1/4 cup extra virgin olive oil
1/4 cup fresh lemon juice
1/4 cup cider vinegar
10 cloves garlic, peeled and halved
2 tablespoons fresh rosemary
2 tablespoons fresh thyme
2 tablespoons sliced serrano pepper
2 tablespoons kosher salt
1 tablespoon coarsely ground black pepper
1 4-pound piece of pork belly, skin-on
2 tablespoons unsalted butter
1/4 cup bourbon
1/4 cup packed brown sugar
2 tablespoons flat-leaf parsley, roughly chopped
1 tablespoon cider vinegar
1/2 teaspoon red pepper flakes
1/4 cup extra virgin olive oil
1 tablespoon lemon juice
2 tablespoons chives, chopped
Salt
freshly ground pepper

Steps:

  • In a blender, pulse marinade ingredients until roughly chopped. Transfer to a 1-gallon freezer bag and add pork belly and 1 cup water. Squeeze to remove air, then seal and refrigerate at least 12 hours.
  • When ready to cook, heat oven to 275 degrees. Place pork in a 13-by-9-inch baking dish with marinade, butter and water to cover. Cover with heavy-duty foil, crimping edges tightly. Braise in oven 5 1/2 hours; let rest in pan, covered, 2 hours.
  • Meanwhile, simmer bourbon in a small pan over medium heat until alcohol aroma fades. Stir in sugar, parsley, vinegar and pepper flakes. Cover and set aside.
  • Heat a grill. Carefully remove pork from pan and place in a grilling basket. Grill skin-side down over medium-low heat for 15 to 20 minutes, until skin is crisp and golden. Remove from heat and brush skin side with 1/4 of the bourbon glaze, then return to heat, skin-side up, for another 5 minutes. Remove pork from heat once more and brush meat side with 1/4 of the glaze, then return to heat, meat-side up, for another 5 minutes. Repeat with remaining glaze on both sides.
  • Dress a cutting board with half the olive oil, lemon juice and chives, and salt and pepper. Place pork skin side up on cutting board and let rest for 10 minutes. Sprinkle with remaining olive oil, lemon juice and chives, and salt and pepper. Cut into 1-by-4-inch pieces and serve.

3 oranges
1/3 cup fresh lime juice (from 4 limes) plus wedges for serving
4 boneless pork loin chops (1 pound total)
Coarse salt and pepper
3 tablespoons all-purpose flour
2 tablespoons olive oil
1 large red onion, thinly sliced
2 to 3 garlic cloves, minced
Sugar (optional)

Steps:

  • Finely grate zest from one orange into a small bowl, then squeeze 1 cup juice from oranges. Stir in lime juice. Set aside.
  • Season pork with salt and pepper, then press in flour to coat, shaking off excess. In a large skillet, heat 1 tablespoon oil over medium-high until shimmering. Add pork and cook until golden brown on both sides, 2 to 3 minutes per side. Transfer to a plate. Reduce heat to medium and add remaining tablespoon oil. Add onion, season with salt, and cook, scraping up browned bits, until crisp-tender, 2 minutes. Add garlic and cook 1 minute, stirring.
  • Add juices and zest and bring to a boil and cook until reduced by 1/4 about 3 minutes. Stir in 1 to 2 teaspoons sugar, if desired. Return pork to pan and simmer until sauce is slightly thickened, 1 to 2 minutes.

10 pounds skinned center-cut pork belly
1/2 cup garlic pepper seasoning
1/2 gallon Shaoxing rice wine
1 jumbo carrot, diced
1 celery stalk, diced
1 yellow onion, diced
1/2 cup kosher salt
1/2 cup sugar
2 tablespoons star anise, ground using a mortar and pestle
2 tablespoons dried cloves, ground using a mortar and pestle
2 tablespoons Sichuan peppercorns, ground using a mortar and pestle
1 tablespoon dried red chile pepper, ground using a mortar and pestle
6 1/2 cups canned sliced peaches (from about half of a 6-pound 6-ounce can)
2 cups hoisin sauce
2 cups sugar
Oil, for frying
1 bun
Kimchi, for serving

Steps:

  • For the braised pork belly: Sprinkle the pork belly with the garlic pepper seasoning, then refrigerate, 24 hours.
  • Preheat oven to 425 degrees F and preheat a large skillet over medium heat.
  • Sear both sides of the pork belly until charred (about 5 minutes per side). Immediately add the rice wine, carrot, celery, onion, salt, sugar, star anise, cloves, Sichuan peppercorns and red chile pepper and bring to a boil. Cover with aluminum foil and transfer to the oven. Let cook for 3 hours, then remove the pork belly from the liquid and allow to cool. Cut into 6-ounce portions.
  • For the peach hoisin sauce: Put the peaches in a blender and blend into a puree. Pour into a bowl, then add the hoisin sauce and sugar and whisk until well blended.
  • For the sandwich: Bring oil to 325 degrees F in a deep-fryer.
  • Thickly slice a 6-ounce portion of braised pork belly (it should come out to 5 to 6 slices per portion). Fry until golden brown, about 2 minutes. Toast the bun. Place the fried pork belly on the bottom bun. Drizzle with peach hoisin sauce and serve with kimchi on the side.

3 tbsp Chinese five-spice
3 cloves garlic, crushed
3 tbsp sriracha
5 tbsp soy sauce
1.5kg piece boneless pork belly, skin scored
3 tbsp runny honey
sea salt

Steps:

  • Mix together the five-spice, garlic, 1 tbsp of the sriracha and 3 tbsp of the soy sauce. Rub really well into the meat, but not the skin, and leave to marinate for a few hours or overnight.
  • When ready to cook, heat the oven to 180C/fan 160C/gas 4. Sit the pork skin-side up on a wire rack in a roasting tin and roast for 2 hours 30 minutes.
  • While the pork is roasting, put the remaining 2 tbsp sriracha, 2 tbsp soy sauce and honey in a small saucepan together and bubble for a few minutes until syrupy.
  • Remove the pork from the oven and cool for 15 minutes while you turn the oven up to 220C/fan 200C/gas 7. Then, using tongs and a sharp knife, cut the crackling away from the pork. Score the exposed fat and sit in another tin. Sprinkle sea salt over the crackling and put back on the wire rack. Roast the meat and crackling alongside each other for 30 minutes, brushing the pork fat with some of the glaze for the final 5 minutes, until the pork is really charred and sticky, and the crackling brown and really crisp. Smash the crackling into pieces and eat with thinly sliced or shredded pork and the remaining glaze.

This spicy Korean pork belly recipe is a knockout combination of tingling spices and rich pork belly. This easy recipe uses very few ingredients but is so satisfying -- the pork belly just melts in your mouth!

1.5-2 lbs pork belly
1/4 cup gochujang
1 Tbsp gochugaru
1 Tbsp agave or brown sugar
1 Tbsp mirin
1/4 cup light soy sauce
3 cloves garlic
2 Tbsp oil
3 green onions, sliced

Steps:

  • Take the cubes of pork belly and place in a pot. Cover completely with cold water.
  • Cover and bring to boil. After reaching full boil, remove cover and boil for 5 minutes.
  • Remove from stove and drain, rinsing immediately with cold water. Set aside to drain and cool completely
  • While the pork is boiling, assemble the sauce ingredients (gochujang through garlic).
  • Finely mince garlic. Add all sauce ingredients (gochujang, gochugaru, agave/sugar, mirin, soy sauce, and garlic) together and stir until combined.
  • After pork has cooled enough to handle, slice each cube vertically (from fat side through to lean) into 1/4 inch slices. If there is pink remaining that is OK! We will be cooking again.
  • Place a wok or pan over medium high heat. Once hot, add 2 Tbsp oil and wait until shimmering hot. Add the pork and cook until meat is just cooked through and no pink remains.
  • Add the sauce and stir to combine with meat. Cook 2 more minutes.
  • Remove from heat and add green onions.
  • Serve with rice and kimchi.

1/3 cup red wine vinegar

1/2 teaspoon five-spice powder
1/2 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground black pepper
5 garlic cloves
1 cup chicken stock
1 orange, juice of
1 lemon, juice of

1 lemon, zest of
sea salt
fresh ground black pepper

Steps:

  • For the pork belly: Score the skin of the pork belly in a criss-cross pattern with a sharp knife. Rub the sea salt into the pork skin and set aside for 30 minutes.
  • Preheat the oven to 220°C Wipe the salt off the pork skin with kitchen paper and dry well. Put the pork belly in a metal roasting pan, large enough to fit it and season with salt and pepper.
  • Roast for 30 minutes. Reduce temperature to 190C and roast for another 2 hours, brushing generously with Spicy Sauce every 1/2 hour. Carefully turn the pork over, brush generously with sauce and roast for another 20-30 minutes, or until the skin is crisp.
  • Remove the pork from the oven, cover loosely with foil and set aside to rest for 15 minutes. Slice the pork and drizzle with whatever Spicy Citrus Sauce is left, as desired.
  • Spicy Citrus Sauce: Put all the Sauce ingredients into a mini-processor and zap them together to finely chop garlic. Pour into a small saucepan and cook, stirring, over medium heat until the sugar has dissolved. Bring to the boil and simmer for about 10, or until syrupy. Season to taste.

A beautiful sweet and salty pork belly recipe that is perfect for a Sunday dinner

35 ounces pork belly ((1kg))
1/2 cup dry cider ((110ml))
4 tbsp honey
2 tbsp dark soy sauce
1 tbsp oyster sauce
1 red chilli - finely chopped
2 tbsp Demerara sugar
2 tbsp plain flour
Salt & pepper

Steps:

  • Pre-heat the oven to 160°c
  • Score the skin of the belly in a cross cross pattern (or get your butcher to do this for you, you need a super sharp knife), then pour boiling water over the top of the skin, this helps to open up the top layer so you can get the flavour in. Rub in a few pinches of salt and pepper into the skin. Pop into the oven in a small, lightly oiled, roasting tin for 2 hours (grab a glass of wine).
  • After 2 hours, take the belly out. Keeping it in the tin, pop a smaller roasting tray (or anything flat) on top and weigh down with some cans/bag of sugar/something heavy and pop in the fridge.
  • Mix the cider, honey, soy sauce sauce, oyster sauce, chilli and sugar together in a bowl, slowly add the flour.
  • After one hour, take the belly out of the fridge, cut into slices, and pour over half of the dressing. Make sure all the sides are covered. Pop back in the fridge.
  • After one more hour, pour the rest of the dressing over and pop in the oven for 30mins (still at 160°c).
  • Once the belly is ready, heat a glut of oil in a frying pan and pop each slice of belly, skin side down and fry for a couple of minutes to get the skin super crispy.
  • Let the pork belly rest before serving
