If you like beans and corn bread, or rice this is a nice lunch or supper dish. It's a complete meal by itself or as a side dish. The hot sauce we like is Glory Brand.

Number Of Ingredients 12

1 (16 ounce) package frozen crowder peas
2 cups finely diced ham, pieces
2 cups water
1 teaspoon bouillon (vegetable, chicken or beef)
2 cups red potatoes, chopped with skin on
1 cup baby carrots (cut coin size)
1/2 green pepper, chopped
1 medium onion, coarsely chopped
1 tablespoon Worcestershire sauce
1 teaspoon pepper, to taste
1 teaspoon sugar
1 -2 tablespoon olive oil

Steps:

  • In large saucepot place all ingredients.
  • Cook over medium high heat until starting to boil, reduce heat to simmer and cover.
  • Simmer for 30 minutes, until all veggies are tender.
  • Remove cover and let simmer until the liquid is reduced to your liking.
  • I serve mine over corn bread so I like it alittle"juicy".
  • Serve with corn bread, or rice and hot sauce to taste.

Southern-Style Crowder Peas image

Delicious seasoned peas cooked with onions, peppers, bacon, and ham. A New Orleans style dish. Serve over rice.

4 slices bacon
1 small onion, chopped
1 small green bell pepper, chopped
1 (16 ounce) package frozen crowder peas
2 cups water
1 tablespoon garlic powder
1 pinch dried thyme
1 crushed bay leaf
½ teaspoon seasoned salt to taste
2 slices cooked ham, cubed
1 tablespoon chopped fresh parsley

Steps:

  • Place bacon in a skillet over medium-high heat, and cook until evenly brown. Drain and crumble. Mix onion and green bell pepper into the skillet, and cook until tender. Stir in peas and water. Season with garlic powder, thyme, bay leaf, and seasoned salt. Bring to a boil. Reduce heat to low, and simmer 30 to 40 minutes, until peas are tender.
  • Mix ham into the skillet. Adjust seasonings to taste. Continue cooking 5 minutes. Stir in fresh parsley just before serving.

Yum!!! This is a great way to make a meal out of all those peas. I just brought home a bushel of crowder peas and I needed to figure out what to do with them. I researched a bunch of recipes and combined a few of the ideas I saw to make these. I think you could use black-eyed peas in this recipe as well.

4 slices turkey bacon
2 teaspoons olive oil
1 onion (diced)
1 green bell pepper (diced)
2 garlic cloves
3 cups crowder peas (fresh or frozen)
3 cups broth
1 pinch chili pepper flakes
1 bay leaf
1 pinch thyme
1/2 teaspoon seasoning salt (to taste)
3/4 cup cubed ham
2 tablespoons flour
1/8 cup milk

Steps:

  • Cook the bacon in a large skillet until crispy then remove and dry.
  • If you used turkey bacon there won't be a lot of greece so you need to add a bit of oil to cook the onion, pepper and garlic. Cook these on medium low for 15-20 minutes (until they are soft and sweet). Make sure that you scrape up all of the yummy bacon flavor from the pan while you're at it.
  • Stir in the peas and the broth.
  • Season with the pepper flakes, bay leaf, thyme and seasoned salt and let it simmer over medium low for about 30 minutes (until the peas are tender).
  • Add the bacon and the ham and cook for another few minutes.
  • If the dish looks too watery at this point add the following: Mix 1-2 T flour into a bit of milk then stir it into the pea mixture. Cook a few more minutes to thicken up the mix.
