CREOLE RICE
I've found a fast and fantastic way to turn leftover rice into a spectacular side dish. I spice it up with Creole seasoning and pepper to give it a boost of flavor, then sprinkle it with paprika for color. Rest assured that no one will figure out the zippy combination is a "second-day dish".

- In a small saucepan, melt butter; add Creole seasoning and pepper. Cook over medium heat for 3 minutes. Stir in rice. Cover and heat through.

SEAFOOD AND SAUSAGE JAMBALAYA
Succulent cod and shrimp combine with spicy sausage and seasoning to make one perfect Seafood and Sausage Jambalaya.

Steps:
- Toss the shrimp in 1/4 t each Old Bay and creole seasoning. Set aside. Separately, do the same with the cod.
- In a large, heavy pot, heat the olive oil. Add the sausage and cook over high heat, stirring occasionally, until well browned. Add the veggies and season with a pinch each salt (to get them to soften) and pepper. Cook, stirring regularly, until softened (~5 minutes).
- Add 1 t Old Bay, 1/2 t creole seasoning, and rice. Add the chicken stock and thyme; season well (at least 1/2 t salt), and bring to a boil. Use a wooden spoon to quickly scrape up the browned bits from the bottom of the pot. Cover and cook over med-low heat for 10 minutes.
- Stir in the shrimp. Layer the fish on the rice, recover, and cook ~10 minutes until rice is cooked. Yield: 4-6 servings.

- Combine the rice, 1 tablespoon butter, 1/4 teaspoon salt and 2 cups water in a saucepan. Bring to a boil, stirring occasionally. Reduce the heat to low, cover and cook until the rice is tender, about 15 minutes. Remove from the heat and set aside.
- Meanwhile, melt 2 tablespoons butter in a large pot over medium-high heat. Add the onion and celery, season with salt and cook until just tender, about 8 minutes. Add the tomatoes, garlic, Worcestershire sauce and Cajun seasoning; cook until the tomatoes start breaking down, about 2 minutes. Add the wine and cook until reduced by half, about 4 minutes. Add 1 cup water and the mussels and season with salt. Cover and cook until the mussels open, 4 to 5 minutes (discard any unopened mussels). Remove from the heat and stir in the remaining 1 tablespoon butter; season with salt.
- Fluff the rice with a fork and divide among bowls. Top with the mussels and broth; sprinkle with parsley.

- Thoroughly wash and clean the mussels. Pour them into a pot and add water. Put to boil for about 30 minutes on high heat. Once the shells open up, drain, cool and remove the meat of the mussels.
- Fry the finely chopped onions and grated carrots in olive oil. Add the mussels, peeled and grated tomatoes , black pepper, bay leaf, salt and pour in the wine in a little bit.
- Allow to stew for 10 minutes and add the washed and drained rice. Pour in 1 cup (250 ml) of warm water and stir until the rice absorbs the liquid. Transfer the contents to an oven dish and add 2 more cups of water.
- Stir and put to bake in a preheated 392°F (200°C) oven. Serve the Greek style mussels with rice with fresh chopped parsley and lemon slices.
