°C) for about 20 minutes.
- After 20 minutes, take out of the oven and flip with a spatula.
- Bake for an addtional 20 minutes on the other side.
- Place 2 tbsp of oil in the bottom of a skillet. (I highly recommend using an iron skillet for tofu. It always cooks perfectly and never sticks to my iron skillet).
- Place the coated tofu in the frying pan and turn heat to medium-high.
- Cook for about 3-5 minutes on each side until golden brown and crunchy.

- Thaw tofu, 8 hours to overnight. Place in a colander with a weight on top to squeeze moisture out.
- Place tofu on a flat work surface and cut into approximately 16 'nuggets.'
- Mix milk, mustard, garlic salt, onion powder, and pepper together in a bowl. Pour break crumbs into a separate bowl. Dip each nugget into the milk mixture and roll into the bread crumbs, coating completely.
- Heat oil in a skillet over medium-high heat. Add nuggets; cook, flipping halfway, until golden brown, about 7 minutes.

- Heat a large pan over medium heat and add 1 teaspoon olive oil, carrots, celery and onion. Add a pinch of salt and pepper, stir and then cover. Cook until vegetables have softened and browned, stirring occasionally, about 10 minutes. Add in the garlic and cook for another minute.
