CREOLE MACARONI AND CHEESE



Creole Macaroni and Cheese image

Use the best aged cheeses you can find. Any andouille sausage will work, but do not substitute. Just leave it out if you can't find any.

1 (8 ounce) package elbow macaroni
1 cup andouille sausage, diced
4 tablespoons butter
¾ cup bread crumbs
½ cup grated Parmesan cheese
1 onion, chopped
2 stalks celery, chopped
1 tablespoon all-purpose flour
½ teaspoon paprika
½ teaspoon prepared mustard
1 ½ cups milk
1 cup grated Gruyere cheese
1 ½ cups shredded Cheddar cheese
kosher salt to taste
black pepper to taste

Steps:

  • Cook macaroni in a large pot of boiling water until al dente. Drain.
  • In a small pan, cook the andouille sausage over medium heat until done. Set aside. In the same pan, melt 1 tablespoon butter over medium heat. Add bread crumbs, and stir to coat. Cool, and then mix in Parmesan. Set aside.
  • In a medium saucepan, melt 1 tablespoon butter. Saute onions and celery until translucent. Transfer to a bowl.
  • In the same saucepan, melt 1 tablespoon butter over medium heat. Whisk in the flour, to make a white roux. Try not to let the roux brown at all, it should be white. Mix in paprika and mustard, then stir in milk. Bring to boil over medium heat, then add Gruyere and Cheddar cheeses. Simmer, stirring often, until thick enough to coat the back of a spoon, about 10 minutes. Season with salt and pepper to taste.
  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 9x13 in pan, or similar sized casserole dish. Transfer cooked macaroni to the dish, and toss in the andouille sausage and sauteed vegetables. Stir in the cheese mixture. Sprinkle the breadcrumb and Parmesan mixture evenly over the top.
  • Bake for 20 minutes, or until crust turns golden brown.

1 (8 ounce) box elbow macaroni
4 tablespoons unsalted butter, divided
12 ounces uncooked medium shrimp, peeled and deveined
2 teaspoons Creole seasoning (such as Tony Chachere's®)
2 cloves garlic, minced
2 tablespoons all-purpose flour
2 cups half-and-half
1 cup shredded sharp Cheddar cheese
1 cup shredded Monterey Jack cheese
1 tablespoon Creole mustard

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes.
  • While macaroni is cooking, melt 1 tablespoon butter in a large skillet over medium heat. Add shrimp; sprinkle with Creole seasoning. Cook, stirring continually, for 4 minutes. Add garlic and cook until shrimp is pink, about 2 minutes. Turn off heat.
  • Drain macaroni and rinse under cold water to stop the cooking; set aside. Return the pasta pot to the stove and melt remaining 3 tablespoons butter over medium heat. Add flour and whisk until dissolved, about 2 minutes. Add half-and-half; heat for 3 minutes.
  • Whisk in cheeses until melted, about 5 minutes. Add mustard; cook for 2 minutes. Turn off heat.
  • Add reserved macaroni and shrimp. Stir until heated through. Serve immediately.

Way to spice up a traditional favorite! This recipe is so smooth and creamy, and I love how well the cottage cheese blends right in to give it an even lovelier texture. (So don't shy away from trying it!) We went light on the spices, but season as you see fit! This is A+ mac & cheese.

2 c elbow macaroni
2 c cottage cheese, lowfat
8 oz sour cream, lite
1 egg, beaten
dash of pepper
3 c grated sharp cheddar (divided)
1 1/2 Tbsp tony chachere's creole seasoning (divided)

Steps:

  • 1. Cook Macaroni noodles according to package directions. Drain rinse and set aside.
  • 2. Combine next six ingredients. Except divide 1 cup of the cheddar cheese and set aside. Combine the other 2 cups with the mixture. Also set aside about 1/2 a TBL Spoon of the 1 1/2 TBL spoon of creole seasoning to sprinkle on top.
  • 3. Add macaroni to cheese mixture and stir well. Spoon into lightly greased 9x13 casserole dish. Sprinkle with remaining Cheese and creole seasoning.
  • 4. If you don't like creole seasoning you can always add paprika instead. Just adjust the amount to taste.
  • 5. Bake uncovered at 350 for 35 to 45 minutes

  • stir in 1/2 cup of cheese, sprinkle 1/4 cup of cheese over top.
  • bake at 350 for 30 minutes until bubbly.
