The secret to fluffy, soft and moist French toast that has a deliciously crispy exterior is to use high-heat oil like such as sunflower or avocado oil when you pan-fry your French Toast! Try it once, and you'll never go back to butter

4 thick slices of bread
2 large eggs
1 Tbsp milk or dairy-free milk substitute
2 tsps sugar or other sweetener
1 tsp vanilla extract
1-2 tbsp high heat oil (sunflower, avocado)

Steps:

  • In a wide bowl, whisk the eggs, milk, sugar and vanilla extract together until smooth and the egg whites are completely incorporated.
  • Toast the bread to golden brown.
  • Soak the toasted bread, 2 slices at a time, in the egg mixture about one minute per side or more for very thick bread.
  • Place a coating of oil in a large skillet and heat over a high flame.
  • Test the heat by dropping a dab of the egg mixture into the pan. If it sizzles immediately, it's ready. Turn the flame down to medium-high.
  • Pull the bread from the liquid and allow the excess to drip off. Drop the bread into the pan and cook until golden brown on both sides.
  • If cooking in batches, place cooked slices, in a single layer on a wire rack and keep warm in a 300°F oven.
  • Top with my DIY bourbon maple syrup or homemade spicy maple syrup.

Steps:

  • In a shallow dish, combine the egg substitute, milk, orange juice, vanilla and nutmeg. Add bread; soak for 5 minutes, turning once. Coat both sides of each slice with cornflake crumbs. , Place in a 15x10x1-in. baking pan coated with cooking spray. Bake at 425° for 10 minutes; turn. Bake 5-8 minutes longer or until golden brown. Freeze option: Remove baked French toast from pan to wire racks to cool. Freeze between layers of waxed paper in a resealable plastic freezer bag. To use, place frozen French toast on a greased baking sheet. Bake in a preheated 425° oven for 5-7 minutes or until heated through. Or, microwave each French toast on high for 30-60 seconds or until heated through.

1/3 cup flour

10 slices Texas toast thick bread
6 tablespoons butter
1 cup powdered sugar
16 ounces maple syrup

Steps:

  • Mix together the flour, sugar, vanilla, salt and cinnamon.
  • Mix in the eggs and milk to the flour, sugar, vanilla, salt and cinnamon mixture.
  • Heat a deep, large skillet, fill up with Canola Oil just enough to cover the Texas toast thick bread.
  • If the oil smokes, your pan is too hot; turn down the heat.

  • Let the oil drip off, as much as possible.

1 loaf day-old challah bread, crust removed, cut into 1-inch cubes
1/2 cup sugar
1/4 cup apple cider, plus more for syrup if needed
Juice of 1/2 lemon
3 Gala apples, peeled, cored and diced
3 medium Granny Smith apples, peeled, cored and diced
2 tablespoons apple brandy, such as Calvados, optional
1 stick (8 tablespoons) butter, softened
1/4 teaspoon fine salt
1/4 cup sugar
1 cup all-purpose flour
1/2 cup rolled oats
1/2 teaspoon cinnamon
Softened butter for greasing the baking dish
3 large eggs
2 large egg yolks
1 teaspoon vanilla
1/2 teaspoon cinnamon
2 1/2 cups half-and-half
4 tablespoons cold butter, cut into pieces

Steps:

  • For the French toast and caramelized apples: Preheat the oven to 275 degrees F.
  • Spread the bread cubes on a large baking sheet and bake until lightly toasted, about 15 minutes. Let cool. Adjust the oven to 350 degrees F.
  • Combine the sugar, apple cider and lemon juice in a large, high-sided saute pan and bring to a simmer over medium heat. Stir in the Gala and Granny Smith apples and cook, stirring occasionally, until softened and caramelized, about 15 minutes. Add the apple brandy if using; cook a few minutes longer. Using a slotted spoon, transfer the apples to a bowl (you don't want the apples to be too wet) and let cool. Reserve the apple cooking liquid for serving.
  • For the streusel: Mix together the butter, salt and sugar in a large bowl until smooth. Add the flour, oats and cinnamon and mix until well combined. Refrigerate for 15 minutes. Squeeze the mixture in your hands to form larger and smaller clumps.
  • For the casserole: Butter a 9-by-13-inch baking dish with some softened butter. Whisk the eggs, yolks, vanilla and cinnamon in a large bowl until smooth. Whisk in the half-and-half, then fold in the cooled apples. Add the bread and stir to coat, pressing down to make sure bread is totally submerged. Let sit for 10 minutes.
  • Transfer the apple-bread mixture to the buttered baking dish, pressing down to make sure the top is an even layer. Scatter the streusel evenly over the top. Cover with foil and bake for 30 minutes. Uncover and continue baking until puffed and lightly golden brown, another 30 minutes or so. Remove from the oven and let cool slightly.
  • Reheat the reserved apple cooking liquid. (If very thin, simmer briefly over medium heat until reduced to a syrup; if there isn't much, add some apple cider and simmer briefly.) Turn the heat to low and whisk in the cold butter, piece by piece, until emulsified. Serve with the French toast.

  • Prehead oven to 425 degrees F & spray a 15"x10" glass baking dish inside with cooking spray.
