Steps:
- Place marrow bone in a pan and cover with water. Boil for about 5 or 10 minutes, just until you see a thick layer of froth on the top. Remove the bone, pour off the water and rinse the scum off the outside. Don't worry about flavor loss. This short boil only renders out the scum. If you are using a short rib just place it on a baking sheet or skillet in a 400 degree oven until somewhat browned.
- In a large dutch oven fry the bacon until brown then set aside.
- Cut the beef into large chunks, dry off, then brown on all sides in the bacon fat. If there isn't enough fat in the pan add a tablespoon or two of vegetable oil. Remove and set aside, then pour off most of the fat.
- Put in all the sliced onions and cook over a medium heat for about 5 minutes, then stir in carrots and turnips and cook for a couple of minutes.
- Pour in the rum and stir it while boiling until it picks up the browned bacon and beef bits from the bottom.
- When most of it is boiled off stir in the cooked bacon bits, place the marrow bone in the center, put the beef chunks over & around it, and pour the wine over it. The marrow bone should be completely covered.
- Place the herbs, garlic half, onion quarter with cloves, on top for easy removal when the dish is finished.
- When the wine just comes to a boil, put foil over the pot, cover it and place in a 325 degree oven for about 2 hours.
- Check after one hour to make sure there is still liquid to cover. If not add some water.
- When the meat is fork tender remove and dispose of the herbs, garlic half and clove studded onion quarter. Remove beef chunks to a covered dish.
- Strain the sauce and adjust the seasonings. If the sauce is too thin, make a paste of teaspoon of cornstarch and 2 tsps. of water and whisk it slowly into the cooled liquid before bringing it back to a boil. Add a pat of butter before serving.

CREOLE DAUBE
As old as the swamps in Louisiana, this recipe predates the title pot roast! This is the most wonderful tasting pot roast you'll ever try. Worth every minute of the work! I have such fond memories of my grandmother creating this magic in her kitchen and her entire house filled with the heavenly aroma. For the Creole seasoning, I use Emeril's with half the salt and then watch the amount of salt and pepper you add depending on the amount already in your Creole seasoning.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). In a mortar, smash together 1/4 cup of garlic powder, 1/4 cup of onion powder, the crushed red pepper flakes, and 1 tablespoon of cracked black pepper until the mixture forms a fine powder. Place the spice mix into a large shallow bowl.
- Inject the pork roast all over with the Creole marinade; blot moisture from the outside of the roast. Rub the spice mix all over the pork roast to thoroughly coat. Melt the butter in a large skillet over medium heat, then cook and stir the shallots and elephant garlic until the garlic becomes lightly golden brown. Sear the coated pork roast in the hot butter on all sides until the spice coating is golden brown, 1 to 2 minutes per side. Place the roast into a roasting pan or Dutch oven with the fat side up; scrape up the butter, cooked shallots and garlic, and sprinkle around the roast. Arrange the sweet onions, red potatoes, carrots, and celery pieces around the roast. Mix 1 cup of water with the remaining spice rub, and pour evenly over roast.
- Cover the roasting pan with a lid, and cook in the preheated oven until the meat is very tender, 3 3/4 to 4 hours.
- Remove the roast and set aside on a serving platter; surround the meat with the cooked vegetables. Whisk 1 tablespoon of cracked black pepper, 2 tablespoons of garlic powder, 1 tablespoon of onion powder, and the brown gravy mix together with 2 cups of water in a bowl, and whisk the mixture into the liquid left in the roasting pan. Place the pan over medium heat, and cook, whisking constantly, until the gravy has come to a boil and has thickened, about 5 minutes. Serve alongside the roast and vegetables.
