CREAMY PARMESAN SHRIMP AND ORZO
Simple, fast, and delicious, a creamy blend of parmesan, cream, orzo, shrimp and herbs. Thirty minutes start to finish on the stove top, or throw everything in the crockpot at the beginning of the day, it couldn't be easier. You can also substitute scallops or diced chicken for the shrimp, or leave out entirely for a creamy side dish.

Steps:
- Saute garlic and orzo in butter 3-4 minutes until golden brown. Stir in water and half and half. Cover and let simmer 20 minutes, stirring occasionally. Stir in parmesan, shrimp and basil. Remove from heat, cover and let stand 5 minutes before serving. Reheats really well, and is even better the second day.

ORZO WITH SPINACH, SHRIMP AND SCALLOPS RECIPE - (4/5)

- Drain the spinach in a colander and press it with the back of a spoon or squeeze it to remove liquid. (You should have about 1 1/2 cups spinach.) Set aside. Bring 2 quarts of water to a boil in a medium saucepan. Add the shrimp and scallops, cover and let sit off the heat until the seafood is opaque in the center, about 8 minutes. With a slotted spoon, transfer the seafood to a bowl and cover to keep warm. Return the water to a boil and stir in the orzo with 1 teaspoon of salt, if desired. Boil uncovered until tender, 8 to 10 minutes. Drain. Cover and set aside if not yet ready to use. Meanwhile, heat a large saucepan over medium heat. Add the pine nuts and cook, stirring often, until golden, about 6 minutes. Pour from the pan and set aside. Heat the oil in the pan, add the garlic and cook until tender, about 1 minute. Add the spinach and orzo and stir until heated through. Stir in the seafood, pine nuts and cheese. Season to taste with salt and pepper and serve. This recipe yields 6 servings.

- Preheat oven to 425°. Remove papery outer skin from garlic bulb but do not peel or separate the cloves. Cut off top of garlic bulb, exposing individual cloves. Drizzle cut cloves with 1 teaspoon oil. Wrap in foil. Bake 30-35 minutes or until cloves are soft. Unwrap. When cool enough to handle, squeeze garlic from skins., In a Dutch oven, heat remaining oil over medium-high heat. Add pasta; cook and stir 2-3 minutes or until lightly browned. Add stock; bring to a boil. Reduce heat; simmer, covered, 10-12 minutes or until pasta is tender and liquid is absorbed., Stir in cream cheese until melted. Add spinach, Asiago cheese, milk, seasoning blend, salt and roasted garlic; cook and stir until spinach is wilted. Sprinkle with parsley.

A wonderful side dish, this is quick and easy to prepare. This is from Cuisine at Home and is a kid pleaser as well as adult mac n cheese.

Steps:
- Cook orzo according to package directions, drain.
- Mix parmesan, beaten egg and cream and add to hot orzo.
- The heat will cook the egg mixture.
- Heat oil in skillet, add garlic, sauté until soft.
- Add spinach in batches until wilted.
- Season with red pepper, salt, pepper, stirring.
- Drizzle with a drop of balsamic.
- Top orzo with spinach, serve with additional parmesan if desired.
