AUTHENTIC SWEDISH PANCAKES
This is an authentic Swedish pancake recipe that was taught to my father by his mother, who was born in Sweden. My father then passed it to me. Kids love them. Never any leftovers when I make them. To serve, you can spoon melted butter over pancakes and sprinkle with sugar, or serve with lingonberry sauce. You can also use the batter to make crepes.

Steps:
- Beat eggs in a bowl with an electric mixer until thick and lemon-colored, 3 to 5 minutes. Stir in milk.
- Sift flour, sugar, and salt together in a bowl. Add to egg mixture; mix until batter is smooth.
- Grease a griddle with butter; heat over medium heat. Drop tablespoonfuls of batter on the griddle; spread to make thin pancakes. Cook until light brown on bottom, 1 to 2 minutes. Flip and continue cooking until second side is light brown, 1 to 2 minutes more. Repeat with remaining batter.

FRENCH-STYLE PANCAKES/ CREPES WITH VARIATIONS
Delicious, light as a feather French-style pancakes/crepes! For variation, try adding vanilla, rose water, orange blossom water, finely grated lemon, orange or mandarin rind, sliced bananas, blueberries or any type of liqueur (Anisette or Brandy is particularly French and tasty) to the batter. Fill with my recipe #480674 then roll them up crepe style. Awesome! Or, make the pancakes small and top each pancake with a heaped teaspoon of creme fraiche and a teaspoon of rose petal jam: romantic and lovely! At the table, pass around quartered lemons, powdered sugar, warmed maple syrup or my homemade lavender honey (see recipe #383209), and whipped cream accompanied with bowls of fresh berries and edible fresh flowers such as rose petals or lavender flowers. And, pancakes/ crepes are wonderful drizzled with flavored syrups (especially orange blossom or rose water syrup) with a little lemon juice added. I hope you enjoy! Steps:
- Mix the flour, baking powder, salt and sugar in a bowl.
- In a separate bowl, vigorously beat the egg yolk with the cream, melted butter and milk. Add cream mixture to the flour mixture and whisk to obtain a smooth batter. Add any optional ingredients (see variations above) at this stage, whisking to combine.
- Let stand for 1 hour at room temperature. (Meanwhile, let egg whites come to room temperature).
- Beat the egg whites until they form soft peaks and gently fold into the batter.
- Heat frying pan or griddle to medium heat. Add butter or shortening (I use Crisco butter flavor shortening) to coat well.
- Spoon equal amounts of batter onto griddle and cook until bubbles come to surface and edges look almost done.
- Flip and cook for a few seconds more, until golden.
- SERVING SUGGESTIONS: Serve with softened butter and warmed maple syrup, flavored syrup infusions, lavender honey, lemon wedges, fresh berries, and/or a dusting of powdered sugar. Or (my favorite!), fill pancakes with a mixture of 1 3/4 cups finely chopped walnuts, 1/2 cup sugar, and 1 1/2 teaspoons rose water, then roll up crepe style--delicious! Or, make pancakes small and top each with a dollop of creme fraiche and a teaspoonful of rose petal jam.
- Garnish with rose petals, orange blossoms, or fresh lavender flowers.
- TIPS:Make sure the frying pan is well greased when making pancakes. Wipe around the pan with a small wad of paper towel soaked in fat (I use butter flavored Crisco) between making each pancake.
CREPE MEETS FUNNEL CAKE-STYLE PANCAKES
I'm not a pancake lover, but I make an exception for these crackly pancakes that my mom makes on special occasions (they remind me of crepes and funnel cakes combined). My favorite add-ins are tart gooseberries or currants, but blueberries work well too.

Steps:
- Add all ingredients except berries and sugar to a blender and blend until combined. Let batter rest for at least 5 minutes.
- Heat 1/4 inch canola oil in a large skillet over medium heat (may need to be lowered as you're cooking if they pancakes start to brown too quickly).
- When oil is hot, pour batter in to create small (3-4 inch) pancakes. Wait about half a minute, then cover the surface with a layer of berries.
- Pour a teaspoon or so of extra batter on top of berries (to hold them in place while flipping).
- When the bottom and edges are golden brown and puffy, flip the pancakes carefully and cook another minute or two.
- Sprinkle with sugar and serve warm.

CREPE-STYLE PANCAKES WITH STRAWBERRIES & SOUR CREAM

- Heat the milk on the stove or in the microwave so that it's lukewarm (about 105°F/41°C. An instant read thermometer comes in handy here.) Pour the warm milk into a small, heat-safe bowl and immediately sprinkle the yeast over the warm milk. Let the milk and yeast sit for 5 minutes while you move on to the next step.
- Check your milk and yeast. After resting for 5 minutes, the yeast should appear foamy on top of the milk. If the yeast does appear foamy, continue with the recipe. If it does not appear foamy, see my tips for troubleshooting yeast in the Notes section below.
- Add the milk and yeast plus 2 Tablespoons of vegetable oil to the flour mixture. Stir gently until combined.
