Steps:
- Bring a heavy large saucepan of salted water to a boil over high heat. Add the orzo and cook until tender but still firm to the bite, stirring often, about 8 minutes. Drain, reserving 1 cup of the cooking liquid.
- Meanwhile, heat the oil in a heavy large frying pan over medium heat. Add the shallot and garlic, and saute until tender, about 2 minutes. Add the tomatoes and cook until they are tender, about 8 minutes. Stir in the cream and peas. Add the orzo and toss to coat. Remove the skillet from the heat. Add the Parmesan to the pasta mixture and toss to coat. Stir the pasta mixture until the sauce coats the pasta thickly, adding enough reserved cooking liquid to maintain a creamy consistency. Season the orzo with salt and pepper, and serve.
CREAMY GARLIC-PARMESAN ORZO
The garlic may be adjusted to taste, we love garlic so I use 2 heaping tablespoons, I have left the chili flakes as optional add in for some heat if desired, cooking time does not include cooking the orzo.

CREAMY PARMESAN ORZO
From Cooking Light, this is a wonderful side or light main dish. It is good even without the pine nuts if you don't have them on hand, also any herb will work for the basil, you just may need a little more or less depending on the herb.

Steps:
- Melt butter in a large pan (grab one that's deep enough for your orzo + sauce) over medium-high heat and sauté your shallot and garlic until tender, adding the garlic towards the end to prevent burning. If extra butter is needed, feel free to add as desired.
- Add your milk, broth, salt, pepper, and garlic powder. Stir with a whisk to deglaze the pan.
- With your burner set to medium (I had mine set to 6) add the orzo and stir. Set timer for 10 minutes. Once the orzo starts to really boil and bubble, reduce heat to low (2 worked great on my stove) and continue to simmer, stirring occasionally.
- Once the pasta is al-dente or your ideal softness, remove from heat. Sauce will be thin and thicken as it cools. Add your parmesan cheese and chopped spinach and fold into the orzo.
- Season to taste as desired, garnish with any additional cheese your heart desires and dig in while it's hot!

Steps:
- In a large non stick pot or dutch oven heat the oil and butter over medium heat. Once hot, add the onions and cook until almost translucent. Add the zucchini, saute for a few minutes and then add the garlic with a pinch of salt. Turn the heat down to ensure garlic does not burn.
- Once the garlic is fragrant, add the orzo and toast for 2-3 minutes.
- Add the broth, 1 cup of milk, and bring to a slow simmer. Place the lid on the pot and turn the heat down to low. Let the orzo cook covered for about 10 minutes quickly checking once or twice to make sure the orzo is not sticking.
- After 10 minutes, open the lid and continue to cook the orzo by adding the remainder of the milk in slow batches, stirring continuously after each addition. Add more milk if necessary to achieve a creamy orzo.
- Once the orzo is cooked, add black pepper, parmesan cheese, parsley and stir well.
- Serve warm and enjoy!

- Begin by heating about 1-2 Tablespoons of olive oil in a large skillet, let it warm up for about a minute. Add the orzo and lightly stir it around the pan so it toasts, this will give the orzo a nutty flavor. When the orzo starts to turn golden in color, add the broth or water starting with just 1/2 cup. Let the orzo absorb the liquid entirely, then add the rest. Give it a stir, bring to a quick boil and turn the heat down to a simmer. Cover and let it cook for 10-15 minutes.
- Add the butter to a large saucepan over medium heat. Once it’s melted add the chopped onion and garlic. Season with salt and pepper. Let that simmer for about 2-3 minutes until it softens. Add the half and half, cheese and parsley (or basil). Season again with salt and pepper. Taste and adjust.
