I've found a fast and fantastic way to turn leftover rice into a spectacular side dish. I spice it up with Creole seasoning and pepper to give it a boost of flavor, then sprinkle it with paprika for color. Rest assured that no one will figure out the zippy combination is a "second-day dish".

1/4 cup butter, cubed
1 teaspoon Creole seasoning
1/8 teaspoon pepper
2 cups cooked long grain rice

Steps:

  • In a small saucepan, melt butter; add Creole seasoning and pepper. Cook over medium heat for 3 minutes. Stir in rice. Cover and heat through.

SEAFOOD AND SAUSAGE JAMBALAYA

Succulent cod and shrimp combine with spicy sausage and seasoning to make one perfect Seafood and Sausage Jambalaya.

2 T extra virgin olive oil
12 oz andouille sausage (sliced in 1/2-inch slices)
1 medium onion (diced)
1 red bell pepper (diced)
1 large celery rib (diced)
2 cloves garlic (minced)
1-1/2 t Old Bay (divided)
1 t creole seasoning (divided)
1 c uncooked jasmine rice
1-3/4 c Chicken Stock
2 fresh thyme sprigs
kosher salt and fresh cracked pepper
1/2 lb cod (uncooked, cut in 2-inch pieces)
1 lb medium shrimp (uncooked, peeled and deveined)
1/4 c chopped scallions

Steps:

  • Toss the shrimp in 1/4 t each Old Bay and creole seasoning. Set aside. Separately, do the same with the cod.
  • In a large, heavy pot, heat the olive oil. Add the sausage and cook over high heat, stirring occasionally, until well browned. Add the veggies and season with a pinch each salt (to get them to soften) and pepper. Cook, stirring regularly, until softened (~5 minutes).
  • Add 1 t Old Bay, 1/2 t creole seasoning, and rice. Add the chicken stock and thyme; season well (at least 1/2 t salt), and bring to a boil. Use a wooden spoon to quickly scrape up the browned bits from the bottom of the pot. Cover and cook over med-low heat for 10 minutes.
  • Stir in the shrimp. Layer the fish on the rice, recover, and cook ~10 minutes until rice is cooked. Yield: 4-6 servings.

1 cup converted long-grain white rice
4 tablespoons unsalted butter
Kosher salt
1/2 onion, diced
3 stalks celery, diced
2 large plum tomatoes, diced
2 cloves garlic, minced
1 tablespoon Worcestershire sauce
1 tablespoon Cajun seasoning
3/4 cup dry white wine
2 pounds mussels, scrubbed and debearded
Chopped fresh parsley, for topping

Steps:

  • Combine the rice, 1 tablespoon butter, 1/4 teaspoon salt and 2 cups water in a saucepan. Bring to a boil, stirring occasionally. Reduce the heat to low, cover and cook until the rice is tender, about 15 minutes. Remove from the heat and set aside.
  • Meanwhile, melt 2 tablespoons butter in a large pot over medium-high heat. Add the onion and celery, season with salt and cook until just tender, about 8 minutes. Add the tomatoes, garlic, Worcestershire sauce and Cajun seasoning; cook until the tomatoes start breaking down, about 2 minutes. Add the wine and cook until reduced by half, about 4 minutes. Add 1 cup water and the mussels and season with salt. Cover and cook until the mussels open, 4 to 5 minutes (discard any unopened mussels). Remove from the heat and stir in the remaining 1 tablespoon butter; season with salt.
  • Fluff the rice with a fork and divide among bowls. Top with the mussels and broth; sprinkle with parsley.
