Steps:
- Combine oil and flour in a Dutch oven; cook over medium heat, stirring, until mixture is golden colored about 10 to 15 minutes. Add onion, garlic, green pepper, celery and green onions. Cook, stirring often, 10 minutes or more until vegetables are tender.
- Stir in tomatoes, tomato sauce, tomato paste, red pepper flakes, seasoning salt, bay leaves, 1 cup of water, hot sauce, lemon juice, Worcestershire sauce and sausage. Bring to a boil, lower the heat and cover. Simmer for 30 minutes, stirring occasionally. Remove the bay leaves. Garnish with parsley and serve over grits, if desired.

- Heat 1/4 cup vegetable oil in a small pan over medium heat. When warm, whisk in flour. Continue whisking until the roux has turned a darker caramel color ~ 8 minutes. Be careful not to walk away and forgot about or burn the roux or you'll have to start over. Set aside.
- Bring a heavy bottomed pot to medium high heat and add andouille sausage. Sear on both sides until brown ~ 2-3 minutes. You may need to brown the sausage in batches as you want it to sear and not steam. Cool sausage on a plate and set aside.
- Add onions, peppers, and celery to the sausage pan and add enough oil to lightly coat the bottom of the pan. Cook ~ 4-5 minutes or until translucent and add garlic. Cook 1-2 minutes or until fragrant. Add chicken, sausage, okra, bay leaf, creole seasoning, canned diced tomatoes, chicken broth, sea salt, and black pepper.
- Bring to a boil, reduce heat to a simmer, cover & cook ~ 45 minutes. Remove chicken, let cool, shred with knife and fork and return to the pot. Bring back to a boil. Add the roux and simmer ~ 5-10 minutes or until thick.Traditional gumbo cooks down for a couple hours and has several variations in ingredients. We were in a hurry last night and ate it after 1 hour of simmering and it was delicious.

- Cut both smoked and andouille sausages into quartered slices (each slice is 1/4 inch to 1/2 inch thickness, each disc is quartered. I like to quarter first, then slice the wedges.)
- Heat the oil in a large Dutch oven or black iron pot over medium heat, add half the prepped sausage per batch and saute for 8 to 10 minutes, until browned. Remove the sausage from pan (leave the oil and drippings) to a bowl, and set aside. Add remaining sausage to the same pot and cook 8 to 10 minutes, until lightly browned. Remove sausage from pan (again, leave the oil and drippings) and add to the bowl with first batch of sausage, and set aside.
- Add onion, celery and peppers to the same pot that you cooked the sausage in and saute for 8 to 10 minutes, until the onion is translucent. Add the tomato paste to pot, cook for about 1 minute while stirring. Add tomato, garlic, jalapeno or cayenne, oregano, and thyme, and cook until all the vegetables and herbs are blended well.
- Add the stock and bring to a full rolling boil. Stir in the rice, and add the sausages, bay leaves, salt, pepper and hot sauce. Return to a full boil, reduce the heat to low, stir well then simmer (covered) for 20 minutes.
