Baking the cod on a wire rack allows the fish to get crisp on all sides.

2 cups toasted-rice cereal, such as Rice Chex, crushed
1/4 cup extra-virgin olive oil
1/4 cup chopped fresh flat-leaf parsley
2 teaspoons finely grated lemon zest (from 2 lemons)
3/4 teaspoon coarse salt
4 cod fillets (4 ounces each), skinned
3 ounces baby spinach (4 cups)

Steps:

  • Preheat oven to 400 degrees. Combine rice cereal, oil, parsley, zest, and salt.
  • Set a wire rack on a rimmed baking sheet. Press fish in crumb mixture, turning to coat. Transfer to wire rack. Bake until golden brown and cooked through, 14 to 16 minutes. Divide fish and spinach among 4 plates.

This codfish recipe appeals to kids. Fillets are given a crispy coating of panko breadcrumbs, then sauteed and drizzled with a lemon butter sauce.

For the Fish
1 tablespoon butter
2 tablespoons olive oil
2 egg whites
2 cups panko bread crumbs (Japanese bread crumbs)
1 1/2 pounds codfish fillets
Dash kosher salt
Dash freshly ground black pepper
For Lemon Butter Sauce
1/3 cup lemon juice (fresh)
2 tablespoons white wine vinegar
2 tablespoons butter
1/2 teaspoon salt (kosher)

Steps:

  • Gather the ingredients.
  • In a large nonstick frying pan , heat butter and olive oil over medium heat.
  • Set up a breading station with two shallow dishes. Beat the egg whites and set them in one dish. Spread out panko breadcrumbs in a thin layer in another shallow dish.
  • Dip the cod first in the egg whites, then in the panko, pressing lightly to help the breadcrumbs adhere. Season with salt and pepper.
  • Sauté the coated fillets in the butter-olive oil mixture until golden, about 3 minutes.
  • Flip and cook on the other side until cooked through. The fish will be opaque and flake easily with a fork. If using an instant-read or meat thermometer, the internal temperature should reach 145 F.
  • In a small saucepan, heat the lemon juice and vinegar over medium-low heat until the mixture is reduced by half, about 6 minutes.
  • Stir in butter and salt.
  • Drizzle sauce lightly over the crispy codfish fillets. Serve and enjoy!

Best baked cod recipe out there! Prepared Mediterranean style with a few spices and a mixture of lemon juice, olive oil and lots of garlic. Bakes in 15 mins!

1.5 lb Cod fillet pieces, (4-6 pieces)
1/4 cup chopped fresh parsley leaves
5 tbsp fresh lemon juice
5 tbsp extra virgin olive oil
2 tbsp melted butter
5 garlic cloves, (minced)
1/3 cup all-purpose flour
1 tsp ground coriander
3/4 tsp sweet Spanish paprika
3/4 tsp ground cumin
3/4 tsp salt
1/2 tsp black pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Mix together the lemon juice, olive oil, and melted butter in a shallow bowl (do not add the garlic yet). Set aside.
  • In another shallow bowl, mix the all-purpose flour, spices, salt and pepper. Set next to the lemon sauce.
  • Pat the fish dry. Dip the fish in the lemon sauce then dip it in the flour mixture. Shake off excess flour. Reserve the lemon sauce for later.
  • Heat 2 tbsp olive oil in a cast iron skillet (or an oven-safe pan) over medium-high heat (watch the oil to be sure it is shimmering but not smoking). Add the fish and sear on each side to give it some color, but do not fully cook (about 2 minutes on each side). Remove the skillet from heat.
  • To the remaining lemon sauce, add the minced garlic and mix. Drizzle all over the fish fillets.
  • Bake in the heated oven until the fish flakes easily with a fork (10 minutes should do it, but begin checking earlier). Remove from the heat and sprinkle chopped parsley. Serve immediately.

It's a Friday night fish fry - with a twist. This 30 minute cod is baked, not fried, but still has a satisfyingly crispy, crunchy crust. Try baked white potatoes or sweet potatoes, cooked in the microwave to save time, on the side.

2 tablespoons unsalted butter
1 garlic clove, minced
1/2 cup panko breadcrumbs or 1/2 cup regular breadcrumbs
2 tablespoons minced fresh parsley
1 teaspoon finely grated lemon zest
1 tablespoon Dijon mustard
1 tablespoon reduced-fat mayonnaise
4 (6 ounce) skinless cod fish fillets (1 1/2-inch thick)
salt, to taste

Steps:

  • Preheat oven to 350°F In a small skillet over medium-low heat, melt butter. Add garlic and cook, stirring, until fragrant, 30 seconds. Add bread crumbs, stir to coat with butter, then cook, stirring frequently, until light golden brown, about 5 minutes. Remove from heat and stir in parsley and lemon zest. Let cool. Combine mustard and mayonnaise in a small bowl.
  • Rinse fish and pat dry. Sprinkle each fillet lightly with salt, then place on a rimmed, foil-lined baking sheet and brush with mustard mixture. Press 1/4 of crumbs onto each fillet.
  • Transfer baking sheet to oen and bake until fish is no longer translucent (cut to test) and flakes easily, 10 to 15 minutes. If crumbs aren't sufficiently browned, broil fish 2 inches from heating element until crumbs are crisp and dark golden brown (watching carefully to prevent burning), 2 minutes longer. Serve immediately.

1/4 cup all-purpose flour

  • If fish fillets are large, cut into serving pieces.
  • Mix butter and lemon juice.
  • In another bowl, mix flour, salt and white pepper.
