Kosher salt
1 pound fusilli con buco pasta, such as Rustichella d'Abruzzo or Setaro
3 tablespoons unsalted butter
2 tablespoons olive oil
1 clove garlic, smashed
2 1/2 cups freshly grated Parmesan, plus more for serving
1 cup mascarpone, at room temperature
2 teaspoons grated lemon zest (from 1 large lemon)
1 1/2 cups frozen peas, thawed
1 tablespoon lemon juice
1 teaspoon pink peppercorns, ground

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until just short of al dente, 10 or 11 minutes.
  • Meanwhile, heat a large straight-sided skillet over medium heat. Add the butter and olive oil to the hot skillet. When the butter is melted, add the garlic; cook, stirring often, until soft and fragrant. Add 1/2 cup of the pasta water, then reduce the heat to low.
  • When the pasta is ready, lift it out of the water and add it directly to the sauce; reserve the pasta water. Sprinkle the Parmesan over the pasta and stir to combine. Return the heat to medium, add the mascarpone, lemon zest and 3/4 teaspoon salt and toss well. Continue cooking until the pasta is al dente, another minute or two, adding pasta water as needed to thin the sauce.
  • Add the peas and lemon juice; toss well to combine. Add more pasta water as needed to reach the desired sauce consistency (you will most likely use about 1 1/2 cups pasta water in all).
  • Sprinkle with the pink pepper and additional Parmesan, if desired.

6 slice(s) bacon
1 clove(s) garlic, minced
1 small onion, chopped
1 cup(s) sliced mushrooms
1 or 2 tablespoon(s) all purpose flour
1 tablespoon(s) worcestershire sauce
1 cup(s) creme fraiche( heavy cream)
1/4 cup(s) parmesan cheese
- salt and pepper to taste
- chopped parsley for garnish

Steps:

  • Chop bacon and brown with onion and garlic in a large skillet on medium heat.Add mushrooms, and stir in Worcestershire sauce, salt and pepper.
  • Stir in cream,flour and cheese,blend and add the peas. Cook until thickened. Remove from heat. Sprinkle with parsley. --- Great served over your favorite pasta, tortellini, rice, potato,chops, chicken, shrimp...etc...

4 slices thick-sliced bacon, coarsely chopped
2 garlic cloves, minced
8 ounces dried rigatoni pasta
1 (14 1/2 ounce) can chicken broth
1 cup water
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 cup frozen peas
1/3 cup whipping cream
1/4 cup grated parmesan cheese (1 ounce)
crumbled crisp-cooked bacon

Steps:

  • In an extra large skillet, cook the four slices of chopped bacon over medium heat until crisp. Add garlic; cook and stir for 30 seconds more. Drain off fat. Stir in pasta, broth, water, salt, and pepper.
  • Bring to boiling; reduce heat. Simmer, covered, for 12-15 minutes or until pasta is al dente, stirring once. Stir in peas, whipping cream, and Parmesan cheese. Cook and stir for 2 minutes more or until heated through. Serve immediately sprinkled with crumbled bacon.

  • In food processor, make vegan parmesan. Combine soaked nuts, 3 Tbsp (45 mL) nutritional yeast, salt, and 1 smashed and minced garlic clove. Whirl until coarse crumbs. Transfer to an airtight container and refrigerate until ready to use. Can be refrigerated for a couple of days.
  • In large frying pan, heat oil. Add shallots and 2 smashed and minced garlic cloves and sauteu0301 over medium heat until soft. Transfer to high-speed blender along with milk, tofu, 4 Tbsp (60 mL) nutritional yeast, lemon juice, and pepper. Whirl at high speed until smooth and creamy. Set aside.
  • In large saucepan with boiling salted water, cook pasta just until al dente, about 8 minutes. About 1 minute before the end of boiling pasta, add snap peas and sweet peas. Return to boil. Then immediately remove from heat; drain pasta and peas, reserving 1/2 cup (125 mL) liquid. Return pasta and peas to pan and stir in creamy tofu sauce. Add a little of the hot boiling water if needed for more creaminess. Add a little more salt, to taste, if you wish.
  • Serve in heated bowls and sprinkle with vegan parmesan, remaining grated lemon peel, minced parsley, and basil. Add crushed chilies, if you wish.
