CRISPY ZUCCHINI FRIES (KETO + LOW CARB)
These Crispy Zucchini Fries are breaded with almond flour, parmesan and spices and baked until perfectly crispy! The perfect keto, low carb side dish! Only 3 net carbs per serving!

Steps:
- Prehat oven to 400 degrees
- Slice two zucchini into fry shapes (as shown in video)
- Pat the zucchini dry
- Set up your breading station by setting up two shallow bowls and a baking sheet with a silicone baking sheet or sprayed well with cooking spray.
- In the first bowl combine the egg and the ranch dressing, mix until completely combined
- In the second bowl combine the almond flour, spices and paremsan, mix well.
- Dredge the zucchini in the egg then the almond flour crust and place on the pan.
- Lightly spray the breaded zucchini fries with cooking spray to help crisp them.
- Bake 15 minutes, turn carefully with a fork and bake for 10 minutes more or until golden brown and crisp.
- Dip in ketchup or ranch dressing!

CRISPY ZUCCHINI BITES
Steps:
- Cut one zucchini into rounds that are between a 1/4 inch (.635 cm) to 1/8 of an inch (.3175 cm) thick, place them all in a single layer and season them with sea salt & black pepper
- Add 1/2 cup all-purpose flour into a large bowl, along with 1/2 tsp baking powder, 1 tsp garlic powder, 1/2 tsp onion powder and 1/2 tsp sweet smoked paprika, mix the dry ingredients together, then add in 1/2 cup cold water and whisk together until you get a creamy batter with no lumps
- Add 1 cup breadcrumbs into a separate bowl, season with a 1/4 tsp (1.5 grams) sea salt and mix together
- Heat a large fry pan with with medium heat and add in 1/2 cup sunflower oil
- While the oil is heating, coat the slices of zucchini, first into the batter and then into the breadcrumbs, making sure they are evenly coated
- After heating the oil for about 5 minutes, start adding the coated slices of zucchini into the pan, make sure they´re all in a single layer, cook in batches, after 75 to 90 seconds flip to cook the other side, after another 75 to 90 seconds remove them from the pan and transfer to a dish with paper towels
- While the zucchini bites are still hot, finely shred in some Manchego cheese over them
- Continue to cook your zucchini in the same method until done
- Once all the zucchini bites are ready, sprinkle them with freshly chopped parsley and serve at once, enjoy!

- Preheat oven to 400˚F. Lightly coat a baking sheet with olive oil or non-stick spray. Set aside.
- Use a box grater to grate the zucchini into a clean towel. Roll up the towel and twist to wring out the moisture.
- Grate the garlic using the small holes on the box grater.
- Add the shredded zucchini, garlic, egg, breadcrumbs, parmesan, chives, parsley, basil, oregano, salt and pepper to a medium bowl. Mix well to combine.
- Shape a tablespoon of the mixture into your hands, pat into small balls, and place on the baking sheet.
- Bake for 15-18 minutes in the preheated oven until golden. Serve warm with marinara sauce. Recipe makes about 16 bites.

- 1. Gather all ingredients and equipment.
- 2. Wash zucchini; remove stem and blossom ends, and any blemishes. Shred Asiago, and then zucchini, in a food processor or by hand on a grater.
- 3. Squeeze excess liquid from zucchini. Methods to do this: #1. Place shredded zucchini on a clean kitchen towel or several layers of paper towels. Twist, squeeze and wring until all excess liquid is extracted. Or... #2. Place a large wire mesh strainer or colander over a large bowl. Place 2 or 3 layers of paper towels in strainer. Add shredded zucchini. Cover with 2 or 3 additional paper towels. Press and squeeze until all dripping has ceased. Discard liquid.
- 4. Break egg into mixing bowl; whisk well. Add garlic salt, seasoned salt, and pepper; whisk well.
- 5. Add shredded zucchini and Asiago cheese. Mix with a spoon.
- 6. Add seasoned Panko bread crumbs; mix until well combined. (May be covered and refrigerated for a few hours until ready to form into patties, or make patties, cover and refrigerate until ready to fry.)
- 7. Form mixture into 8 equal patties. (I oil a piece of foil on a baking sheet to put place them on until ready to fry.)
- 8. Place a large skillet over medium/medium-high heat (a well-seasoned cast iron or non-stick skillet recommended). Add enough olive oil to generously cover the bottom of the pan.
- 9. When skillet is hot, add 1/2 the zucchini patties (fry in 2 batches to avoid crowding the patties). Fry until golden brown on the underside (about 3-5 minutes). Then flip and fry the second side until golden brown. Remove from skillet and repeat with remainder of patties.
- 10. Serve as soon as possible. Cover and refrigerate any leftovers. Reheat in skillet or oven.
