SHEET PAN HASH BROWNS
These easy hash browns are perfect for breakfast or served as a side dish for dinner. This is a basic recipe, but feel free to include such add-ins as different cheeses, eggs, bell pepper, chives, or a variety of herbs and spices to change up the flavor. And as a bonus, you can cook your bacon in the oven at the same time, just not as long.

- Preheat the oven to 400 degrees F (200 degrees C). Line a large baking sheet with foil and spray generously with cooking spray.
- Add potatoes and onion to a large bowl and stir well. Drizzle oil over the potatoes and stir until the potatoes are coated. Gradually sprinkle garlic powder, paprika, salt, and pepper over the potatoes, tossing to combine. Distribute potatoes evenly on the prepared baking sheet, but don't pack down.
- Bake in the preheated oven until hash browns are golden brown and crispy, 35 to 40 minutes.

A SIDE OF HASH BROWN CASSEROLE, PLEASE!
Steps:
- Preheat oven to 350°F. Lightly coat a 9 x 13-inch casserole dish with cooking spray.
- In a large bowl, combine the hash browns, 1/2 cup of the melted butter, the soup, sour cream, onion, cheese, salt, and pepper. Spoon the mixture into the prepared casserole dish.
- In a medium saucepan set over medium heat, sauté the cornflake crumbs in the remaining 1/4 cup melted butter until the cornflakes start to brown, about 4 minutes. Sprinkle the cornflakes over the top of the casserole. Cover the casserole with foil and bake for 40 minutes or until the top is golden brown and the edges are bubbling. Serve immediately.
- notes
- If you want to freeze your casserole, don't include the cornflake topping. Save it to add right before baking so that it is extra crunchy!
- This dish can be made vegetarian by using cream of mushroom soup instead of chicken soup. Now, isn't that easy?

- Peel potatoes and cut into 1/2-inch cubes (there should be about 3 cups). In a large saucepan of boiling salted water parboil potatoes 5 minutes. Drain potatoes and cool. In a skillet heat oil and 1 tablespoon butter over moderately high heat until hot but not smoking and sauté onions, stirring occasionally, until soft and caramelized. Cool onions and in a bowl combine with potatoes, stirring vigorously to partially break up potatoes. Hash browns may be prepared up to this point 1 day ahead and chilled, covered.
- Preheat oven to 350°F.
- In a 10-inch non-stick skillet heat remaining 2 tablespoons butter over moderate heat until foam subsides and cook potato mixture, packing it evenly in skillet with back of spatula to form a cake, until underside is golden, about 10 minutes. Invert a plate or baking sheet without sides over skillet and carefully invert potato cake onto it. Carefully slide potato cake back into skillet and brown other side. On baking sheet bake potato cake 10 minutes.
- Sprinkle hash browns with pepper and salt to taste and cut into wedges.
CAJUN STYLE OVEN HASH BROWNS

- Heat oven to 400F degrees.
- Spread the potatoes single layer on a baking sheet.
- Sprinkle with the paprika, chili, cajun spice and then drizzle with the olive oil.
- Mix the potatoes with a spatula to coat all sides evenly.
- Season with salt.
- Bake potatoes until crisp, turning with a spatula every 10 minutes, Apprx 40 minutes.
