Number Of Ingredients 8

¼ to ½ lb Ground beef, Paul suggests using a blend of short rib and ground chuck (makes 2-3 pattys)
6 Slices American cheese (3 slices for each Melt)
1 Large yellow onion
12 Slices dill pickles , 6 slices for each Melt - Paul makes his from scratch
4 Slices bacon, cooked until crispy
4 Slices High Crown Thick-sliced white bread
3 Tbsp Hellman's Mayo
3 Tbsp French's Yellow Mustard

Steps:

  • Season 5 oz patties with salt and pepper. Place the patties down on a Flat Top or BBQ grill and cook for 2 ½ minutes. While the patties are grilling, butter slices of High Crown thick-sliced white bread, and place on grill for 2 to 2 ½ minutes until golden brown. While bread is on the grill, place 1 ½ slices of Yellow American cheese on each slice of bread. Use a total of 3 slices per Melt. Next, add 6 slices of dill pickles. Flip the patties on the grill for an additional 2 ½ minutes, season with salt and pepper. They should be cooked perfectly to medium. Add caramelized onions. These can be prepared in advance of grilling. Sauteé thinly sliced onions in pan with 90/10 blend Canola and Olive oil, seasoned with salt and pepper, stirring occasionally until onions are soft and sweet. Add 2 oz to top of each patty. Add 2 slices of crispy bacon criss-crossed on top of the caramelized onions. Remove slices of bread from the grill. Spread 1 oz of homemade mustard sauce on the pickled side of toasted bread. Remove burgers from the grill and place on bread slices with the pickles and homemade mustard sauce. Place remaining slices on top, cut in diagonal, and serve with chips or fries.

1 cup shredded Swiss cheese
1 cup chopped fresh mushrooms
2 pounds lean ground beef
2 (1 ounce) packages dry onion soup mix

Steps:

  • Preheat grill for high heat.
  • In a medium bowl, mix together potato, cheese, and mushrooms.
  • In a large bowl, mix ground beef with onion soup mix. Form into 6 large burger patties. Make a pocket in each burger, stuff with potato mixture, and seal.
  • When ready to grill, brush grate with oil. Cook burgers over high heat for 5 minutes on each side, or until well done. Serve hot.

1 red onion, sliced into 1/3-inch rounds
1 teaspoon olive oil
1/4 teaspoon kosher salt
1 tablespoon balsamic vinegar
1/2 teaspoon sugar
2 ripe avocados, pitted and diced
1 tablespoon lemon juice
1/2 teaspoon kosher salt
1/4 teaspoon red pepper flakes
2 pounds ground chuck (80/20 meat to fat)
1 1/2 teaspoons kosher salt
6 thin slices provolone piccante
2 cups arugula
6 potato hamburger buns, toasted
2 tomatoes, sliced thin, optional

Steps:

  • For the onions: Preheat a grill pan over medium-high heat.
  • Drizzle the onion slices with the olive oil and sprinkle with the salt. Place in the hot grill pan and cook, 2 to 3 minutes per side. Remove to a bowl and toss with the balsamic and sugar. Cover the bowl with a piece of plastic wrap and let steam at room temperature for about 10 minutes.
  • For the avocado: Mash together the avocado, lemon juice, salt and pepper flakes in a medium bowl.
  • For the burgers: Heat the grill pan over medium-high heat. Form the beef into 6 even patties (about 1/3 pound each). Sprinkle the patties evenly on both sides with salt and place in the grill pan. Grill until nicely browned, about 2 minutes on the first side. Flip the burgers and cook for an additional 2 minutes. Place a slice of cheese on top of each burger and cover with a bowl or lid to allow the cheese to melt. Cook to desired doneness, about 1 minute longer for medium.
  • Place a small amount of arugula on the bottom half of each toasted bun. Top with the patties, tomatoes, if using, and the grilled balsamic onions. Spread some of the avocado on the top half of the buns and close the burgers.
