CREOLE CHICKEN RECIPE
Spicy seasoned chicken thighs are cooked in Spanish rice. This is a good meal for a busy evening. After seasoning chicken and browning, it is left to cook while you tend to other preparations. This can be very spicy.

Steps:
- Season chicken thighs with Creole seasoning.
- Melt butter in a skillet over medium heat; cook chicken in the melted butter until browned, 3 to 4 minutes per side. Transfer chicken to a plate. Add tomatoes with green chile peppers, water, tomato sauce, and Spanish-style rice mix to the same skillet; stir well. Return chicken to the rice mixture and bring to a boil. Reduce heat, cover skillet, and simmer until chicken is no longer pink in the center and rice is tender, about 40 minutes. Serve on a platter with chicken atop the rice.

- In a large skillet over medium heat, saute the celery, green pepper and onion in oil until tender; Add garlic; cook 1 minute longer. Add flour; cook and stir for 5 minutes or until browned. , Stir in broth. Bring to a boil; cook and stir for 2 minutes. Add remaining ingredients except rice. Return to a boil. Reduce heat; cover and simmer for 10 minutes or until heated through. Serve with rice.

- In a small nonstick skillet coated with cooking spray, cook chicken in oil over medium heat for 5-6 minutes on each side or until a thermometer reads 170°. Steps:
- In a skillet over medium heat, brown the ground meat.
- Sprinkle in the seasonings, use 6 oz.
- water to dissolve the bouillon cubes in the microwave, add the cumin slowly and taste.
- Meat should be slightly wet; keep it warm over very low heat.
- Preheat taco shells in oven at 200 degrees F for about two minutes.
- Fill each shell half full of meat, dribble about 1 to 2 tsp.
- salsa over the meat, sprinkle lightly with the grated bell pepper, add the lettuce and cheese, and top with the tomato.
- Get out the napkins cause its gonna get messy, and enjoy!

- Make vinaigrette (double if you’re making Thursday’s dinner) by whisking together paprika, red wine vinegar, sugar, and oil. Season to taste with salt and pepper and set aside.
- Heat a skillet over medium-high heat. Add cooking oil and then garlic, jalapenos, onions, and a bit of salt to heated oil. Saute until softened, ~3 minutes.
- Next add in ground meat and break up with a wooden spoon. Saute until broken up into smaller pieces, 4 to 6 minutes. Add in crushed tomatoes and tomato paste and cook for another 3 to 5 minutes until meat is cooked through. Season to taste with salt, pepper and any of the spices.
- Cube avocado and slice lime into wedges. Toss chopped iceberg lettuce and avocado with vinaigrette for salad (reserve half for Thursday if you doubled). Spread out your taco bar: taco shells, meat filling, lettuce, cheese, sour cream, lime wedges, and salsa and let everyone assemble their own tacos and enjoy with salad. You’ll be using sour cream and salsa later on in the week, so make sure to not eat it all!

- Flat Bread. Cristina Ferrare often uses her evo grill on her Hallmark Home and Family show. She ahs showcased its ability to make a mean pizza more than once.
- Kabobs. Food served on a stick is just more fun. I can’t tell you why, its just a universal truth ( see the fair menu for verification). I love how I can load up my EVO with a variety of fun food on a stick and serve directly off of it.
- Tacos. Almost everyone loves some variety of the taco food group. And being able to make or heat the tortillas right on the EVO alongside the meat and vegetables your searing?
- Grilled Cheese. Maybe you consider grilled cheese a bit pedestrian. In that case you might move on the number 9. But perhaps you should pause. Have you explored the gourmet possibilities of this classic sandwich?
- Paella. When Chef Katie Button came and made Paella for me and fifty other lucky people I was an instant fan. I went home and immediately bought a paella pan fr my EVO.
- Stir Fry. I just love all types of Asian cuisine. So of course a stir fry is on my top ten things to cook on EVO. I make Kung Pao Chicken, Fried rice, Pad Thai noodles, Szechuan Eggplant, Sesame Chicken, Caramel Pork, and so much more.
