1/4 cup minced fresh chives
2 garlic cloves, minced
1/2 teaspoon salt
CHICKEN:
1/4 cup all-purpose flour
2 tablespoons light brown sugar
1 teaspoon ground mustard
3/4 teaspoon pepper
1/2 teaspoon salt
1/4 teaspoon cayenne pepper
2 large eggs, lightly beaten
2 cups coarsely crushed barbecue potato chips
1-1/2 pounds chicken tenderloins
Oil for frying

Steps:

  • In a small bowl, mix sour cream, chives, garlic and salt. In a shallow bowl, mix flour, brown sugar and seasonings. Place eggs and potato chips in separate shallow bowls. Dip chicken in flour mixture to coat both sides; shake off excess. Dip in eggs, then in potato chips, patting to help coating adhere., In a deep skillet, heat 1/4 in. oil to 375°. Fry chicken, a few strips at a time, until golden brown, 2-3 minutes on each side. Drain on paper towels. Serve with sauce.

8-10 chicken thighs and/or drumsticks (bone-in, skin on)
2 cups of your favorite bbq sauce
2 tablespoons extra-virgin olive oil (or canola oil)

Steps:

  • Preheat oven to 400 degrees F.
  • Coat the chicken on all sides with olive oil and season with salt and pepper.
  • Place the chicken skin side down on a rimmed baking sheet. Bake for 25 minutes.
  • Remove chicken from oven and turn the temperature of the oven up to 425 degrees.
  • Coat the top of the chicken with barbecue sauce using a basting brush. Use a spatula to flip the chicken over, being careful not to tear the skin. Baste the other side of the chicken, and place back in the oven for 7 minutes.
  • Remove from oven, baste top with barbecue sauce, and place back in oven for 7 more minutes.
  • Remove from the oven again and baste again, for a total of three times, and place back in oven for 7 more minutes.
  • If the chicken hasn't crisped and browned to your liking, move the oven rack up and broil the chicken for 3-5 minutes, until it's more crispy.

  • Heat oven to 425°F. In 13x9-inch pan, place butter. Heat in oven 2 to 3 minutes or until melted.
  • In shallow dish, stir Bisquick mix and pepper. Pour milk into small bowl. Coat chicken with Bisquick mixture, then dip into milk and coat again with Bisquick mixture. Place chicken in pan.
  • Bake uncovered about 30 minutes or until juice of chicken is clear when center of thickest part is cut (170°F).
  • In small microwavable bowl, microwave barbecue sauce uncovered on High about 30 seconds or until warm. Spoon sauce evenly over chicken; top with cheese.

28 oz barbecue sauce ((we use Sweet Baby Ray's))

Steps:

  • Heat oven to 450 degrees Fahrenheit.
  • Place a cooling rack on top of a rimmed baking sheet.
  • Add chicken thighs to the rack. Baste the chicken with olive oil.
  • Rub the seasoning into the chicken.
  • Place the chicken into the oven and bake for 25 minutes.
  • Remove the chicken from the oven.
  • Change the oven temperature to 400 degrees Fahrenheit.
  • Add barbecue sauce to a bowl and toss the chicken thighs.
  • Add the chicken back to the cooling rack and place into the oven for another 15 minutes.

4 lb chicken drumsticks (about 12)
2 tbsp garlic powder
2 tbsp onion powder
2 tbsp chili powder
2 tbsp smoked paprika
1 tbsp ground ginger
2 tsp salt
1 tsp pepper
2 cups bbq sauce

Steps:

  • Preheat oven to 350 degrees.
  • Thoroughly pat chicken dry with a paper towel.
  • In a small bowl, mix together spices (all ingredients but chicken and bbq sauce)
  • Coat chicken in dry rub, let sit 30 minutes to overnight.
  • Add chicken to oven on a cooling rack sitting atop a baking sheet.
  • Let chicken bake about 40 minutes before adding bbq sauce- until skin is crispy and fat has started to render. Flip chicken drumsticks every 10 minutes to ensure it crisps evenly on all sides.
  • With a silicone brush, lightly brush chicken with bbq sauce, flipping its side each time you add another coat of sauce, about every 10 minutes until sauce is used up (about 30 minutes.)
  • When chicken is ready, turn on broiler and broil for two minutes on each side to give a little extra crunch to chicken skin.
  • Serve immediately.

2 cups cooked chicken (, shredded (rotisserie chicken works great!))
2 cups shredded cheddar cheese
1/4 cup fresh cilantro (, chopped)
1/4 cup red onion (, chopped)
1/2 cup barbecue sauce (, your favorite kind)
4-5 large flour tortillas
2 Tablespoons oil ((vegetable or canola oil))

Steps:

  • Add chicken, cheese, onion, cilantro and BBQ sauce to a mixing bowl and toss to combine. Add more BBQ sauce if needed, to taste.
  • Layer tortillas with a 1/2 cup of the mixture. Starting at that end, roll the tortilla up, folding in the sides like a burrito.
  • Heat a skillet over medium high-heat. Add enough oil to lightly coat the bottom of the pan (or spray generously with cooking spray) and once the oil is hot, place the wraps seam side down in the skillet. Cook, turning the wraps every minute or two, until they are golden and crispy on all sides and warmed through. Serve immediately.
