A perfect way to use up a stale loaf of bread or leftover baguette. My little niece used to eat homemade croutons as a snack by the handfuls. These are so much better than the store bought kind and can be used to serve with salads and soup. From Bride and Groom, First and Forever Cookbook.

Number Of Ingredients 7

4 cups bread cubes (preferably from day-old bread cut in 3/4 inch pieces)
1 tablespoon unsalted butter, melted
1 tablespoon olive oil (add more if you would like the croutons to be more tender)
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon seasoning salt, such as Lawry's
1/8 teaspoon fresh ground pepper

Steps:

  • Preheat the oven to 300 degrees F.
  • Toss the bread cubes with the butter, olive oil, onion powder, garlic powder, seasoned salt, and pepper in a medium bowl.
  • Spread the cubes in a single layer on a baking sheet and bake until lightly browned about 20 minutes. Let cool. Store in an airtight container at room temperature for up to 1 week.

Homemade Creole Seasoned Croutons add flavor to salads and snack mixes. Easy to whip up and delicious to snack on just as they are. So easy to bake in the oven!

Number Of Ingredients 6

8 slices of bread - any style
1 Tablespoon of Creole seasoning
1/2 cup butter
1/3 cup shredded Parmesan cheese (not powdered)
1/8 teaspoon onion powder
1/8 teaspoon garlic powder

Steps:

  • Cut bread into bite sized pieces
  • Place bread cubes into a bowl and sprinkle with creole seasoning. Stir.
  • In a small pot, add butter and cook on low until butter is melted.
  • Add cheese, onion powder and garlic powder.
  • Continue cooking on low until mixture is smooth and creamy.
  • Pour cheese mixture over bread cubes. and mix well.
  • Spoon 1/4 - 1/2 of bread cubes into air fryer - single layer only.
  • Cook at 200*F for 5 minutes.
  • Remove basket from air fryer and stir bread cubes.
  • Cook for an additional 5 minutes.
  • Once baked and crunchy, remove from air fryer and repeat until all cubes are cooked.
  • Serve immediately on salads or on top of casseroles.

3 lbs yellow onions, julienned
4 ounces unsalted butter
2 ounces all-purpose flour
1 quart chicken stock
1 quart milk
2 bay leaves
6 ounces sharp cheddar cheese, shredded
6 ounces white wine
1/2 tablespoon kosher salt
1 teaspoon white pepper, fresh ground

Steps:

  • In a soup pot, melt the butter over medium heat.
  • Add the onions and cook until translucent. Add the flour and cook for 8 minutes, stirring constantly. (Be careful not to burn the flour).
  • Add the chicken stock, milk and bay leaves and bring to a boil.
  • Reduce down to medium heat and remove both bay leaves.
  • Add the white wine, bring to a boil and stir on low speed with a hand mixer.
  • While mixing, slowly add the cheddar cheese until dissolved.
  • Reduce to low heat and cook for 20 minutes. Add salt and pepper to taste.
  • Serve in a bowl with croutons, if desired.

My love for okra began as a child and continues to border on just this side of insanity. I love okra. As a young boy, I would smuggle a brown bag full of fried okra into the movies as my better-than-popcorn snack. On Sunday nights, I was famous for making fried okra and creamed corn sandwiches with fresh slices of tomato and loads of Duke's mayonnaise. Years later, while studying in Italy, I realized that Italians also took leftover vegetables and made sandwiches. All you need are cold vegetables, bread, and mayo. The Caesar salad treatment makes this lighter than a sandwich, although if you want to give it more heft, you can add shrimp, chicken, or duck.

For the salad:
2 cups Fried Okra
2 heads romaine lettuce, leaves separated
1 cup cooked fresh corn kernels, chilled
2½ cups cubed corn bread, toasted
½ cup sliced grape tomatoes
½ cup sliced seedless cucumber
¼ cup sliced red onion
Creole Caesar Dressing (recipe follows)
For the Creole Caesar dressing:
⅔ cup extra-virgin olive oil
3 garlic cloves, peeled
2 tablespoons chopped onion
2 tablespoons red wine vinegar
½ roasted red bell pepper
1 tablespoon finely chopped celery
1 teaspoon light brown sugar
¼ teaspoon cayenne pepper
2 tablespoons mayonnaise
¼ cup grated Parmesan cheese
Salt and pepper

Steps:

  • For the salad:
  • Place half the fried okra in a large bowl and add the romaine, corn, corn bread, tomatoes, cucumber, and onion. Add the dressing and toss until well coated.
  • Divide the salad among six serving plates and top evenly with the remaining okra. Serve immediately.
  • For the Creole Caesar dressing:
  • In a small saucepan, combine the oil, garlic, and onion. Cook over low heat until the garlic and onion are golden and tender, about 15 minutes. Using a slotted spoon, transfer the garlic and onion to a food processor; reserve the oil.
  • Add the vinegar, bell pepper, celery, sugar, cayenne, mayonnaise, Parmesan, and a pinch each of salt and black pepper to the food processor. Pulse until smooth. With the machine running, add the oil in a thin stream and process until emulsified. Taste and season with salt and pepper. Use immediately or store in an airtight container in the refrigerator for up to 1 week.

MOM'S FRENCH CANADIAN CRETONS



Mom's French Canadian Cretons image

This is a traditional french canadian staple. You eat this on toast of choice, it's a high protein very nutritional breakfast favourite. I've been eating cretons since I was a child and everytime I visit my parents, my mother always makes this (one of my favourite dishes) for my husband! I try to make this dish as lean as possible using a combination of turkey and pork, if no turkey than chicken is good also. Portions on the meat is 2 to 1 and doesn't matter if you use more pork than turkey or visa versa, the outcome is always just a good as the last!

2 lbs ground pork
1 lb ground turkey or 1 lb chicken
3 garlic cloves, minced
1 tablespoon canola oil or 1 tablespoon vegetable oil, with1 tblsp olive oil mixed
1 tablespoon garlic powder
1/4 teaspoon clove
1/2 teaspoon cinnamon
1/2 teaspoon sage
salt
black pepper
allspice
breadcrumbs
boiling water

Steps:

  • On medium high heat brown pork and turkey in the oil and olive oil mix. Using this mix the meat cooks at a higher temperature without burning the oil. While browning add onions and minced garlic; once browned add garlic powder, cloves, cinnamon, and sage, cover the top of meat mixture with salt (I prefer seasalt or kosher) and same, twice around the pot with pepper (preferrably fresh ground). Mix the meat and seasonings and add in boiling water to meat mixture, enough to cover the top. Bring to boil, lower to simmer about 3hrs. or until water is reduced to almost nothing. approximately half way through cooking process adjust your mixture with alspice, no more than a teaspoon should be required. I go by taste. Now to properly adjust the mixture for spreading purposes add in enough bread crumbs to absorb the remaining liquid in the pot. Using a hand blender puree meat mixture. Divide into containers and let cool before freezing or putting in fridge. yeilds 3-4lbs. Enjoy!

1 day-old French bread
3 ounces extra virgin olive oil
2 teaspoons granulated garlic
1 tablespoon pickled garlic (crushed then minced fine)
1 teaspoon granulated onion
1 teaspoon paprika
1/4-1/2 teaspoon ground cayenne pepper
1/4 teaspoon white pepper
1/4 teaspoon finely ground black pepper
1/2 teaspoon whole dried thyme leaves
1/2 teaspoon dried sweet basil leaves
1/2 teaspoon whole oregano leaves (Required for Italian flavored croutons, optional for Cajun or Creole flavored)

Steps:

  • Cut French bread lengthwise as if for a long sandwich. Then cut the bread lengthwise with two or three cuts from the top to the bottom. Then cut the bread across to produce cubes of bread about 3/4 of an inch thick.
  • Place the cubed bread in a large bowl that slopes to a small bottom. This will direct excess oil and seasonings towards the bottom of the bowl. Add the bread to the bowl and all of the seasonings. Toss gently for several minutes, it is important to insure that the seasonings are distributed evenly and that the oil is completely absorbed by the bread.
  • Arrange the croutons in a single layer on a 1/2 sheet baking or a jellyroll pan.
  • Preheat oven to 350F, place the baking sheet in the oven, then turn off the oven immediately. Bake the croutons for 90 minutes, do not open oven during that time.
  • Allow the croutons to cool, place in a shallow serving bowl and serve with salads.

3/4 cup finely chopped yellow onion
1 teaspoon minced garlic
1 teaspoon salt
3/4 teaspoon ground black pepper

1/4 teaspoon nutmeg
3/4 cup whole milk
1/4 cup fine breadcrumbs

Steps:

  • In a large saute pan, add the pork and cook until no longer pink, about 3 minutes.
  • Add the onions and garlic, and cook for 1 minute.
  • Add the salt, pepper, cloves, cinnamon, ginger, and nutmeg and cook for 1 minute.
  • Add the milk and bread crumbs and cook for 3 minutes over medium heat, stirring to break up the meat.
  • Reduce the heat to low, cover, and cook, stirring occasionally, until the pork is very tender and most of the liquid is evaporated, about 1 hour and 15 minutes.
  • Remove the lid and cook uncovered, stirring occasionally, until the mixture is thick and all the liquid is evaporated, about 10 to 15 minutes.
  • Remove from the heat and adjust the seasoning, to taste.
  • Transfer to a decorative bowl or several smaller ramekins, smoothing the top with a rubber spatula.
  • Cover tightly with plastic wrap and refrigerate until well chilled and firm, at least 4 hours or overnight.
  • Serve with thinly sliced French bread or toasted French bread croutons.

2 lbs ground lean pork
1 (8 ounce) can cream of mushroom soup
0.5 (8 ounce) can water
1/2 cup finely minced onion
4 garlic cloves, finely minced
1/2 teaspoon dry mustard
1 teaspoon allspice
salt and pepper

Steps:

  • Put the ground pork, minced onion and garlic,dry mustard, allspice, salt and pepper in a medium size pot and begin to cook on med. high heatuntil meat looses some of its pinkness -- add the can of soup and water and cook till the mixture begins to bubble. Lower heat and let simmer 1/2 hr, stirring often so it doesn't stick.
  • When the mixture has cooked and cooled, put into food processor and pulse -- careful not to make it too fine -- you want it a wee bit chunky but spreadable.
  • You can put it into small plastic containers.or as mom does -- freeze in ice cube trays -- then pop out just one at a time.
  • It's a good idea to seal with bacon fat -- unhealthy but it does seem to give it good flavor and keep it moist.
