Best Creole Shrimp and Okra Gumbo image

This is a really tasty gumbo that is also easy to make. For more authentic taste you can add 1/4 cup of Gumbo Filé Powder spice before you serve. I hope you get to enjoy this as much as we do! Note: If this is too mild for your taste you can add some hot sauce as you serve. I made this for my 1 year old and I had to cut down on the spice.

4 tablespoons vegetable oil
4 tablespoons flour
1 large chopped onion
1 cup chopped celery
6 garlic cloves, chopped
1 cup of chopped green pepper
6 ounces tomato paste
14 ounces fire-roasted tomatoes
2 lbs frozen sliced okra
1 lb peeled shrimp
1 lb shrimp, head on
1 lb smoked sausage (casing peeled and sliced into bite size)
2 cups water
2 cups shrimp stock or 2 cups bouillon
1 tablespoon creole seasoning (such as Slap ya Mama)
1 teaspoon sugar
3 tablespoons of chopped parsley
2 bay leaves

Steps:

  • Slowly stir the flour into heated oil in a heavy cast iron skillet. Continue to stir until the flour is dark brown. Add the next 4 ingredients; stir until onions are clear. Add tomato paste and a cup of water. Add okra and tomatoes. Cook slowly, adding all the water and shrimp stock -a little at a time. Stir in sugar & creole seasoning. Cook for about an hour on a low fire, stirring occasionally to prevent sticking to the bottom of pot; adding water if necessary.
  • Add the shrimp ,sausage, parsley and the bay leaves. Cook another 30 minutes to an hour, adding seasoning to taste. Serve over boiled or steamed rice.

1 broiler/fryer chicken (2-1/2 to 3 pounds), cut up
2 quarts water
1/4 cup canola oil or bacon drippings
2 tablespoons all-purpose flour
2 medium onions, chopped
2 celery ribs, chopped
1 medium green pepper, chopped
3 garlic cloves, minced
1 can (28 ounces) tomatoes, drained
2 cups fresh or frozen sliced okra
2 bay leaves
1 teaspoon dried basil
1 teaspoon salt
1/2 teaspoon pepper
1 to 2 teaspoons hot pepper sauce
2 tablespoons sliced green onions
Minced fresh parsley
Hot cooked rice

Steps:

  • Place chicken and water in a large kettle. Cover and bring to a boil. Reduce heat; cover and simmer for 30-45 minutes or until chicken is tender. , Remove chicken; reserve broth. Set chicken aside until cool enough to handle. Remove chicken from bones; discard bones and cut into meat into cubes; set aside. , In a soup kettle, combine oil or drippings and flour until smooth. Cook over medium-high heat for 5 minutes, stirring constantly. Reduce heat to medium. Cook and stir about 5 minutes more or until mixture is reddish-brown (the color of a penny). Turn the heat to high. Stir in 2 cups reserved broth. Bring to a boil; cook and stir for 2 minutes or until thickened. , Add the onions, celery, green pepper and garlic; cook and stir for 5 minutes. Add the tomatoes, okra, bay leaves, basil, salt, pepper and pepper sauce. Cover and simmer for 1 hour. Add chicken; heat through., Discard bay leaves. Garnish with green onions and parsley. Serve with rice.

1-4 - pound chicken (cut up in serving pieces)
Kosher salt (to own taste)
1½ teaspoons Cayenne pepper
1½ teaspoons paprika
1 teaspoon fine ground white pepper
1 teaspoon fine ground black pepper
1 teaspoon powdered mustard
1 teaspoon garlic powder
2 cups fresh organic okra, sliced (or 1 teaspoon file powder)
1½ cups all-purpose flour
2 cups corn, peanut, or vegetable oil
¾ cup yellow onion (chopped)
¾ cup celery (thinly sliced or diced)
¾ cup green bell pepper½ (diced)
9 cups low sodium chicken broth
1 pounds smoked sausages such as andouille or kielbasa (sliced thinly )
2 bay leaves
3 teaspoons fresh garlic (minced)
2-3 cups Cooked rice (follow package instructions.)

Steps:

  • Put chicken pieces in a bowl. Blend salt, peppers, mustard, cayenne pepper, paprika, granulated garlic, and file powder. Rub four teaspoons of the mixture over the chicken. Set the rest of the spice mixture aside.
  • Put the flour in a bowl and add two teaspoons of the reserved spice mixture. Blend well.
  • Heat a large cast-iron skillet and add the oil. Dredge the chicken pieces in the flour mixture to coat well, shaking off excess. -Reserve the leftover flour.
  • When the oil is hot and almost smoking, add the cut-up chicken pieces skin-side down. Cook for about five minutes on one side until golden brown. Turn and cook about four minutes on the second side until nicely browned. Drain excess oil thoroughly on paper towels.
  • Pour off all but one cup of fat from the cast-iron skillet. Heat the oil over high heat until it is almost smoking,and then add the reserved seasoned flour. Stir the mixture rapidly and constantly with a wire whisk until the mixture is amber brown. Do not burn.
  • Add the chopped onion, celery and green pepper to the roux and then stir to blend. Remove the cast-iron skillet from the heat.
  • Meanwhile, bring the broth to a boil in a large Dutch Oven.
  • Add about half a cup of the roux mixture
  • Add the smoked sausage and stir. Cook over high heat, stirring often from the bottom, about 15 minutes.
  • Add the chicken pieces, bay leaves, and finely minced fresh garlic. Cook about 40 minutes, on medium-low, stirring occasionally.
  • Remove the chicken pieces. Cut the meat from the bones and discard the bones. Cut the chicken into cubes or shred it and add it back to the pot. At this time, add the Okra if you did not use file powder and simmer for 7 minutes.
  • Serve with white rice or potato salad (or both) spooned into the gumbo.

1 green bell pepper, chopped

1 1/2 cups sliced okra
1 cup chopped onion

Steps:

  • In a heavy 2-quart saucepan stir together flour and oil until smooth.

  • Let the roux cool.

1 -2 clove garlic, peeled and minced

1 bay leaf

Tabasco sauce or other hot pepper sauce (with also need this along with the cayenne pepper)
1/2 lb ripe flavorsome tomatoes, coarsely chopped (peeled if necessary)

3 lbs chicken, cooked
1 1/2 cups fresh corn kernels

Steps:

  • Heat the oil in a large heavy pan and add the flour.
  • Cook over a low heat, stirring, to make a dark brown roux (the color of hazelnut shells).
  • Add the onion, garlic, green pepper and celery and cook until lightly browned, stirring occasionally.
  • Add the okra, parsley, bay leaf, thyme, salt, peppers, and cayenne and tabasco to taste, then stir in the tomatoes, tomato puree, and half the stock or water.
  • Bring to a boil, stirring well.
  • Simmer for 1-1/2 hours, stirring occasionally.
  • During this time, the okra, which is initially slimy, will turn the mixture very dark and glutinous.
  • Meanwhile, remove the chicken meat from the carcass.

This is my family recipe for Creole gumbo. It has been passed down three generations originating from Opelousas, Louisiana.

For the stock
2 quarts low-sodium chicken broth
6 large live blue crabs, cooked and cleaned , outer shell reserved
2 pounds large, U-26, shrimp, cleaned, shells reserved
For the roux
1 cup canola oil, lard or Crisco
1 cup flour
For the gumbo
2 large onions, diced
4 stalks celery, diced
2 green bell peppers, seeded and diced
6 cloves garlic, minced
1 tablespoon Creole seasoning, Lawry's or Old Bay, plus more to taste
1 28-ounce can, whole tomatoes
3 tablespoons Worcestershire sauce
10 dashes of hot sauce, more to taste
2 sprigs of fresh thyme
2 bay leaves
2 pounds stew beef, cut in 1-inch cubes, seasoned with salt and pepper at least one hour prior to starting the recipe, if not overnight
2 pounds bone in, skin on chicken thighs, seasoned with salt and pepper at least one hour prior to starting the recipe, if not overnight
3 cups fresh okra, sliced
kosher salt
freshly ground black pepper
cooked white rice, preferably short grain Carolina rice
sliced green onions for garnish

Steps:

  • Gather the ingredients. Bring beef and chicken to room temperature before beginning the recipe.
  • Make the stock. To a large sauce pan add chicken broth, shrimp shells, and outer crab shells (if using), cover, and set over medium-low heat. When it comes to a boil, adjust the heat to maintain a gentle simmer. Simmer covered for 20 minutes and keep on low until ready for use.
  • Make the roux. Add oil to a large, heavy-bottomed pot over medium heat and sprinkle in flour while whisking. Continue whisking until it turns a milk chocolate color, 16 to 18 minutes. Don't walk away during this step.
  • When the roux is ready, add the Trinity (the onion, celery, and bell pepper), garlic, and Creole seasoning. Sauté until onions are translucent, 6 to 8 minutes.
  • Strain the chicken-seafood stock. Discard the seafood shells.
  • Deglaze the gumbo pot with with half of the stock. Add the can of whole tomatoes, crushing each by hand over the pot, plus its liquid.
  • Add Worcestershire sauce, hot sauce, thyme, and bay leaf. Bring it to a boil and reduce it to a simmer.
  • Meanwhile, heat 2 tablespoons of oil in a cast iron pan over medium-high heat. Sear stew beef, in batches if needed, and move directly into the gumbo pot when done.
  • In the same cast iron pan, sear the seasoned chicken thighs, skin-side down first, until golden on both sides, about 10 minutes total, moving them to the gumbo pot when done.
  • In the same cast iron pan, add the okra to the rendered chicken fat, and season with salt and pepper and/or more Creole seasoning.
  • Sauté okra until verdant and the viscous texture subsides, about 8 minutes. (This is known as "roping.") Add okra to the gumbo pot.
  • Add remaining chicken-seafood stock to cover the ingredients. If the ingredients are not covered by the stock, add water.
  • Bring to a boil, reduce to a simmer, cover, and cook for 30-45 minutes, giving a good stir and taste every 15 minutes. Season with more Creole seasoning, salt, hot sauce, Worchestershire sauce, black pepper as needed for your taste.
  • Remove thyme stems and bay leaf. Gently remove chicken thighs from the gumbo pot to a cutting board. Remove bones and skin, cut into rough chunks and add the meat back into the gumbo pot. If the thighs have fallen apart, just remove the bones (the same number of thighs you added) and the skins you can easily find.
  • On a cutting board, crack cooked and cleaned blue crabs in half. Then, with a mallet or the back of the blade of a chefs knife, gently crack both joints of the claws. (see RECIPE VARIATION with lump crab meat below)
  • Add crab and shrimp to the gumbo pot, cover, and simmer for 6 to 8 minutes.
  • Prepare a serving over cooked white rice, making sure each serving gets at least half of a crab. Garnish with scallions and hot sauce(s) for diners to spice to their taste.

Season gumbo to taste with hot pepper sauce , salt and pepper and serve.

  • Heat 1/4 cup vegetable oil in a small pan over medium heat. When warm, whisk in flour. Continue whisking until the roux has turned a darker caramel color ~ 8 minutes. Be careful not to walk away and forgot about or burn the roux or you'll have to start over. Set aside.
  • Bring a heavy bottomed pot to medium high heat and add andouille sausage. Sear on both sides until brown ~ 2-3 minutes. You may need to brown the sausage in batches as you want it to sear and not steam. Cool sausage on a plate and set aside.

  • Cook the bone on seasoned chicken thighs until done or use precooked chicken thighs. I used my Air-fryer and cooked for about 30 minutes at 360° F. You may substitute chicken breasts if desired.
