Delicious dessert ready in 15 minutes! Try this creamy raspberry tart in a new way.

1 box (4-serving size) vanilla instant pudding and pie filling mix
3/4 cup cold milk
1 1/2 cups frozen (thawed) whipped topping
4 graham cracker tart shells (from 4-oz package)
1 cup fresh raspberries

Steps:

  • In medium bowl, beat pudding mix and milk with wire whisk until well blended. Stir in 1 cup of the whipped topping. Spoon mixture evenly into tart shells.
  • Spoon 2 tablespoons remaining whipped topping in center of each tart. Top with raspberries. Serve immediately, or refrigerate until serving time.

Delicious Raspberry & Vanilla Cream Tarts made with a shortbread crust, vanilla cream filling and fresh raspberries on top! Please note: It's best to make the tarts in this order: Crust first, then the cream.

1 1/4 cup flour
1/3 cup sugar
pinch of salt
1/2 cup butter (cut into chunks)
1 egg yolk
6 inch mini 3 tart pans (or 1 large tart pan)
1/3 cup sugar
2 tbsp cornstarch
4 egg yolks
1 1/3 cups whole milk
1/2 vanilla bean (split down the centre to expose the seeds)
1/4 - 1/2 tsp vanilla
raspberries
icing sugar

Steps:

  • Preheat your oven to 400 degrees.
  • In a food processor, process the flour, sugar and salt for about 10 seconds.
  • Then add the chunks of butter and process until the mixture looks like coarse crumbs.
  • Add the egg yolk and process again until the egg is thoroughly combined.
  • If you are making mini tarts (tartlets), separate the mixture into 6 - 3 inch tart pans, and press the dough into the molds, making the sides slightly higher than the centre. Bake for 12-15 minutes, making sure to prick them with a fork several times, as the dough tends to puff up. Watch them carefully, as they go from not done to overcooked very quickly!
  • If you are making one large tart, press the mixture into a 10 inch tart pan (making the sides slightly higher than the centre) and bake for about 15-18 minutes. Again make sure to prick the tart with a fork several times while baking, and watch it carefully.
  • Using a mixer, beat together the sugar, cornstarch and egg yolks until the mixture is thick and pale yellow.
  • In a small saucepan combine the milk and the vanilla bean, bring to a simmer. Then remove the vanilla bean.
  • Pour about half of the milk mixture into the egg mixture, and stir.
  • Then return this milk/egg mixture to the remaining milk mixture in the saucepan, and continue to cook, whisking constantly, until the custard is thick and slightly bubbly. Make sure to whisk constantly so that the mixture doesn't burn to the bottom of the pan.
  • Remove from heat and stir in the vanilla.
  • Cover the custard with a sheet of parchment paper to prevent a skin from forming, then it set aside to cool.
  • Once the tart shells and custard have cooled, add about a 1/4 cup of the custard to each shell.
  • Top with fresh raspberries, and a dusting of icing sugar.
  • Enjoy!

1 tablespoon brown sugar
2 teaspoons brown sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
6 (8 inch) flour tortillas
vegetable oil cooking spray
1 cup fresh raspberries or 1 cup blackberry, about 1 half-pint
1/2 cup light cream cheese, softened
1/2 teaspoon almond extract

Steps:

  • Combine 1 tablespoon brown sugar, cinnamon, and nutmeg, stir and set aside.
  • Cut rounds from each tortilla, using a 3 1/2 inch biscuit cutter, discard excess.
  • Brush both sides or tortillas with warm water.
  • Coat top side of each round with cooking spray, sprinkle with brown sugar mixture.
  • Press each tortilla into a muffin cup.
  • Bake at 350 degrees for 14 minutes.
  • Cool in pan on a wire rack.
  • Remove from pan, and set aside.
  • Rinse berries, drain and set aside.
  • Combine cream cheese, almond extract and remaining 2 teaspoons brown sugar in a small bowl, stir well.
  • Spoon cream cheese mixture evenly into each taret shell, and top with raspberries.

Another recipe from "The Anne of Green Gables Cookbook": "The little girls of Avonlea school always pooled their lunches, and to eat three raspberry tarts all alone or even to share them only with one's best chum would have forever and ever branded as "awful mean" the girl who did it. And yet, when the tarts were divided among ten girls you just got enough to tantalize you. " (from "Anne of Green Gables" by L.M. Montgomery). Times are estimated and do not include cooling time beyond the initial 15 minutes (included in cooking time). The original recipe did not specify the size of package of frozen berries, so I guessed a 10 oz package based on the fresh raspberry substitution.

1 cup all-purpose flour
1 tablespoon sugar
1/4 teaspoon salt

1 tablespoon lemon juice
1 (10 ounce) package frozen unsweetened raspberries, thawed or 1 cup fresh raspberry
3 tablespoons cornstarch
1/4 cup cold water
3/4 cup sugar

Steps:

  • Preheat oven to 425°F.
  • Combine flour, sugar, and salt in a large mixing bowl. Cut butter into flour mixture until it resembles tiny peas.
  • Combine egg yolk, water, and lemon juice with a fork.
  • Sprinkle egg yolk mixture over flour mixture and stir together with a fork until it forms a ball.
  • Pull small pieces of pastry from the ball and press into bottom and sides of the tart pans to about 1/8 inch thickness. Refrigerate until ready to use.
  • Combine cornstarch and cold water in a small saucepan until smooth. Stir in sugar and raspberries. Cook and stir over medium-low heat until thickened, about 10-15 minutes. Allow mixture to cool.
  • Spoon filling evenly into tart shells, filling each no more than 2/3 full.
  • Bake at 425° F for 10 minutes. Reduce heat to 350° F and bake for an additional 15 minutes or until pastry is golden brown.
  • Remove from oven and cool, in pans, for 15 minutes. Remove from pans to cooling racks and cool completely.
