ASPARAGUS FRIES
Potatoes beware, asparagus are dressing up as French fries. Thanks to a beer batter and hot oil, the green stalks are golden and crispy. Lemon aioli makes great dipping sauce and there are three seasoning options depending on what mood you are in.

- For the seasoning: Stir desired seasoning combination in a large bowl until well mixed.; set aside.
- For the asparagus fries: Heat 2 inches of vegetable oil in a large heavy-bottomed saucepan over medium-high heat until a deep-frying thermometer registers 360 degrees F. Line a baking sheet with paper towels.
- Meanwhile, whisk together the mayonnaise, lemon juice and garlic in a small bowl until well combined; set aside.
- Whisk together the flour, cornstarch, baking powder and lemon zest in a medium bowl. Slowly pour in the lager and whisk until smooth. Dip half of the asparagus pieces into the batter, turning to coat completely and letting any excess drip off. Carefully add a few of the asparagus pieces at a time to the hot oil until all the battered pieces are added, then fry until golden brown on all sides and crisp-tender on the inside, 4 to 5 minutes. Transfer to the paper towels and sprinkle with salt and pepper. Repeat with the remaining asparagus pieces and batter, making sure to bring the oil back to 360 degrees F for the second batch.
- Toss the warm fries in the bowl with the seasoning combination and serve with the lemon aioli.
HOMEMADE CRISPY SEASONED FRENCH FRIES
My family loves French fries and with 4 children the bag fries from the store just weren't enough and became too expensive. So I tried batter - after all it makes chicken, shrimp, and onion rings crispy so why not potatoes. Now even my husband can't get enough of these French fries. They even stay crispy when you reheat in the microwave.

- Slice potatoes into French fries, and place into cold water so they won't turn brown while you prepare the oil.
- Heat oil in a large skillet over medium-high heat. While the oil is heating, sift the flour, garlic salt, onion salt, (regular) salt, and paprika into a large bowl. Gradually stir in enough water so that the mixture can be drizzled from a spoon.
- Dip potato slices into the batter one at a time, and place in the hot oil so they are not touching at first. The fries must be placed into the skillet one at a time, or they will clump together. Fry until golden brown and crispy. Remove and drain on paper towels.

CRISPY BAKED ASPARAGUS FRIES

- Preheat the oven to 425°F.
- Line a baking sheet with parchment paper and set aside.
- Fill a wide and deep pan or pot with 2 inches of water and bring to a boil.
- Add asparagus to the boiling water and cook for 5 minutes.
- Drain and pat dry the asparagus.
- In the meantime, place beaten egg in a shallow dish.
- In a separate shallow dish, combine panko, parmesan, paprika, salt and pepper.
- Dip each asparagus into the egg, then roll into the breadcrumb mixture; press the panko crumbs mixture with your fingers to make it stick to the asparagus.
- Transfer asparagus to the baking sheet. Spray on top with cooking spray.

BEST BAKED FRENCH FRIES
The healthiest way to make fries is to bake them. It saves money and you can't beat the taste. I have been playing around with different ways to bake fries for some time now, and I feel this is the best recipe thus far. Baking time may vary depending on how thick you cut the fries. Enjoy!

- Preheat oven to 425 degrees. Place a rack inside of a baking sheet. If you don't have a rack, just line a baking sheet with aluminum foil and spray lightly with cooking spray. Trim the tough end off of each asparagus spear, rinse under cool water and set aside.
- Using 3 separate plates, add the flour to one plate, the beaten egg to one plate and add the crushed crackers, Parmesan cheese and all spices including salt and pepper to the third plate. Toss the cracker crumb mixture until all ingredients are evenly combined.
- Blot the asparagus lightly to remove excess water, but leave them slightly damp. Dredge the asparagus in the flour, tapping to remove excess. (Being slightly damp will help the flour to adhere.) Dip the lightly floured asparagus into the egg, then finally into the cracker crumb mixture to coat completely. (You can coat the entire spear or leave the tips uncoated as we did.)
- Place the breaded asparagus onto the prepared baking sheet spaced at least 1" apart. Spritz each one lightly with cooking spray to help them crisp in the oven. Bake for 12-15 minutes or until they are golden brown and reach desired doneness. This will depend on the thickness of the asparagus. Enjoy!
