5 eggs
1 c. milk
1/2 c. heavy cream
1 tsp. vanilla
1/4 tsp. ground nutmeg
1 tsp. cinnamon
Pinch kosher salt
1 stick melted butter
3/4 c. brown sugar
1/4 c. maple syrup
1 loaf challah bread, sliced 1" thick
Confectioners' sugar, for serving (optional)

Steps:

  • Preheat oven to 375 degrees F.
  • In a small bowl, whisk together melted butter, brown sugar and maple syrup. Pour mixture into a large tall baking dish and spread into an even layer using a spatula. Arrange bread on top in a single layer.
  • In a large bowl, whisk together eggs, milk, cream, vanilla, cinnamon, nutmeg and salt. Pour mixture over bread. If you have time, cover and let soak in refrigerate for 1 hour or up to overnight. Otherwise, bake for about 25 minutes, or until the the butter-sugar mixture is bubbling in the bottom of the pan.
  • Serve immediately, sugar side up. Sift powdered sugar on top if desired.

This Creme Brulee French Toast Casserole makes for a fantastic breakfast or brunch treat. Especially because all the prep work is done the night before and you just have to pop it in the oven in the morning.

1 large loaf of French bread
8 large eggs
2 1/4 cups milk
1 cup plus 4-5 T sugar
1/4 tsp salt
2 T vanilla extract
1/4 cup orange juice
2 tsp cinnamon
3 T unsalted butter

Steps:

  • Combine eggs, milk, 1 cup sugar, salt, 1 tsp cinnamon, vanilla, orange juice, and 2 T melted butter in a large bowl. Whisk together until well incorporated. Use remaining butter to heavily butter a 9x13 baking pan. Slice bread into 1/2" thick slices and then cut slices into cubes. Combine remaining cinnamon and 1 T sugar. Add bread cubes to pan and toss with cinnamon sugar mixture. Pour custard mixture over bread cubes, pressing cubes down with a spoon to thoroughly soak bread. Cover with foil and refrigerate at least one hour or overnight.
  • Preheat the oven to 325 degrees. Bake approximately 40-50 minutes until golden brown and set. Remove from the oven and sprinkle remaining 3-4 T of sugar over the top of the casserole in an even, heavy layer. Set broiler on high and return to oven or use a kitchen torch to caramelize the sugar. The sugar will turn brown and liquefy and then harden as it cools. Serve warm with maple syrup if desired.

½ cup butter
1 cup brown sugar
2 Tablespoons corn syrup
1 pound bread (French, challah, or croissants)
8 large eggs
1 1/4 cups milk
1 1/4 cups cream
1 Tablespoon vanilla extract
¼ teaspoon salt

Steps:

  • In a small saucepan cook the butter, brown sugar and corn syrup over moderate heat, stirring frequently, until smooth and tawny. Pour the mixture in an even layer into a 12"x 8" baking dish. (You can use a slightly larger baking dish but adjust the cooking time.)
  • Tear up bread into ragged chunks or cut into cubes about 1" in size (I cut). Add all the bread on top of sugar mixture and press lightly so the bread compresses a bit. Don't squish more than about 1/4 of the air out.
  • In a medium bowl or giant measuring cup with a spout whisk together the eggs, milk, cream, vanilla, and salt until combined well and pour evenly over the bread. Cover the casserole with cling wrap and refrigerate a few hours or overnight.
  • Preheat oven to 350 F and bring bread to room temperature.
  • Bake casserole, uncovered, in middle of oven until puffed and edges are pale golden, 35 to 40 minutes. The simplest method to check for doneness is with a digital thermometer. The casserole is ready when the internal temperature is 160.
  • Serve hot French toast immediately with fresh strawberries, butter, favorite syrup or whipped cream. It looks prettiest when pieces are served upside down.

12 slices thickly sliced bread (day-old or stale bread recommended; French bread works great)
5 eggs
1 ½ cups half and half cream

Steps:

  • In a small saucepan melt butter, brown sugar, and corn syrup over medium heat until smooth, stirring occasionally.
  • Pour mixture onto large, greased jelly roll pan (18x13x1"). Spread around to cover surface.
  • Place 12 slices of bread in a single layer to cover pan.

1 cup milk
½ cup heavy cream
1 teaspoon pure vanilla extract
¼ teaspoon salt
¾ cup packed brown sugar
2 tablespoons real maple syrup
5 tablespoons unsalted butter
1 loaf cinnamon swirl brioche bread (thick cut 1" (regular brioche is fine as well))

Steps:

  • If planning to bake immediately, preheat oven to 375°F.
  • Grease a 9x13 pan or spray with nonstick cooking spray.
  • In a bowl, whisk eggs, egg yolk, milk, heavy cream, vanilla, and salt.
  • In a small saucepan heat butter, brown sugar and maple syrup until brown sugar is melted. Pour brown sugar mixture into prepared pan and spread evenly.

2 Tbsp corn syrup, dark
1 stick butter
1 c brown sugar, packed
1 loaf french bread
THICKLY SLICED, WITH THE CRUST REMOVED
CREME BRULEE SAUCE
5 large eggs
1 1/2 c heavy whipping cream
1 tsp maple extract
1 tsp grand marnier (opt) or cointreau
1/4 tsp salt
IN PLACE OF GRAND MARNIER USE ORANGE JUICE
OR ANY OTHER ORANGE-FLAVORED LIQUEUR

Steps:

  • 1. In a small saucepan combine the syrup, butter and brown sugar; simmer until syrupy. Pour this mixture into a 9x13" baking pan that has been sprayed with Pam. Set aside.
  • 2. Slice the loaf into thick slices, and place the syrup in the baking pan. Place the bread on top of the syrup.
  • 3. In a large bowl, whisk together the eggs, cream, maple extract, Grand Marnier and salt. Pour evenly over the bread. Cover and refrigerate overnight.
