8 medium red potatoes (2 lb. total)
¼ cup olive oil
1 ½ teaspoon sea salt
1 teaspoon each: pepper and dried thyme
2 large garlic cloves (very finely minced)

Steps:

  • Place the potatoes in a large pot (so they are in a single layer) and cover them with an inch of water. Bring the pot to a boil then reduce the heat and simmer for 30 minutes, or until the potatoes are soft.
  • In a small bowl, mix together the olive oil, salt, pepper, thyme, and garlic.
  • Remove the potatoes from the pot and let them cool slightly. Turn your oven to broil with the rack near the top.
  • Smash the potatoes (see notes) then drizzle them with the oil and herbs. Broil for 10 minutes, or until the tops are crispy.

4 Tbsp. melted butter (or vegan buttery sticks)
4 cloves garlic (crushed)
1 Tbsp. thyme and rosemary (finely chopped)
½ tsp. salt (to taste)
¼ tsp. pepper (to taste)
Fresh parsley (optional)

Steps:

  • Preheat oven to 400 degrees.
  • Bring a large pot of water to a boil.
  • Add potatoes and cook for 30-35 minutes.
  • In a small bowl combine butter, or oil, garlic, herbs, salt, and pepper. Whisk to combine.
  • Once potatoes are fork tender, remove from pot and dry thoroughly.
  • Place potatoes on a parchment paper lined baking sheet. Smash each potato twice with a potato masher or large fork. (The thinner they are, the crispier they'll be!)
  • Drizzle each potato with equal amounts of the garlic herb sauce.
  • Bake in preheated oven for 20-25 minutes, or until potatoes are crispy.

13 russet potatoes, cut into 1-inch (2 1/2 cm) pieces
1 teaspoon baking soda
1 teaspoon salt
¼ cup olive oil
2 tablespoons garlic, minced
2 tablespoons fresh rosemary, or fresh thyme, finely chopped
1 teaspoon black pepper
salt, to taste
pepper, to taste
1 small handful fresh parsley leaf, minced to garnish

Steps:

  • Fill a large pot with water and boil. Add salt, baking soda, and potatoes, and stir.
  • Return to a boil, reduce to a simmer, and cook for 10 minutes after returning to a boil. A fork should easily pierce the potato pieces by the end. Drain and let sit one minute while moisture evaporates.
  • Combine olive oil, rosemary (or thyme), garlic, and a few grinds of black pepper in a small saucepan and heat over medium heat. Stir constantly until garlic just begins to turn golden, about 2-3 minutes.
  • Immediately strain oil through a fine-mesh strainer over the potatoes. Add salt and pepper to taste, and mix.
  • Shake the pot that the potatoes are in so that they slam against all sides of the pot, this will loosen the outer layer of the potatoes to form a mashed layer around each potato piece.
  • Preheat oven to 425°F (220°C).
  • Transfer potatoes to a large rimmed baking sheet and separate them, spreading them out evenly.
  • Transfer to oven and roast, without moving, for 30-35 minutes.
  • Using a thin, flexible metal spatula flip potatoes. Continue roasting until potatoes are deep brown and crisp all over, turning and shaking them a few times during cooking, 30 to 40 minutes longer.
  • Transfer potatoes to a large bowl and add the garlic-rosemary mixture (optional) and minced parsley. Toss to coat and season with more salt and pepper to taste. Serve immediately.

Large-flake sea salt
3 tablespoons extra-virgin olive oil
1/4 cup fresh flat-leaf parsley, coarsely chopped

Steps:

  • Heat grill to medium-high. Place potatoes in a large pot, and fill with cold water. Season with salt, and bring to a boil. Reduce heat, and simmer until potatoes are tender, 12 to 13 minutes. Drain, and let cool slightly. Halve potatoes, and toss with 1 tablespoon oil.

2 pounds baby potatoes, halved if large
zest of 1 lemon
1/3 cup grated parmesan cheese ((optional))
kosher salt and black pepper
6 slices thick cut bacon
1/4 cup fresh dill, roughly chopped
2 tablespoons chopped fresh chives
6 soft or hard boiled eggs, halved or quartered
1/3 cup extra virgin olive oil
4 cloves garlic, thinly sliced or smashed
1 teaspoon crushed red pepper flakes
1 cup fresh basil, chopped

Steps:

  • 1. Preheat the oven to 450 degrees F. 2. On a large baking sheet, toss together the olive oil, potatoes, lemon zest, parmesan, and a small pinch each of salt and pepper. Lay the bacon flat, draped over the potatoes. Transfer to the oven and roast for 20 minutes, toss and continue roasting another 20-25 minutes, or until golden and the bacon crisp. If the bacon begins getting too crisp before the potatoes are done, remove the bacon from the oven. 3. Meanwhile, make the garlic chili oil. Heat a medium skillet over medium heat. Add the olive oil, garlic, chili flakes, and a pinch of salt. Cook, stirring occasionally until the garlic is fragrant, 8-10 minutes. Stir in the basil, cook 30 seconds more. Remove from the heat and set aside. 4. Remove the potatoes and bacon from the oven and transfer to a serving plate, draining off any excess grease. Arrange the eggs over the potatoes.
