CHICKEN FRIED STEAK I

Breaded and deep fried beef cutlets are known as chicken fried steak because of the similarity in cooking method to fried chicken. This is a family recipe that we have used for years. Vegetable oil may be used in place of shortening for frying.

1 pound boneless beef top loin
2 cups shortening
1 egg, beaten
1 cup buttermilk
salt and pepper to taste
¼ teaspoon garlic powder
1 cup all-purpose flour
¼ cup all-purpose flour
1 quart milk
salt and pepper to taste

Steps:

  • Cut top loin crosswise into 4 (4 ounce) cutlets. Using a glancing motion, pound each cutlet thinly with a moistened mallet or the side of a cleaver.
  • In a large, heavy skillet, heat 1/2 inch shortening to 365 degrees F (185 degrees C).
  • While the shortening is heating, prepare cutlets. In a shallow bowl, beat together egg, buttermilk, salt and pepper. In another shallow dish, mix together garlic powder and 1cup flour. Dip cutlets in flour, turning to evenly coat both sides. Dip in egg mixture, coating both sides, then in flour mixture once again.
  • Place cutlets in heated shortening. Cook until golden brown, turning once. Transfer to a plate lined with paper towels. Repeat with remaining cutlets. Drain grease, reserving 1/2 cup.
  • Using the reserved drippings in the pan, prepare gravy over medium heat. Blend in 1/4 cup flour to form a paste. Gradually add milk to desired consistency, stirring constantly. For a thicker gravy add less milk; for a thinner gravy stir in more. Heat through, and season with salt and pepper to taste. Serve over chicken fried steak.

I am not a big red meat person, but these are really delicious. I got the recipe out of an old cookbook I found at a used bookstore for a dollar. I don't like a single other recipe in the book, but this recipe alone was more than worth the dollar I paid!

2 eggs
1/2-3/4 cup breadcrumbs
3 tablespoons parmesan cheese (add a little more if using stuff out of a can)
1 teaspoon salt
1/2 teaspoon pepper
1 lb boneless beef chuck, round (4 boneless beef chuck) or 4 sirloin steaks, cut 1/4 inch thick, trimmed and pounded to 1/8 inch thick (about 1 lb total weight)
2 tablespoons olive oil
2 tablespoons unsalted butter

Steps:

  • Combine bread crumbs, parmesan cheese, salt and pepper.
  • Dip each cutlet in beaten eggs, and then dip in crumb mixture. Make sure they are evenly coated.
  • Heat oil over medium heat.
  • Add butter and, when melted, increase heat to medium-high.
  • When oil-butter mixture is almost smoking, place cutlets in skillet, and fry until crisp and golden, about 2 to 3 minutes per side.
  • Drain them on paper towels and fry remaining cutlets in same manner.
  • You can keep them warm in the oven as you cook the rest.

2 (1 1/4 pound) fully trimmed pork tenderloins, cut into 8 pieces
salt and freshly ground black pepper to taste
2 tablespoons all-purpose flour, or as needed
2 eggs, beaten
3 cups panko bread crumbs
2 tablespoons butter
⅓ cup diced dill pickles
1 jalapeno pepper, seeded and minced
1 bunch green onions, chopped, green tops reserved
1 pinch cayenne pepper, or to taste
1 ½ tablespoons all-purpose flour
1 ½ cups cold milk, or more as needed
1 teaspoon Worcestershire sauce, or to taste
¼ teaspoon freshly ground black pepper, or more to taste
½ cup vegetable oil for frying
salt to taste

Steps:

  • Place pork between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound pork with the smooth side of a meat mallet to a thickness of 1/2 inch.
  • Place pork pieces on a plate and season both sides generously with salt and black pepper. Sprinkle 2 tablespoons of flour over pork pieces, lightly coating both sides. Pour eggs over pork, turning to coat.
  • Transfer pork pieces to a bowl filled with panko bread crumbs. Press bread crumbs firmly into the meat on both sides. Transfer breaded cutlets to a clean plate, cover with plastic and refrigerate for 15 minutes.
  • Melt butter in a skillet over medium heat. Stir in pickles, jalapeno pepper, and green onions; cook and stir until onions have softened, about 3 minutes.
  • Sprinkle in 1 1/2 tablespoon flour. Cook and stir for 3 minutes.
  • Slowly stir in 2 to 3 tablespoons cold milk, whisking constantly. Stir in remaining milk, Worcestershire sauce, and black pepper. Simmer on low for 5 minutes. Taste and adjust seasoning.
  • Heat half the vegetable oil in a large skillet over medium-high heat. Add 4 breaded pork cutlets and cook until pork is not longer pink inside, and the crust is well-browned, 4 to 5 minutes per side. Transfer to plate lined with paper towels. Sprinkle with salt. Repeat with remaining vegetable oil and pork cutlets.

Ditch the takeaway and whip up this Chinese flash-fried steak with a sweet gingery sauce and red peppers

350g thin-cut minute steak, very thinly sliced into strips
3 tbsp cornflour
2 tsp Chinese five-spice powder
100ml vegetable oil
1 red pepper, thinly sliced
1 red chilli, thinly sliced
4 spring onions, sliced, green and white parts separated
2 garlic cloves, crushed
thumb-sized piece ginger, cut into matchsticks
4 tbsp rice wine vinegar or white wine vinegar
1 tbsp soy sauce
2 tbsp sweet chilli sauce
2 tbsp tomato ketchup
cooked noodles, to serve (optional)
prawn crackers, to serve (optional)

Steps:

  • Put 350g thin-cut minute steak strips in a bowl and toss in 3 tbsp cornflour and 2 tsp Chinese five-spice powder.
  • Heat 100ml vegetable oil in a wok or large frying pan until hot, then add the beef and fry until golden and crisp.
  • Scoop out the beef and drain on kitchen paper. Pour away all but 1 tbsp oil.
  • Add 1 thinly sliced red pepper, ½ thinly sliced red chilli, sliced white ends of 4 spring onions, 2 crushed garlic cloves and thumb-sized piece ginger, cut into matchsticks, to the pan. Stir-fry for 3 mins to soften, but don't let the garlic and ginger burn.
  • Mix the 4 tbsp rice wine vinegar or white wine vinegar, 1 tbsp soy sauce, 2 tbsp sweet chilli sauce and 2 tbsp tomato ketchup in a jug with 2 tbsp water, then pour over the veg.
  • Bubble for 2 mins, then add the beef back to the pan and toss well to coat.
  • Serve the beef on noodles with prawn crackers, if you like, scattered with the remaining ½ sliced red chilli and sliced green parts of the spring onions.

2 pork cutlets (tenderized)
1 tsp paprika
1 whole egg
2 tsp water
1/2 cup flour
1 1/2 cups panko bread crumbs
salt and pepper

Steps:

  • Start by seasoning the pork cutlets with paprika, salt, and pepper on both sides. Lightly pound the cutlets with the smooth side of a meat tenderizer to thin them out.
  • Coat each side of a cutlet with flour and then the egg wash and then the panko bread crumbs.
  • Preheat the air fryer to 375. Put one cutlet in the air fryer and spray with cooking oil.
  • Set the timer to 12 minutes. Cook for 6 minutes and turn. Spray the other side with cooking oil and cook for another 6 minutes.

This is my cutlet recipe. I add with a little grated coconut added for a twist sometimes. I like to serve these with a tomato sauce or a dipping sauce, as an accompaniment to Pulao and raita or even dal and rice. Not very sure of the yield as it varies depending on the size of my cutlets. I do not like monotony so the the sizes vary ;)

Number Of Ingredients 20

1/2 kg beef mince (as fine as you can get or you can give it one round in a blender)
2 tablespoons soya sauce
2 tablespoons lime juice or 2 tablespoons vinegar (I use vinegar mostly)
salt (take into consideration the amount of salt that is in the soya sauce you use)
3/4 inch cube gingerroot, minced fine (I sometimes use even more)
6 -8 cloves garlic, minced fine
1 teaspoon cumin seed, roasted and ground
1 teaspoon coriander seed, roasted and ground (I make my own cumin and coriander powders this way and keep them in airtight bottles for upto a week)
1 teaspoon cayenne powder
1/4 teaspoon turmeric powder
1/2 teaspoon garam masala powder
3 onions, minced fine
12 mint leaves, chopped
1/2 bunch cilantro, chopped
2 green chilies (deseeded and chopped fine)
1 cup desiccated coconut or 1 cup unsweetened coconut (if you are using dessicated coconut or unsweetened coconut instead of the fresh then soak in 1/2 cup) (optional)
black pepper
1 egg, beaten
semolina or breadcrumbs, to coat
oil, for shallow frying

Steps:

  • Mix all upto the egg ingredients well.
  • (You can blend them together too to a coarse paste for a variation) Form into 16-18 cutlets that are of a diameter of around 2 inches when flattened or make them 3 inches across so get around 11-12.
  • Coat with the bread crumbs or semolina (I prefer the semolina).
  • Heat a little oil in a pan (maybe a tblsp per round) to a medium high and shallow fry on low for around 5-6 minutes on each side (as many as the pan can take per round) or till they are cooked to the level you like.
  • Add a little more oil if you require.
  • I normally use non-stick pans and so need a minimum of oil.
  • (1 litre lasts over a month and a half in my household).

This steak dinner idea takes classic Country Fried Steak and turns cook time upside down with an air fryer. This crispy, cracker-crusted beef cutlet is served with mushrooms and Swiss cheese.

4 Certified Angus Beef ® top round steaks, 4 ounces each, pounded to 1/2- inch thick
1 tablespoon butter
1 small yellow onion, sliced
8 ounces sliced cremini mushrooms
2 teaspoons kosher salt, divided
1 teaspoon black pepper, divided
1/2 cup all-purpose flour
1/4 cup milk
1 egg, beaten
2 cups finely crushed club crackers
1 bottle Spray oil
8 slices Swiss cheese, 1/4 inch thick

Steps:

  • Melt butter in a skillet over medium heat. Stir in onions, sauté 5 minutes. Stir in mushrooms and 1/2-teaspoon salt; sauté 5 more minutes. Remove from heat.
  • Season steaks with 1-teaspoon salt and 1/2-teaspoon pepper.
  • Arrange three bowls: 1) flour seasoned with remaining 1/2-teaspoon salt and remaining 1/2-teaspoon pepper, 2) milk and egg, 3) cracker crumbs. Dredge beef in seasoned flour, then egg wash, finally coat with cracker crumbs. Spray each cutlet evenly with spray oil.
  • Set air fryer to 400°F. Working in two batches, place two breaded cutlets in air fryer; fry 6 minutes. Flip cutlets over; top each with 1/4 of the mushroom and onion mixture, top with two slices of Swiss cheese. Air fry 6 more minutes. Repeat with remaining 2 cutlets and ingredients.
