Steps:
- Melt butter in 5 to 6 quart dutch oven over medium-high heat.
- Cook onions, celery, bell pepper, garlic and chicken in butter 7 to 9 minutes, stirring frequently, until onion is softened and chicken is no longer pink in the center.
- Stir in flour.
- Cook 5 to 6 minutes, stirring constantly, until flour is light brown.
- Stir in remaining ingredients except rice and water.
- Heat to boiling; reduce heat to medium low.
- Cover and cook 25 to 30 minutes, stirring occasionally, until chicken is tender.
- Meanwhile, cook rice in water as directed on package; stir cooked rice into soup.
- Remove bay leaves.

- Melt butter in a large pot over medium heat. Saute green bell pepper, onions, and garlic until tender. Stir in vegetable juice, clam juice, and water. Season with thyme, basil, red pepper, bay leaf, and salt. Bring to a boil, and stir in rice. Reduce heat, and cover. Simmer 15 minutes, until rice is tender.
- Stir in shrimp, and cook 5 minutes, or until shrimp are opaque. Remove the bay leaf, and season with hot sauce.

- Slice the bread in thick slices and place on the rack in the oven. Heat oven to 325 degrees F (165 degrees C). Check bread periodically throughout following steps and remove from oven when golden.
- In a saucepan over medium heat, melt butter. Cook onion in butter, stirring, until golden, 15 minutes. Sprinkle flour, pepper, garlic powder and Creole seasoning over onion and continue to cook until flour is golden brown as well. Stir in spaghetti sauce and soy sauce, cook 1 minute more. Stir in beef broth and simmer 10 minutes, or until onions reach desired consistency.
- Place slices of bread in ovenproof bowls and top with Swiss cheese. Ladle soup into bowls and top with Parmesan. Place in oven until Parmesan melts. Serve at once.

SHRIMP CREOLE SOUP FOR CROCK POT
This is an easy, healthy, flavorful and spicy soup. It is an impressive first course for company if you use large or jumbo shrimp. Alternatively, you can use tiny shrimp and the cost will be much lower but the taste will be the same. It is a regular main dish for my family (using smaller shrimp) and for my annual 'soup party'. I found this recipe on southernfood.about.com and have improved upon it (in my opinion) since first posting by adding vinegar, red wine and Worcestershire sauce. These ingredients are noted as "optional'.

CREOLE SOUP
This recipe has been in my soup recipe cookbook for years so I have no idea where it came from but it is quick and easy and it is one that you can have the ingredients on hand and make up right away. It can be made as spicy as you want or not spicy at all. Enjoy.

Steps:
- 1. In a 4 quart pot cook bacon until crisp. Remove and save.
- 2. In the bacon fat saute the vegetables until crisp tender. I drain the fat or blot with a paper towel.
- 3. Stir in soup, tomatoes (breaking them up if needed), water, bay leaf and hot pepper sauce.
- 4. Bring just to a boil, reduce heat, and simmer uncovered for 10 minutes. Add bacon. Discard bay leaf and serve passing more hot sauce if needed.
- 5. I have also added a can of green chilies to this soup and some sausage cut into slices or diced is a good addition.
