EASY CREAMY CAJUN SALMON



Easy Creamy Cajun Salmon image

Cajun salmon cooked in creamy garlic herb sauce is the most delicious 15 minute, one pan dinner recipe. Weeknight dinner, sorted!

500 g (1lb) salmon fillets
1 tbsp olive oil
2 tbsp Cajun seasoning
1 tbsp butter
4 garlic cloves (crushed )
½ tsp chilli flakes
2 tbsp parsley (finely chopped )
1 tsp dill (finely chopped )
1 tsp thyme
1 cup cream
1 tsp lemon juice
salt and pepper (to taste)

Steps:

  • Pat the salmon fillets dry with paper towel. Drizzle over the olive oil then season generously with Cajun seasoning, salt and pepper.
  • Heat a large frying pan over medium high heat.
  • Add the salmon, skin-side down, and cook for 2-3 minutes until the skin is crisp.
  • Flip over and cook for another 2-3 minutes on the other side. Remove from the pan and set aside while you make the sauce.
  • In the same pan you cooked the salmon, melt the butter then add the garlic and herbs.
  • Sauté for a few minutes until fragrant then pour in the cream and lemon juice.
  • Allow to simmer for a few minutes then season with salt and pepper.
  • Add the salmon back to the sauce and allow to simmer for another 2 minutes. Serve immediately.

Delicious Baked Salmon With Creole Mustard Sauce image

If you are a salmon lover, this is a recipe that you will love. Note this recipe yields 2 salmon fillets, but the recipe may be doubled if desired. Prep time includes marinating time for the fish... also cooking time is approx.

1 cup heavy whipping cream (unwhipped)
3/4 cup creole mustard or 3/4 cup any other coarse grain mustard
4 teaspoons Worcestershire sauce
1 tablespoon Dijon mustard
black pepper
1/2 teaspoon dried basil
1/4 teaspoon cayenne pepper
salt (optional)
1 cup sour cream (added later)
2 (1 1/2 lb) center cut salmon fillets (skin on, can use one more fillet if desired)
1/4 cup butter, melted (unsalted preferably)
3 tablespoons light brown sugar
3 tablespoons soya sauce
2 tablespoons fresh lemon juice
2 tablespoons dry white wine

Steps:

  • In a saucepan, combine all the sauce ingredients (EXPECT THE SOUR CREAM); simmer until very thick, stirring frequently (about 5 minutes), keep warm.
  • Arrange the fish fillets (skin-side down) in single layer on a a small cookie sheet or a shallow pan, lined with foil.
  • Mix 1/4 cup melted butter with brown sugar, soy sauce, lemon juice, wine and seasonings in a bowl.
  • Pour over the fish; cover with foil, and refrigerate for at least 1 hour.
  • Remove from the fridge.
  • Set oven to 400 degrees.
  • Uncover the fish; bake until JUST cooked through, basting with pan drippings.
  • Meanwhile, rewarm the sauce over low heat, stirring constantly.
  • Add in 1 cup sour cream; whisk JUST until heated through (DO NOT BOIL!) Arrange the salmon on the plate; serve with sauce-- delicious!

4 teaspoon s Creole seasonings
2 garlic cloves, minced
2 teaspoon s pepper
4 salmon fillets (6 ounces each)
1/4 cup minced fresh parsley

Steps:

  • In large resealable plastic bag, combine the first three ingredients. Add salmon; shake to coat.
  • Place salmon on a broiler pan or baking sheet.
  • Broil 6 inches from the heat for 10-14 minutes or until fish flakes easily with a fork. Sprinkle with parsley.

  • Lightly (do not put too much seasoning on!) sprinkle the surface of ONE side of each of the salmon filets.
  • Heat the olive oil in a large non-stick skillet over medium-high heat. Once the skillet is very hot (but not smoking), place the salmon in SEASONING SIDE DOWN. It should sizzle.
  • After 3-4 minutes (depending on thickness of filets), carefully turn salmon over; continue cooking. After 2-3 minutes (when salmon is right on the verge of being done, add the butter to the pan.
  • Once the butter is melted, continually spoon up the melted butter and pour over tops of salmon. Continue to "baste" the salmon with butter for a couple of minutes. Remove salmon from skillet and serve!
