2 large carrots, shredded
1 large yellow bell pepper, seeded and cut into strips
1 large red bell pepper, seeded and cut into strips
¼ red onion, minced
2 teaspoons lemon zest
1 large lemon, juiced

Steps:

  • Toss cucumbers, carrots, yellow bell pepper, red bell pepper, and red onion together in a bowl.
  • Scatter lemon zest over the cucumber mixture. Squeeze lemon juice over the salad and toss to coat.
  • Chill completely in refrigerator to serve.

1 teaspoon coarse salt
1/2 teaspoon sugar
1 small red onion, peeled and cut into thin rounds
1 cup red radish, thinly sliced
1 -3 tablespoon fresh dill, chopped
salt and pepper
2/3 cup white wine vinegar
3 tablespoons sugar
2 cloves garlic, finely chopped
1 tablespoon water
3 tablespoons olive oil

Steps:

  • Put cucumber, sliced onion, radishes and dill together and toss gently.
  • In a small bowl, whisk together the ingredients for the dressing.
  • Pour over the cucumbers and mix well.
  • Season with salt and pepper.
  • Let stand for at least 30 minutes.
  • Serve at room temperature or slightly chilled.

1/2 medium red onion, thinly sliced
2 green onions, sliced
1/2 serrano or jalapeno pepper, seeded and thinly sliced, optional
MARINADE:
1/3 cup sugar
1/3 cup rice vinegar
1/3 cup water
1 teaspoon each salt, garlic powder and pepper
1 teaspoon sesame oil
1 teaspoon reduced-sodium soy sauce
1 small garlic clove, minced
1/2 teaspoon minced fresh gingerroot
1/4 teaspoon cayenne pepper, optional
Optional toppings: minced fresh cilantro, chopped peanuts and additional sliced green onion

Steps:

  • In a large bowl, combine the first six ingredients. In a small bowl, mix marinade ingredients, stirring to dissolve sugar. Pour over vegetables; toss to combine. Refrigerate, covered, 30 minutes or overnight., Serve with a slotted spoon. Top as desired.
