This chicken and tomato dish with all the spices served over rice will quickly become a favorite. Serve it to family and guests for a real comfort food meal anytime.

4 to 6 chicken breasts (I use the frozen boneless, skinless ones cut into inch size pieces)
1/4 cup oil
1 medium onion (chopped)
1 green pepper (chopped)
1 cup celery (chopped)
1 14.5 ounce can petite diced tomatoes, undrained
1 cup chicken broth
1 6 ounce can tomato paste
1/4 teaspoon pepper
1/2 teaspoon salt
1/2 teaspoon each dried basil (oregano, thyme, marjoram, and minced garlic)
2 cups rice (cooked according to package directions.)

Steps:

  • Saute chicken pieces in the oil until no longer pink. Remove and keep warm. In the same skillet, saute the onion, green pepper and celery in the remaining oil until tender. Stir in the tomatoes, broth, tomato paste and seasonings.
  • Bring to a boil, reduce heat; cover and simmer for 5 minutes. Return chicken to the pan; heat through. Serve with rice. Makes about 8 servings.

1 teaspoon canola oil

Steps:

  • In a small nonstick skillet coated with cooking spray, cook chicken in oil over medium heat for 5-6 minutes on each side or until a thermometer reads 170°. Remove and keep warm. , In the same skillet, combine the tomatoes, green pepper, celery, onion, chili powder, thyme and pepper. Bring to a boil. Reduce heat; cover and simmer for 10 minutes or until vegetables are crisp-tender. Return chicken to pan; heat through. Serve with rice.

I cook a big batch of this sauce and keep in the freezer for when I need to pull together a quick dinner party or supper for my family. Just reheat and add a combination of shrimp, sausage, or chicken and serve over hot rice. Add in a combination of the optional ingredients to make it your own. You will have a meal fit for company.

2 cups chopped celery

Steps:

  • Heat olive oil in a large pot over medium heat. Stir in celery, onion, green bell pepper, carrot, and garlic; cook and stir until the vegetables are tender, about 10 minutes.
  • Stir tomatoes with their juice, water, chicken bouillon cubes, and bay leaves into the vegetable mixture.
  • Stir in red pepper flakes, smoked paprika, saffron, oregano, basil, thyme, orange zest, clam juice, and white wine.
  • Bring the sauce to a boil, reduce heat to low, and simmer until the flavors have blended, at least 1 hour. Season to taste with salt and black pepper.
  • Allow the sauce to cool completely.
  • To store, pour into pint glass canning jars, cover with lids and rings, and place into freezer. Sauce can be frozen up to 3 months before using.

This is a spicy sauce similar to etouffee. By adding seafood, it becomes Seafood Creole. Due to the seasoning mix, it is quite spicy. This can be controlled by adjusting the amount of the peppers. I like mine full strength, but for the wife I have to cut the peppers down to 1/8 teaspoon each. This recipe can easily be doubled or quadrupled for large affairs. It goes great with rice, garlic bread, a green salad and a good white wine, such as white Merlot, white Cabernet, Johannisburg Riesling, or Gewurztraminer. Use your favorite firm, white fish fillets in this recipe. Canned diced tomatoes can be used in place of chopping fresh tomatoes.

A very basic creole sauce that can be used when making shrimp creole, stuffed peppers or my favorite as a gravy over meat. I especially love this with rice topped with leftover meatloaf slices and then this sauce spooned over.

2 tablespoons olive oil
1 medium onion, chopped
2 stalks celery, chopped
1 green bell pepper, chopped
2 -3 large garlic cloves, minced
1 (14 1/2 ounce) can diced tomatoes
2 cups vegetable stock
2 bay leaves
1/8-1/4 teaspoon cayenne pepper
1/8-1/4 teaspoon white pepper
1/2 teaspoon dried thyme
2 -3 teaspoons Worcestershire sauce
hot sauce, to taste
2 tablespoons parsley, chopped
3 green onions, thinly sliced
salt, to taste
black pepper, to taste
2 tablespoons cornstarch

Steps:

  • In a medium size saucepan, over medium heat, heat the oil.
  • Add the chopped onion, celery, bell pepper and garlic cooking until slightly wilted.
  • Add the tomatoes and cook for an additional 1 to 2 minutes.
  • Add about 1 1/2 cups stock, taking care not to add to much. You can always add more if needed.
  • Add the seasonings, bay leaves, hot sauce and Worcestershire sauce; stir and reduce heat to simmer.
  • Mix the cornstarch with equal amounts of water and stir 1 tablespoon of mixture into sauce.
  • Allow to cook for a few minutes, stir and add additional water/cornstarch mixture if the sauce looks thin or add additional stock if sauce is to thick.
  • Simmer about 20 minutes adding additional stock as necessary.
  • The last 10 minutes of cooking time, stir in the parsley and green onions.
  • Remove bay leaves, taste and adjust seasonings as needed.
  • Use the sauce to make your favorite recipe for shrimp creole, etc.
  • This sauce can be frozen in sturdy container and thawed in refrigerator before reheating and using.

Steps:

  • Gather the ingredients.

1 pkg (28 oz.) eckermann's smoked links (garlic or hot), sliced*
1/2 c green pepper, chopped
1/2 c green onions, chopped
1 onion, small and chopped
2 stalk(s) celery, chopped
2 clove garlic, chopped
3 Tbsp bacon drippings (optional)
1 can(s) (14.5 oz.) cajun stewed, chopped or diced tomatoes
1 can(s) (10 oz.) rotel
1 can(s) (8 oz.) tomato sauce
1 can(s) tomato paste
2 Tbsp brown sugar
1 bay leaf
1/2 tsp sweet basil
1/4 tsp rosemary
1/4 tsp thyme, dried
1/8 tsp marjoram
1 Tbsp worcertershire sauce
salt and pepper to taste
1/2 c beef stock or water, more if needed
cooked rice, prepared separately, for 4 to 6 people

Steps:

  • 1. Saute on medium heat the sausage links, green pepper, onions, celery and garlic in bacon drippings (or oil) in a large skillet 4 - 5 minutes. Add the remaining ingredients and turn heat down low. Simmer, stirring occassionally, for one hour or longer. Add water as needed if it becomes a little too thick. I like a thick sauce so I adjust carefully. Serve over cooked rice.
  • 2. *You can use less meat if you are not a "hardy meat" person, so adjust accordingly and use fewer links. Personally, I like more sauce and use less links! When using other ground meats, I generally use 2 - 3 lbs.
