EASY CREAMY CAJUN SALMON
Cajun salmon cooked in creamy garlic herb sauce is the most delicious 15 minute, one pan dinner recipe. Weeknight dinner, sorted!

Steps:
- Pat the salmon fillets dry with paper towel. Drizzle over the olive oil then season generously with Cajun seasoning, salt and pepper.
- Heat a large frying pan over medium high heat.
- Add the salmon, skin-side down, and cook for 2-3 minutes until the skin is crisp.
- Flip over and cook for another 2-3 minutes on the other side. Remove from the pan and set aside while you make the sauce.
- In the same pan you cooked the salmon, melt the butter then add the garlic and herbs.
- Sauté for a few minutes until fragrant then pour in the cream and lemon juice.
- Allow to simmer for a few minutes then season with salt and pepper.
- Add the salmon back to the sauce and allow to simmer for another 2 minutes. Serve immediately.

DELICIOUS BAKED SALMON WITH CREOLE MUSTARD SAUCE
If you are a salmon lover, this is a recipe that you will love. Note this recipe yields 2 salmon fillets, but the recipe may be doubled if desired. Prep time includes marinating time for the fish... also cooking time is approx.

Steps:
- In a saucepan, combine all the sauce ingredients (EXPECT THE SOUR CREAM); simmer until very thick, stirring frequently (about 5 minutes), keep warm.
- Arrange the fish fillets (skin-side down) in single layer on a a small cookie sheet or a shallow pan, lined with foil.
- Mix 1/4 cup melted butter with brown sugar, soy sauce, lemon juice, wine and seasonings in a bowl.
- Pour over the fish; cover with foil, and refrigerate for at least 1 hour.
- Remove from the fridge.
- Set oven to 400 degrees.
- Uncover the fish; bake until JUST cooked through, basting with pan drippings.
- Meanwhile, rewarm the sauce over low heat, stirring constantly.
- Add in 1 cup sour cream; whisk JUST until heated through (DO NOT BOIL!) Arrange the salmon on the plate; serve with sauce-- delicious!

CREOLE SALMON FILLETS
Steps:
- In large resealable plastic bag, combine the first three ingredients. Add salmon; shake to coat.
- Place salmon on a broiler pan or baking sheet.
- Broil 6 inches from the heat for 10-14 minutes or until fish flakes easily with a fork. Sprinkle with parsley.

- Lightly (do not put too much seasoning on!) sprinkle the surface of ONE side of each of the salmon filets.
- Heat the olive oil in a large non-stick skillet over medium-high heat. Once the skillet is very hot (but not smoking), place the salmon in SEASONING SIDE DOWN. It should sizzle.
- After 3-4 minutes (depending on thickness of filets), carefully turn salmon over; continue cooking. After 2-3 minutes (when salmon is right on the verge of being done, add the butter to the pan.
- Once the butter is melted, continually spoon up the melted butter and pour over tops of salmon. Continue to "baste" the salmon with butter for a couple of minutes. Remove salmon from skillet and serve!

- Use an electric hand mixer to whip butter for 2 minutes until light and fluffy. Add honey and cream together until smooth. Mix in 1 tablespoon of the cajun seasoning. (remaining seasoning can be stored in airtight container up to 3 months)
- Pat salmon fillets dry on both sides with a paper towel. Rub all over with oil, then season with salt and pepper to taste.
