1/2 lb. uncooked deveined large shrimp with shells and tails left on
2 cans (14.5 oz. each) fat-free reduced-sodium chicken broth
1/2 cup water
1 large onion, peeled, quartered
3 stalks celery, quartered
3 sprigs fresh thyme
1/3 cup KRAFT Tuscan House Italian Dressing
1/4 cup flour
1 can (14.5 oz.) no-salt-added diced tomatoes, drained
1-1/2 tsp. Creole seasoning
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, cubed

Steps:

  • Peel shrimp; place shells in Dutch oven or stockpot. Coarsely chop shrimp; refrigerate until ready to use. Add broth, water, onions, celery and thyme to Dutch oven. Bring to boil; cover. Simmer on medium-low heat 30 min. Strain into medium bowl; discard strained solids. Reserved strained broth for later use.
  • Heat dressing in Dutch oven. Whisk in flour; cook and stir 3 min. or until lightly browned. Gradually whisk in strained broth until blended. Add tomatoes and Creole seasoning; mix well. Bring to boil on medium-high heat, stirring frequently; simmer on medium-low heat 20 min. or until thickened, stirring occasionally.
  • Add shrimp and cream cheese; cook on medium-low heat 5 min. or until cream cheese is completely melted and shrimp are done, stirring occasionally.

2 tablespoons olive oil
4 garlic cloves, minced
2 large onions, chopped
2 stalks celery, chopped
1 green bell pepper, chopped
1 teaspoon cayenne pepper
2 cups seafood stock or shrimp stock
1 (28-ounce) can whole tomatoes, in thick puree
Dash Worcestershire sauce
Dash hot sauce
2 bay leaves
Kosher salt and freshly ground black pepper
2 pounds large shrimp (about 32), shelled and deveined
4 tablespoons green onions, sliced for garnish

Steps:

  • Heat a large heavy Dutch oven over medium heat. Add oil. Cook garlic, onions, celery, and green bell peppers. Cook until softened, about 5 minutes. Stir in cayenne and let caramelize. Add the seafood stock, tomatoes, Worcestershire, hot sauce, and bay leaves. Season with salt and pepper. Simmer for 35 minutes. Add shrimp and cook about 4 more minutes, until they are bright pink and cooked through. Garnish with green onions.

2 teaspoons butter
2 cans (12 ounces each) evaporated milk
2 cans (10-3/4 ounces each) condensed cream of potato soup, undiluted
2 cans (10-3/4 ounces each) condensed cream of chicken soup, undiluted
1 can (7 ounces) white or shoepeg corn, drained
1 teaspoon Creole seasoning
1/2 teaspoon garlic powder
2 pounds peeled and deveined cooked small shrimp
3 ounces cream cheese, cubed

Steps:

  • In a small skillet, saute onion in butter until tender. In a 5-qt. slow cooker, combine the onion, milk, soups, corn, Creole seasoning and garlic powder. , Cover and cook on low for 3 hours. Stir in shrimp and cream cheese. Cook 30 minutes longer or until shrimp are heated through and cheese is melted. Stir to blend.

Spicy and sweet - a delicious twist on traditional corn chowder. From Joe Simmer's Creole Slow Cookin' cookbook with a few changes for our tastes. I often dice the vegetables (except carrots and potatoes which I chop while the bacon is cooking) the day before cooking to save time. It's a lot of chopping but sooooo worth it! Enjoy!

4 slices bacon
1 onion, diced
1/2 red bell pepper, diced
1/2 green bell pepper, diced
2 celery ribs, diced
1 teaspoon garlic, minced

1 bay leaf, crushed
1/2 teaspoon thyme
1 teaspoon kosher salt
1/4 lb tasso, chopped (or smoked sausage or ham if you can't get tasso)
2 large carrots, diced
1/2 lb red potatoes, chopped
1 lb corn kernel, frozen, thawed
2 (14 1/2 ounce) cans creamed corn
1 (14 1/2 ounce) can chicken stock or 1 (14 1/2 ounce) can chicken broth
1 cup heavy cream
3 green onions, chopped

Steps:

  • In a large skillet over medium heat, fry the bacon until crisp and set aside.
  • Saute the onion, bell peppers, and celery in 2 tablespoons bacon drippings 10 minutes, stirring occasionally.
  • Add the minced garlic, black and cayenne pepper, bay leaf, thyme, salt, and tasso and cook for 1 minute.
  • While the vegetables are sauteeing, add the crumbled cooked bacon, carrots, potatoes, corn, creamed corn and chicken stock to your crock pot.
  • Transfer the sauteed veggie mixture to the crock pot.
  • Stir to mix, cover and cook on high for 6-7 hours.
  • Turn crock pot to high and add the cream and green onion and cook an additional 30 minutes.
